Steps:
- 1. Mist a 13 x 9" baking dish with cooking spray. Tear up bread into pieces and put into the baking dish. Sprinkle optional raisins & nuts over bread pieces, if desired. Set aside.
- 2. Next comes making the custard. Do you want to heat this up in a pan on the stove or in the microwave?
- 3. STOVE DIRECTIONS: Crack the eggs into a saucepan and beat with a whisk or a wooden spoon. Add the milk, sugar, and butter, then heat until hot, but NOT BOILING, stirring constantly. Remove from heat & stir in the vanilla. Pour egg mixture over the bread pieces in the baking dish. Jump down to Step #5.
- 4. MICROWAVE DIRECTIONS: Crack the eggs into a large microwave safe bowl & beat with a whisk or fork. Stir in milk, sugar, and butter. Microwave for 2 minutes, stir, microwave for 2 more minutes, stir, check to see if it's hot, but NOT BOILING. If not, continue microwaving for another 30 seconds, then stir & check. When the egg mixture is hot enough, remove from microwave, stir in vanilla, and pour over the bread pieces in the baking dish.
- 5. Press the bread pieces into the egg mixture with the whisk until all bread is evenly coated.
- 6. Sprinkle sugar & cinnamon over the dish, if desired. Let set for 15 minutes so the bread will absorb the egg mixture. Preheat oven to 350 degrees F.
- 7. Bake at 350 degrees F for 50-60 minutes, or until the custard is set and a knife inserted near the center comes out clean. Serve warm or cold. Refrigerate leftovers.

Popular choices are Praline Sauce (Paula Deen has a great recipe online), Vanilla Custard Sauce, Rum Sauce, Whiskey Sauce, Lemon Sauce, and Caramel Sauce. - Preheat oven to 350F with a rack in the center. place bead cubes in a shallow 2 1/2 quart baking dish; set aside. Place raisins in a small bowl. Add zests and juices; let stand 30 minutes.
- Place eggs in a large bowl. In another large bowl, combine heavy cream, 1 cup sugar, vanilla, and nutmeg. Pour the cream mixture into eggs, whisking constantly until fully combined. Add the raisin mixture, and stir to combine. Pour over bread, making sure all the bread is thoroughly saturated. Sprinkle with remaining sugar.
- Brush a sheet of parchment paper with butter. Place buttered-side down, over the bread. Place baking dish in a larger roasting pan. Place in oven, and add enough water to the larger pan to come halfway up sides of baking dish. Bake 45 minutes. Uncover and bake 15 minutes more. Remove from oven and let stand 20 minutes before serving. Top with a dollop of whipped cream, if desired.

My family LOVES bread pudding, and this recipe is one that I have fine tuned to their taste. I have to double this recipe, and bake it in a 9x13 inch pan for my family! It's great for breakfast or dessert and is delicious with milk poured on top! Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.

- break the bread up into small pieces and place it ino a bowl and cover with water and leave to stand for 30mins
- preheat the oven to 180C/gas mark 4
- squess all the water out of the bread a sieve is quite handy for this and then crumble this into a mixing bowl
- add the sugar spice fruit and the fruit juices and zest and mix well together
- melt the butter in a saucepan then add this and mix well you are looking for a dropping consistency add a little milk if you need to
- Pour into a greased roasting dish approx 250mm x 300mm and bake for 90 mins at 180c gas mark 4 cover with greaseproof paper if it starts to get too brown it should be firm to the touch then spinkle with caster sugar and cut into 12

- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.
