Provided by Whitney Wright

Categories     Breakfast     Dessert

Time 2h50m

Number Of Ingredients 14

3 tablespoons unsalted butter (softened)
1 cup warm milk
1/3 cup warm water
1/4 cup granulated sugar
2 tablespoons butter (melted)
2 1/4 teaspoons instant yeast (or active yeast see note 1)
3 1/3 cups all purpose flour (may need more or less depending on your altitude )
1 1/2 teaspoons salt
1 1/2 cups brown sugar (light or dark brown sugar )
3 teaspoons ground cinnamon
1/2 cup unsalted butter (melted)
2 cups powdered sugar
1/4 cup milk
splash vanilla extract

Steps:

  • Grease a large, 12 cup bundt pan with softened butter, use about 3 tablespoons or so.
  • In the bowl of a stand mixer add the warm milk, water, sugar, butter, and yeast. Mix to combine. Let mixture sit for 5 minutes, then add the flour and salt. Using the dough hook mix on low speed. Once the dough comes together increase the speed to medium and mix for 6-8 minutes. The dough should come away from the sides of the bowl, should be tacky but not sticky, shiny and smooth.
  • Transfer the dough to a large lightly oiled bowl. Turn the dough over once so that the top of the dough is lightly covered in oil. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
  • While the dough is rising, combine the brown sugar and cinnamon in a medium sized bowl, stir to combine. Place the melted butter in a separate small bowl.
  • To form the balls: Remove the dough from the bowl and pat it into an 8 inch square. Cut the square into 64 pieces. Roll each piece into a ball.
  • Roll the balls, one at a time, into the butter and then roll into the cinnamon sugar mixture. Place the sugar coated balls in the bundt pan, layering, staggering, and filling in the gaps as you go.
  • Once all dough balls have been dipped in the butter and sugar mixture and then placed into the bundt pan, COVER the bundt pan with plastic wrap and let rise for 45-60 minutes or until puffy. (The dough should rise and be just 1 inchesfrom the top).
  • Unwrap the bundt pan and bake at 350°F for 30-35 minutes or until bubbly and deep brown in color. Cool in the pan for 5 minutes(no longer!!!) then turn out onto a platter. Let cool for 10 minutes and then pour the glaze overtop.
  • To make the glaze: whisk the powdered sugar, milk, and a splash of vanilla in a large liquid measuring cup.

MONKEY BREAD RECIPE

Monkey Bread Recipe image

This homemade version of easy monkey bread is sweet and sticky and filled with ooey-gooey cinnamon goodness!

Provided by Lil' Luna

Categories     Bread

Time 1h15m

Number Of Ingredients 9

4 tbsp butter, softened (divided)
1 1/2 cups warm water
1 tbsp yeast
2 tbsp sugar
1 tbsp salt
4 cups all-purpose flour (more or less as needed)
1 cup brown sugar
2 tsp cinnamon
8 tbsp butter (melted)

Steps:

  • Butter a bundt pan with 2 tablespoons of butter, being careful to coat every surface, then set aside.
  • In a large bowl or the bowl of a stand mixer, dissolve the yeast and sugar in the warm water and let stand for five minutes, or until foamy. Add the remaining two tablespoons of butter, the salt, and 3 cups of flour, and mix until combined.
  • Add additional flour, ¼ cup at a time, until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch (be careful not to add too much flour!). Knead 3-5 minutes, until smooth. Cover and let rise 30 minutes.
  • Preheat the oven to 350. In a small bowl, whisk together the brown sugar and cinnamon, and set aside. Gently punch the dough down and pat into a large square. Cut into 64 equal pieces using a pizza cutter. Roll each piece of dough into a ball and dip in the melted butter, then roll in the cinnamon sugar mixture and place in the prepared bundt pan.
  • Repeat with remaining dough, then cover and let rise for 30 minutes. Bake 30-35 minutes, or until the top is deep brown. Let cool five minutes, then invert onto a platter. Serve warm.

