This pan seared halibut recipe with lemon butter sauce takes just 20 minutes... which you'd never guess with how fancy pan fried halibut looks. I'll show you how to pan sear halibut, plus how to make the perfect sauce for halibut.

4 6-oz Halibut fillets ((1.5 lb total))
1/2 tsp Garlic powder
1/2 tsp Paprika
1 tsp Sea salt
1/4 tsp Black pepper
2 tbsp Olive oil
1/2 cup Salted butter
1 medium Lemon ((cut in half))

Steps:

  • Use paper towels to pat the halibut fillets completely dry - this will ensure even browning. Season the fish on both sides with garlic powder, paprika, sea salt, and black pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat for 2 minutes.
  • Add the fish fillets in a single layer (you can do it in batches if all the fish won't fit in a single layer). Sear, without moving, for 3-4 minutes, until the edges of the fish are opaque. Flip and cook for 2-4 minutes, until cooked through.
  • Remove the fish from the pan and cover tightly with foil to keep warm.
  • Reduce heat to medium-low. Add the butter to the same pan. Wait for it to melt, then heat for 2-3 minutes, stirring occasionally, until the butter is browned and smells nutty.TIP: If you like garlic, you can also use this lemon butter sauce recipe.
  • Use the Zulay Kitchen Lemon Squeezer to squeeze all the juice from both halves of the lemon into the pan. Bring to a simmer, then reduce heat and simmer for about 3-4 minutes, stirring often, until volume is reduced by half. The lemon butter sauce will still be thin.
  • Drizzle a little lemon butter sauce over each serving plate. Place the pan seared halibut fillets over the sauce, then drizzle more sauce on top.

1 tsp Natural Ancient Sea Salt
½ tsp Black Pepper
3 tbsp Olive Oil (for searing the fish)
Chimichurri Sauce

Steps:

  • Remove the fish from the refrigerator about 30 minutes before cooking to help
  • Pat the fish dry on both sides
  • Season both sides of the fish with the sea salt and black pepper
  • Heat olive oil in a cast iron skillet or other pan to medium high heat
  • Add the fish skin side down first and cook for 2-3 minutes per side. The fish will lift easily with a spatula when it's ready to be turned.
  • Top the fish with chimichurri sauce

1 tablespoon olive oil
1 tablespoon butter
1 lb halibut fillet
1 1/2 teaspoons cornstarch
1 teaspoon seasoning salt (Green Herb Seasoned Salt or your favorite)
1/4 teaspoon sugar
1/4 cup diced shallot
1 slice cooked bacon

Steps:

  • Preheat oven to 350 degrees.
  • Wash fillet and towel dry of moisture.
  • Mix cornstarch, seasoned salt, sugar. Coat the halibut with the mixture.
  • In a saute pan that is oven safe heat olive oil and butter over medium high heat.
  • Pan sear for 3 minutes on one side flip add shallots and bacon and baste with some of the butter/oil from the bottom of the pan. Sear for 3 more minutes. Continue basting with the oil/butter mixture. Transfer the pan to the oven and finish cooking for about another 6 to 8 minutes.

1 lb Alaska halibut
3 cloves garlic, minced
juice from 1 large lemon
1/2 cup dry white wine, such as pinot grigio
1/4 cup extra virgin olive oil, plus 1 tbsp for the pan
sea salt and black pepper, to taste
1 tbsp butter
lemon slices, for serving

Steps:

  • In a large, shallow dish, combine minced garlic, lemon juice, wine and olive oil.
  • Use a sharp knife to cut halibut into 4 equal portions. Place portions into the dish with the marinade, turning to coat. Refrigerate for about 30 minutes.
  • When you're ready to cook, heat 1 tbsp olive oil in a large nonstick skillet over medium heat.
  • Remove halibut from the marinade and season with salt and pepper.
  • Place halibut filets in the hot pan and cook, pressing down gently with a fish spatula, until a golden crust forms on the bottom of the fish, about 3-5 minutes. Try not to move the fish around the pan a lot until the crust forms to decrease sticking.
  • Flip fish and cook in the other side until cooked through, another 3-5 minutes or until the internal temperature reaches 130-135°F (for medium).
  • Add butter to the pan and let it melt, then spoon it over the top of the fish.
  • Serve halibut with lemon (optional).

3 small garlic cloves, peeled and minced
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons lemon juice
4 6-ounce halibut fillets, skin removed
1 tablespoon light olive oil or vegetable oil
Chopped parsley, for garnish, optional

Steps:

  • In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
  • In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

2 tablespoons butter
2 tablespoons honey
½ lemon, juiced
2 teaspoons soy sauce
½ teaspoon ground black pepper
2 cloves garlic, minced
1 pound fresh halibut fillet

Steps:

  • Combine butter, honey, lemon juice, soy sauce, pepper, and garlic in a small bowl.
  • Portion halibut by cutting it into 3 or 4 pieces with a sharp knife. Set aside a little of the marinade and brush each side of the halibut with the remaining butter-honey mixture.
  • Heat a skillet over high heat until it is sizzling hot - test by adding a drop of water to the skillet. If it sizzles and immediately evaporates when it hits the skillet, it is hot enough. Sear halibut for 90 seconds on each side. Reduce heat to medium and cook each side until the fish flakes easily with a fork, 2 to 3 minutes. Serve with reserved butter-honey marinade.
