2 envelopes Italian salad dressing mix
2 cups water
1 jar (16 ounces) mild pickled pepper rings, undrained
18 hoagie buns, split

Steps:

  • Place roast in a 5-qt. slow cooker. Combine the salad dressing mix and water; pour over roast. Cover and cook on low for 8-10 hours or until meat is tender. , Remove meat; shred with two forks and return to the slow cooker. Add pepper rings; heat through. Spoon 1/2 cup meat mixture onto each bun.

2 tablespoons olive oil
1 pound deli roast beef, sliced thin
1 tablespoon Worcestershire sauce
4 slices provolone cheese
4 soft hoagie rolls

Steps:

  • Heat oven to 450. Meanwhile, add oil, onion, and pepper to large skillet. Sautee on medium-high until vegetables are soft, about 7-10 minutes.
  • Add beef and Worcestershire sauce, sautéing for an additional 2 to 3 minutes.
  • Place hoagie rolls on baking sheet. Divide meat mixture evenly among rolls. Top with cheese. Bake until cheese has melted, about 5 minutes. Serve immediately.

4 (8-inch) hoagie rolls, homemade preferred
2 3/4 ounces blended canola/olive oil, 60/40 ratio
10 ounces sliced thin sweet onions in 1/16-inch slices
28 ounces sliced thin rib-eye steak in 1/16-inch slices
2 ounces melted sweet butter
1/4 teaspoon salt
Provolone cheese
Optional ingredients: homemade tomato sauce, bell peppers, mushrooms, or your favorite cheese

Steps:

  • For the hoagies:
  • Preheat frying pan over medium-high heat. Cut the hoagie rolls horizontally to open up and make a pocket. Add the blended oil to the pan and stir in the onions. Put the steak on top of onions and add 1/2-ounce of the butter. Cover the pan for 2 1/2 minutes. The meat should have a cooked appearance on top and rare underneath. Using a fork and spatula separate steak from the onions. When the meat is cooked add the salt, remaining butter, and provolone. Cover to the pan to melt the cheese. Divide the steak mixture among the hoagie rolls and serve. If you like, you can add the optional ingredients to the steak mixture before serving.

Twelve 1/3-inch-thick beef tenderloin medallions

1 cup shredded romaine lettuce, 1/8-inch thick
1/3 cup prepared blue cheese dressing

Steps:

  • For the onions: In a saute pan over medium-high heat, add the oil and allow to warm. Once the pan is heated, add the onions and season with the salt and pepper. Cook until slightly translucent, stirring throughout, 3 to 4 minutes. Hold warm.
  • For the rolls: Butter the rolls. In a saute pan or on a grill, place the rolls and cook until browned, interior side, 2 to 3 minutes.
  • For the beef: Sprinkle the steak on both sides with salt and pepper. Add the oil to a saute pan over medium-high heat, and once heated, cook the beef for 2 minutes on each side.
  • During the cooking of the beef, season the tomatoes with salt and pepper and toss the lettuce with the blue cheese dressing. Once the steaks have cooked, place a quarter of the dressed lettuce on a bottom bun. Next, place 3 tomatoes, 3 slices beef, a quarter of the onions and finish with the top bun. Repeat with the remaining ingredients and serve.

1 medium onion, chopped

2 cloves minced garlic
3 -5 drops Tabasco sauce

Steps:

  • Place roast in Dutch oven and add broth, onion and celery.
  • Bring to a boil, reduce heat, cover and simmer for about 2 1/2 hours or until meat is tender.
  • Remove roast and cool slightly.
  • Shred meat with two forks.
  • Remove vegetables from cooking liquid and discard, then skim off fat and reserve 1 1/2 cups of cooking liquid.
  • Return the 1 1/2 cups of liquid to Dutch oven, then stir in rest of ingredients.