MONKEY BREAD

Monkey Bread image

This amazing, pull-apart monkey bread is so easy, you can't mess it up!

Categories     Christmas     breakfast     brunch     comfort food     main dish

Time 1h

Yield 8 servings

Number Of Ingredients 5

3 cans buttermilk biscuits (the non-flaky ones)
1 c. granulated sugar
2 tsp. (to 3 teaspoons) cinnamon
2 sticks butter (1 cup)
1/2 c. brown sugar

Steps:

  • Preheat the oven to 350 degrees.
  • Open up all three cans of biscuits and cut each biscuit into quarters.
  • Next, combine the white sugar with 2-3 teaspoons of cinnamon. (3 teaspoons of cinnamon gives it a fairly strong cinnamon flavor. If you're not so hot on cinnamon, cut it back to 2 teaspoons.) Dump these into a 1 gallon zip bag and shake to mix evenly.
  • Drop all of the biscuit quarters into the cinnamon-sugar mix. Once all the biscuit quarters are in the bag seal it and give it a vigorous shake. This will get all those pieces unstuck from one another and nicely coated with cinnamon-sugar. Spread these nuggets out evenly in the bundt pan.
  • At this point, you're going to want to melt the two sticks of butter together with ½ cup of brown sugar in a saucepan over medium-high heat. This can be light or dark brown sugar. Cook butter/sugar mixture, stirring for a few minutes until the two become one. Once the brown sugar butter has become one color, you can pour it over the biscuits.
  • Bake for about 30-40 minutes until the crust is a deep dark brown on top. When it's finished cooking, remove it from the oven. If you have the willpower, allow it to cool for about 15-30 minutes before turning it over onto a plate.

Time 1h

Yield 12 servings

Number Of Ingredients 8

Nonstick cooking spray, for greasing the pan
Four 12-ounce cans regular-size flaky biscuits, such as Pillsbury
1 cup sugar
1 tablespoon plus 1 1/2 teaspoons ground cinnamon
1/2 teaspoon cardamom
Zest from 2 oranges
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degree F. Grease a 10-inch Bundt or tube pan with nonstick cooking spray.
  • Cut the biscuits into quarters and roll into balls. Combine 2/3 cup of the sugar, 1 1/2 teaspoons of the cinnamon, the cardamom and the zest from 1 orange in a shallow dish. Roll the biscuit balls in the mixture. Place the coated balls in the pan, sprinkling some of the mixture over the balls occasionally while filling the pan.
  • Melt the butter in a small saucepan over medium-low heat. Add the remaining 1/3 cup sugar and 1 tablespoon cinnamon and the vanilla. Warm, stirring occasionally, until the sugar dissolves. Add the remaining orange zest and pour over the top of the biscuit balls.

SALTED CARAMEL MONKEY BREAD

Salted Caramel Monkey Bread image

I first tried Monkey Bread when I moved to Nashville. I loved the pull-apart aspect and the flakiness of the bread, and the sweet sticky indulgence of it. This version has dates, walnuts and pecans, which add an amazing textural layer to the ooey-gooey goodness.

Provided by Maneet Chauhan

Categories     dessert

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 13

Nonstick cooking spray, for greasing
4 ounces granulated sugar
1 teaspoon ground cinnamon
2 pounds refrigerated biscuits, such as Grands Flaky Layers, each piece cut into quarters
4 ounces chopped dates
4 ounces dark raisins
4 ounces black walnuts, roughly chopped
8 ounces brown sugar
6 ounces unsalted butter
2 tablespoons heavy cream
1/2 teaspoon kosher salt
Salted caramel, homemade or store-bought, for serving
Whipped cream, homemade or store-bought, for serving

Steps:

  • For the monkey bread: Heat the oven to 350 degrees F. Lightly grease a 10- to 12-cup Bundt pan with cooking spray.
  • Mix the granulated sugar and cinnamon in a large bowl. Add the biscuit pieces and toss to combine.
  • Place the pieces in the pan, sprinkling in the dates, raisins and walnuts. Set aside.
