EASY PUMPKIN SPICE BUNDT CAKE (FROM A CAKE MIX!)
This super simple pumpkin spice bundt cake comes together quickly and easily, thanks to a doctored up cake mix!

Steps:
- Preheat oven to 350F. Grease and lightly flour a bundt pan.
- Combine all ingredients for the cake in the bowl of a stand mixer (or a large mixing bowl with a handheld electric mixer).
- Beat on low speed for 30 seconds, then increase speed to medium-high and beat for 2 more minutes.
- Pour batter into prepared pan.
- Bake for 33-36 minutes, until a toothpick inserted in the center comes out clean.
- Remove from oven. While cake cools, prepare icing.
- Use an electric mixer to combine cream cheese, butter, and powdered sugar, mixing until it is a paste-like consistency.
- Drizzle in milk, a little bit at a time, continuing to mix until glaze is smooth. You want the glaze to be thin enough to drizzle but thick enough to stay on the cake. You can use more or less milk to adjust consistency, if desired.
- If desired, stir maple extract or vanilla extract into the icing. Once cake is completely cool, spoon the icing over the cake.

PUMPKIN-SPICE BUNDT CAKE
This is one of those cakes that I usually make around Halloween/Thanksgiving, since pumpkins are plentiful. However, it is just as wonderful any other time of year (using canned puree).

Steps:
- Preheat oven to 350°.
- Combine first 6 ingredients; set flour mixture aside.
- Combine pumpkin and applesauce; set aside.
- Beat granulated sugar and margarine in a large bowl at medium speed of a mixer until well-blended (about 5 minutes).
- Add egg whites and vanilla, beating well.
- Add flour mixture to sugar mixture alternately with pumpkin mixture, beginning and ending with flour mixture.
- Pour batter into a 12-cup Bundt pan coated with cooking spray.
- Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes; remove from pan.
- Combine brown sugar, rum, and milk in a small saucepan, and cook over low heat until brown sugar dissolves.
- Remove sugar mixture from heat, and add powdered sugar, stirring with a whisk.
- Spoon glaze over warm cake.

Steps:
- PREHEAT oven to 350°F.
- Grease and flour 12-cup bundt pan.
- FOR STREUSEL: COMBINE brown sugar, cinnamon and allspice in small bowl.
- Cut in butter with pastry blender or two knives until mixture is crumbly, fold in nuts.
- FOR BATTER: COMBINE flour, cinnamon, baking soda and salt in medium bowl.
- Beat granulated sugar and butter in large mixer bowl until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Add pumpkin, sour cream and vanilla extract; mix well.
- Gradually beat in flour mixture.
- TO ASSEMBLE: SPOON half of batter into prepared pan.
- Sprinkle Streusel over batter, not allowing Streusel to touch sides of pan.
- Top with remaining batter.
- Make sure batter layer touches edges of pan.
- BAKE for 55 to 60 minutes or until wooden pick inserted in cake comes out clean.
- Cool for 30 minutes in pan on wire rack.
- Invert onto wire rack to cool completely.
- Drizzle with Glaze and sprinkle with nuts.
- FOR GLAZE: COMBINE 1 1/2 cups sifted powdered sugar and 2 to 3 tablespoons orange juice or milk in small bowl; stir until smooth.
PUMPKIN SPICE CAKE
I originally got this recipe from verybestbaking.com. It was posted there in the swapped recipes by L.Terrell. I have made a few adjustments to the original recipe and I often double the praline topping because it's so good. It's very yummy and very easy!

Steps:
- Preheat oven to 350°F.
- Generously grease bundt pan (be sure to use a larger bundt pan because there will be a lot of batter).
- In a large bowl, combine cake mix, pumpkin, brown sugar, oil, and pumpkin pie spice.
- Beat with mixer for 1 minute.
- Add eggs, beat for 2 minutes more.
- Prepare topping* by melting butter with brown sugar in small saucepan.
- Remove from heat and add nuts.
- Pour half of the cake batter into greased bundt pan.
- Pour small amount of topping mixture on top of the cake batter, all the way around (be careful to keep in the center and not get close to the side or middle of the pan).
- Pour the rest of the cake batter into the pan.
- Bake cake at 350°F for 45 minutes to 1 hour.
- Cool in pan on wire rack for 15 minutes, then invert onto plate.
- When cake is completely cool, re-warm remaining topping and drizzle remaining topping on cake.
- *The topping instructions aren't very specific and you really don't have to cook it a long time, just until the sugar and butter are melted and bubbling.
