225g butter , plus extra for the tin
75g caster sugar
4 tbsp honey
350g porridge oats

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 30 x 15cm rectangle tin with baking parchment. Melt the butter, sugar and honey in a pan over a medium heat, stirring frequently until the butter has melted and the mixture is smooth.
  • Put the oats in a mixing bowl, then pour over the butter and honey mixture. Stir until all the oats are coated. Tip into the prepared tin, and use a spatula or the back of a spoon to evenly spread out the mixture. Cook for 10-15 mins until lightly golden. Leave to cool in the tin, then remove before cutting into squares.

Easy honey flapjacks image

The best flapjacks are gooey, chewy and, above all, easy. These fruit-filled treats are great to make with children. You will also need a 20x30cm/8x12in baking tray.

Number Of Ingredients 5

200g/7oz unsalted butter
200g/7oz demerara sugar
200g/7oz honey
400g/14oz porridge oats
50g/1¾oz nuts, raisins, crystallised ginger or desiccated coconut (optional)

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4 and grease a 20x30cm/8x12in baking tray.
  • Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved. Add the oats and nuts, fruit, ginger or coconut, if using, and mix well.
  • Transfer the oat mixture to the tray and spread to about 2cm/¾in thick. Smooth the surface with the back of a spoon. Bake in the oven for 15-20 minutes, until lightly golden around the edges, but still slightly soft in the middle. Leave to cool in the tin, then turn out and cut into squares.

300g porridge oats
100g frozen raspberries

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 20 x 20cm baking tin with parchment. Melt the butter, sugar, honey and a pinch of salt in a pan. Once the mixture is bubbling and combined, stir in the oats.
  • Tip the oat mixture into the lined baking tin and press down with the back of a spoon. Scatter over the raspberries, then lightly press them into the oat mixture. Bake for 25-30 mins until golden brown. Leave to cool, then cut into 9 or 12 flapjacks.

  • Add the almonds to a food processor and pulse until roughly chopped. There should be a mixture of small and medium sized pieces.
  • Tip the oats, honey, melted butter, salt, and vanilla extract into the processor with the nuts and then pulse 5-6 times until combined. Don’t over-mix the dough or you’ll lose all of the oats’ texture – pulse just until it starts to clump together.
  • Scrape the dough into the prepared tin and press it down very firmly with your hands or the back of a measuring cup. Bake the flapjacks for 15-18 minutes or until the top is golden brown and the edges are a bit darker and slightly crispy. There will be a slight softness to the middle of the bars and that’s okay.
