MY MOM'S LASAGNA (NO RICOTTA)



My Mom's Lasagna (No Ricotta) image

Mom worked and had a house full of picky eaters, so most of what she cooked was low fuss and no frills. You can add fennel seed or red pepper flakes to the sauce if you like.

1 lb lean ground beef
1 tablespoon onion powder
1 (28 ounce) jar traditional style spaghetti sauce
1 (15 ounce) can tomato sauce
1 teaspoon italian seasoning
9 dry lasagna noodles (I cook a few extra just in case a noodle or two self destructs)
2 (6 ounce) packages deli-style mozzarella cheese, sliced (you'll need 12 slices total)
1/4 cup grated parmesan cheese
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook lasagna noodles according to package directions.
  • Meanwhile, brown ground beef in a large skillet; drain fat.
  • Sprinkle meat with onion powder.
  • Add spaghetti sauce, tomato sauce and Italian seasoning.
  • Mix well. Set aside.
  • Drain noodles.
  • Spray a 13 x 9 inch baking pan with cooking spray.
  • Add a layer of sauce to pan.
  • Top sauce with 3 lasagna noodles.
  • Top noodles with more sauce.
  • Top sauce with enough mozzarella cheese slices to cover in a single layer (6 slices).
  • Top cheese with 3 more noodles, sauce, 6 more cheese slices.
  • Top cheese with remaining 3 noodles and sauce.
  • Sprinkle with Parmesan cheese. Top Parmesan with the shredded mozzarella cheese.
  • Bake 35 to 45 minutes (watch closely after 30 minutes to make sure cheese does not over brown).
  • Let sit 10-15 minutes before serving.

I decided to put this recipe online because every one loves my lasagna. It's so good and easy to make. You can use extra-lean ground beef if desired. I like to use spaghetti sauce with mushrooms.

¼ cup butter
2 tablespoons all-purpose flour
salt and ground black pepper to taste
2 cups warm milk
2 pounds lean ground beef
2 (28 ounce) jars spaghetti sauce
1 pinch ground nutmeg, or to taste
1 (16 ounce) package no-boil lasagna noodles
1 (8 ounce) package shredded Mexican cheese blend
½ cup grated Parmesan cheese
½ cup water

Steps:

  • Melt butter in a small saucepan over medium-low heat. Stir flour, salt, and pepper into melted butter until flour is dissolved. Slowly whisk milk into butter-flour mixture until a thick white sauce forms, 2 to 4 minutes. Remove saucepan from heat.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add spaghetti sauce and nutmeg to ground beef; cook until spaghetti sauce is heated through, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread a layer of meat sauce into the bottom of a 9x13-inch baking dish. Cover meat sauce layer with a layer of lasagna noodles; top with 1/3 the white sauce, 1/2 the remaining meat sauce, 1/3 the Mexican cheese blend, and 1/3 the Parmesan cheese, respectively. Repeat 1 more layer of each ingredient; top with 1 more layer lasagna noodles, remaining white sauce, Mexican cheese blend, and Parmesan cheese. Pour water around the edges of the dish. Cover dish with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove aluminum foil and continue baking until cheeses are melted, about 10 more minutes. Let lasagna stand 10 minutes before serving.

1 lb ground beef
1 lb ground sausage
1 poung ground pork (optional)
2 cups mozzarella cheese, shredded
1 cup mild cheddar cheese, shredded
16 ounces ricotta cheese
grated parmesan cheese
1 (26 ounce) jar Ragu tomato sauce
1 (12 ounce) package lasagna noodles

Steps:

  • Brown and season ground beef, sausage and pork (if using) to taste. Drain and cool.
  • Heat sauce.
  • Boil noodles in salted water, once they are done let them sit in pan with cold water, to stop the cooking process.
  • While sauce and noodles are cooking prepare meat mixture by using the now cooled ground meat. To do this add the ricotta cheese and stir them together. The cheese should not melt as the meats have cooled.
  • Now it is time to make your layers. First put a thin layer of sauce in the bottom of a 9x13 pyrex pan. Next layer with noodles, then using a spoon place meat mixture on top of noodles (may have to drop in various areas). The next layer will be the cheeses, you can mix them or just use your hands and spread a thin layer of each cheese, now sprinkle with grated parmesan, not a lot. To start the next layer, using the sauce amount you like, my family is varied as my DH likes a lot of sauce and I like less.
  • The layers are as follows: Sauce, Noodles, Meat Mixture, Mozzarella Cheese, Mild Cheddar Cheese, Parmesan Cheese.
  • Then repeat these layers until you reach the top. I put a small amount of pressure after the noodle layers to condense the previous ingredients together.
  • The final topping will be a layer of noodles and sauce.
  • All the ingredients have already beef fully cooked so you will cover with foil and put it in a preheat 375°F for about 1 hour to meld the flavors.
  • Let sit for a few minutes before cutting and serving. While setting for a few minutes I uncover and add the last of the cheese on the top, all done, you did it!

9 lasagna noodles
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup parmesan cheese
1 small white onion, chopped
3 1/2 cups spaghetti sauce
1/2 cup water
1/2 teaspoon minced garlic
1/8 teaspoon pepper

Steps:

  • Preheat oven to 400. Cook lasagna noodles according to package directions. Meanwhile, cook ground beef, onion, garlic, and pepper in skillet until beef is browned; drain.
  • Return beef to skillet and add the spaghetti sauce, water, parmesan cheese, and 1 cup of the mozzarella. Stir to mix.
  • Lightly spray 9x13 glass baking dish with cooking spray. Place 3 lasagna noodles in bottom. Add 1/3 of the meat mixture. Repeat layers twice, ending with a layer of the meat mixture on the top.
  • Sprinkle remaining 1/2 cup mozzarella on top. Bake uncovered for 30 minutes.
