MOJITO PITCHER

Steps:
- Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
- Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
- Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices.Try these 3 twistsStrawberry mojitoMuddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug. Bruise the leaves from 2 mint sprigs and add to the jug with a pinch of black pepper. Add lots of ice and stir in 350ml white rum and 600ml sparkling water.Blueberry mojito Put 100g blueberries, 3 chopped lemons and 2 tbsp granulated sugar in a jug and muddle. Bruise the leaves from 2 mint sprigs and add them to the jug with lots of ice. Pour over 350ml white rum and 600ml sparkling water and stir together.Mango & pineapple mojito Tip 50g pineapple pieces, 50g chopped mango, 3 chopped limes and 2 tbsp light brown sugar into a large jug and muddle together. Bruise and add the leaves from 2 mint sprigs, then top with ice. Stir in 150ml white rum, 200ml pineapple rum and 600ml sparkling water.

MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

Steps:
- Muddle sugar and mint leaves together in pitcher until leaves are well broken down. Add limes and muddle until limes are juiced. Stir rum into sugar mixture; add club soda and stir until sugar is dissolved.

MOJITO PITCHER
Steps:
- Gather the ingredients.
- In a small saucepan, bring the water to a boil. Add the sugar and stir constantly until it is completely dissolved.
- Reduce the heat to a gentle simmer and tear the mint leaves while adding them to the syrup. Cover and simmer for 5 minutes, then remove from the heat and let cool completely.
- Strain the mint from the syrup using a fine-mesh strainer.
- Transfer the mint syrup to an airtight bottle or jar, and keep it refrigerated.
- Gather the ingredients.
- Juice 6 to 8 limes , straining out the pulp, to produce about 1 1/2 cups of juice.
- In a pitcher, add the rum and 1 cup each of the mint syrup and lime juice. Add more syrup or juice to taste; make this base a little strong because it will be diluted with club soda. Keep chilled until needed.
- Just before you're ready to serve the mojitos, add the chilled club soda to the pitcher.
- Pour the sparkling mojito mix into ice-filled glasses. Garnish each with a sprig of mint and lime slice.

- Add lime juice and mint leaves to pitcher. Muddle gently to release oils and flavor from leaves.
- Pour in simple syrup and rum, then mix well.
- Add ice, filling pitcher approximately ⅓ to ½ full. Use more or less ice as desired.

REFRESHING MOJITO BY THE PITCHER MOJITOS
This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lime and extract the mint oils from the leaves.

EASY MOJITOS
It's hard to find mojitos at any of the restaurants in the small town I'm stationed in, and when I tried to make my own using club soda, they never seemed to turn out right. Using lemon-lime soda also cuts down on the amount of sugar usually used.

- TO MAKE THE PITCHER OF MOJITOS: In a large pitcher, stir together the rum, lime juice, and syrup. Serve at once or refrigerate until needed. Do NOT add ice to the pitcher.
- TO MAKE THE SIMPLE SYRUP WITH MINT: In a saucepan, mix together the sugar and water and heat over medium-high heat. Let the syrup cook for a couple of minutes or until the sugar dissolves and the syrup looks clear. This will be about the time it takes for the syrup to begin to bubble. Remove from the heat and add the mint leaves. Cover and set aside for about 10 minutes, so the mint can infuse the syrup. Strain the syrup and use immediately or store in a lidded container for up to 1 week.
- TO SERVE: When ready to serve, squeeze a lime wedge over the ice in a rocks glass. Drop the lime wedge into the glass along with a few fresh mint leaves. Fill the glass two-thirds full of the mojito mixture and top off with club soda.
