ONE-POT BROCCOLI CHEESE BROWN RICE



One-pot broccoli cheese brown rice image

This warm and cheesy one-pot broccoli cheese brown rice is an easy, healthy, delicious side dish with both veggies and whole grains! Kids love it too!

Number Of Ingredients 9

1 tablespoon unsalted butter (or you can sub olive oil)
1/2 cup onion, finely diced
1 clove garlic, minced
1 cup brown rice
1/2 teaspoon salt
2 cups water
1 medium head of broccoli, florets only, finely chopped
2 cups shredded cheddar cheese, plus extra for serving
Salt and black pepper, to taste

Steps:

  • Melt the butter in a medium sauce pan over medium heat. Add onion and saute for 2-3 minutes, until translucent. Add garlic and saute an additional 30 seconds.
  • Add brown rice and stir to coat the rice in the butter and onions for about 1 minute.
  • Add 1/2 teaspoon salt and the water and bring to a simmer. Cover the pan, reduce the heat to low and cook the brown rice for 25 minutes.
  • After 25 minutes, add the chopped broccoli to the pot (right on top of the rice; no need to stir it in yet).
  • Cover and cook for an additional 5 minutes. Then turn off heat and let it sit, covered, for 5-10 minutes.
  • Remove lid and stir broccoli into the rice. Add the cheddar cheese and stir to get everything well mixed and let the cheese melt.
  • Season to taste with salt and pepper and serve with extra cheddar cheese sprinkled on top.

4 c rice (cooked)
1 pkg frozen chopped broccoli (steamed/boiled)
1 container (10oz) philadelphia pourable cream cheese garlic & savory flavor
1/4 c parmesan cheese
3/4 c milk
1 1/2 Tbsp butter in small pieces
1/2 tsp salt
1/2 tsp black pepper

Steps:

  • 1. Cook your rice according to package directions, set aside. Steam or boil your broccoli till just tender, remove and set aside.
  • 2. In a large bowl, add the Philly Pourable Cream Cheese, your milk, and your salt and pepper. Mix till thoroughly incorporated.
  • 3. To the cheese and milk mixture, add your rice , then broccoli and mix well. Pour mixture into a pre-sprayed 13 X 9 baking dish, or casserole dish of your choice. Sprinkle on your cheese.
  • 4. Dot dish with the butter. Bake in a preheated 375F oven for 35-45 minutes or till lightly golden!!

  • 1. In a medium saucepan combine frozen broccoli, uncooked rice, water and salt. Bring to boiling, stirring frequently to break up frozen broccoli.

1/2 cup (1 stick) unsalted butter
1 medium white onion, chopped
4 cups fresh broccoli, large stems removed and broken into small pieces
1 (10.5 ounce) can cream of chicken soup
8 ounces processed American cheese, divided (such as Velveeta)
1/2 cup milk
1/3 cup crushed potato chips

  • Preheat oven to 350°F.
  • Cook rice according to package directions.
  • Melt butter in a large skillet over medium heat. Add onion and broccoli and cook until onion is transparent. Add soup, 4 ounces cheese and milk. Stir until cheese is melted. 1 cup panko breadcrumbs
2 cups extra-sharp Cheddar cheese, grated (about 8 ounces)
2 cups homemade chicken stock or canned reduced-fat low-sodium chicken broth
2 cups 2-percent or whole milk
1 bay leaf, preferably fresh
1 thyme sprig
4 tablespoons (1/2 stick) unsalted butter
1 onion, chopped
1 stalk celery, diced
8 ounces sliced cremini mushrooms
Coarse kosher salt and freshly ground black pepper
2 cloves garlic, chopped
1/4 cup all-purpose flour
2 cups long-grain rice
3/4 cup sour cream
Pinch of cayenne pepper
1/4 teaspoon freshly grated nutmeg
3 boneless skinless chicken breasts, halved, or 6 boneless skinless thighs (about 1 1/2 pounds)
1 pound broccoli crown, chopped into small florets

Steps:

  • Heat the oven to 350 degrees F. Combine the panko and half of the cheese. Set aside.
  • Heat the stock, milk, bay leaf and thyme in a medium saucepan over medium-low heat until steaming. Keep warm while you prepare the vegetables. (You can skip infusing the liquid with the herbs if you like, but it does need to be warmed so it doesn't make lumpy gravy when you add it to the flour.)
  • Heat the butter in a large ovenproof and flame-proof casserole or skillet over medium heat. Add the onion and celery. Cook until the onion is soft and translucent, 3 to 5 minutes. Add the mushrooms and season with salt and pepper; cook until tender, stirring occasionally, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the flour and stir to combine. (The mixture will be dry.)
  • Remove the bay leaf and thyme from the stock mixture. Whisk the stock into the flour and vegetables. Add the remaining cup of cheese and stir until smooth. Add the rice and stir to combine. Add the sour cream, cayenne and nutmeg; stir until smooth. Place the 6 pieces of chicken in the casserole and snuggle them into the rice. Cover with a tight-fitting lid and transfer to the oven. Bake until the rice is tender and the liquid has been absorbed, about 40 minutes.
  • Meanwhile, place the broccoli in a microwave-safe bowl with 1/4 cup of water. Cover and microwave until the broccoli is just tender and bright green, about 2 minutes, depending on the strength of your microwave. Drain the broccoli and keep warm.
  • Once the rice is tender and the liquid has been absorbed, remove the casserole from the oven and stir in the broccoli. (It's easiest if you transfer the chicken to a plate first, then stir in the broccoli, then pop the chicken back on top.) Smooth the top and sprinkle with the reserved panko-cheese mixture. Return to the oven and bake until the topping is golden brown, about 15 minutes longer. Place the casserole on a rack to cool slightly before serving.

I adapted this recipe from The Dinner Doctor book. It was really easy to make, so it's perfect for someone who doesn't have a lot of time to put together dinner. I didn't really measure out my hot sauce, I just kindof shook the bottle out over the rice mix, feel free to adjust the amount of hot sauce or substitute with pepper. This recipe would be equally good without the chicken.

2 (10 ounce) packages frozen broccoli
1 cup instant rice
1 (8 ounce) can cream of mushroom soup
1/2 cup Cheez Whiz
1/3 cup milk
2 teaspoons hot sauce
2 chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese
1/2 cup breadcrumbs

Steps:

  • Preheat oven to 375.
  • Cut up chicken breasts into bite sized pieces and cook over medium heat in olive oil with salt and pepper until cooked through.
  • Place frozen broccoli in a bowl and microwave on high for 2 minutes, just enough so it can be broken up. Pour broccoli and juices into a 13x9 pan, and place in the oven to continue thawing while you complete the next step.
  • Place the rice, soup, Cheez Whiz, chicken, milk and hot sauce into a bowl and mix together until combined. The mix will be thick.
  • Take the broccoli out of the oven. Using a wooden spoon spread the rice mix over the top of the broccoli evenly. Don't worry if the broccoli is still a little frozen.
  • Sprinkle the cheddar and bread crumbs on top and place in the oven for 25-30 minutes. Serve immediately and enjoy!
