FUDGE FROSTING
This frosting uses flour to thicken it and keep it together, rather than the cooked protein structure of egg whites (Classic Butter Cream and 7 Minute Frosting), or the strong bond between butter and air (Classic Butter Cream and Quick Vanilla Butter Cream). After making all four frosting recipes, we've done most types except a Swiss Buttercream which is similar to a 7 minute, where you heat the egg whites with sugar, but for not as long and then you add creamed butter to it. There are also ganache frostings which start with melted chocolate and blend liquids into it like cream, corn syrup, vanilla, etc., and are never whipped, to make a shiny more dense chocolate frosting. There's also cream cheese frostings where you beat the cream cheese until very fluffy and add ingredients for sweetness and flavor.

- Put the milk in a saucepan and whisk in the flour. Bring to a simmer over medium heat and simmer until thickened, about 5 minutes, whisking often. Strain and cool to room temperature.
- Cream the butter, sugar, and vanilla in a mixer fitted with a paddle attachment until light and very fluffy. Add the cooled thickened milk and mix until smooth. Drizzle in the melted chocolate and continue whipping until well blended.

EASY CHOCOLATE FUDGE FROSTING
I got this recipe from a bowling partner several years ago when I discovered I was out of powdered sugar and asked her for a frosting recipe I could put on "One Pot Brownies" that didn't call for powdered sugar. I don't know where this recipe originated as she recited it to me from memory. It's a snap to make and goes good on brownies, cake, cookies-just about any product calling for frosting.

EASIEST BEST FUDGE FROSTING
I found this recipe years ago, and it got rave reviews, but I lost it and have looked for it ever since. Only 3 ingredients, VERY simple, and it generously frosts a 13 X 9 pan of brownies or Cake. Works best when slightly warm. I usually use it on brownies, (but usually have a little left for on top of ice cream)....Feel free to experiment....You can use semi sweet, dark, or milk chocolate, and you can garnish the top with nuts etc, but move quickly before it sets up all the way and your garnish won't "stick". Onr try and you will be hooked on the simplicity and the great flavor!

- In microwave safe bowl ,melt the chocolate chips until just melted 1-2 minutes.
- Stir with a spatula or scraper. Stir in the butter. Let the mixture sit for 4-5 minutes.
- Add the can of sweeetened condensed milk and stir until smooth.
- That's it! Frost the brownies or cake immediately as this mixture will set up and become more fudgey as it cools. If it cools too fast for you, place in the micrewave for 15 seconds to loosen it back up a bit.

- Put the chocolate in a heatproof bowl, suspended over a pan of barely simmering water. Stir every now and then until melted. (Alternatively, melt in the microwave, stirring the chocolate every 20 secs so it doesn't burn.)
- Remove the bowl from the heat and leave to cool a little. Meanwhile, put the butter and icing sugar in another large bowl and mash with a spatula to combine (this will prevent you covering the work surface in icing sugar), then whisk with a hand mixer until smooth.
- Sift in the cocoa and pour in the melted chocolate and milk, then mix again until smooth, and use to ice your chosen cake immediately. Will keep in the fridge for up to a week, but remove an hour before using to bring it back to room temperature, and beat well.

Ladies I am here to tell ya this is the easiest and most delicious fudge you will ever eat. My sister, Sue, found this recipe and I was hooked when she gave me a sample of it not long ago. There are several options..so have fun with it and enjoy! Talk about simple!

- 1. DO NOT use "whipped" frosting in a can, be sure to use regular frosting. Line 8 inch square pan with foil extending foil over edges lightly butter foil, melt chips in large saucepan over very low heat stirring until smooth; remove from heat and stir in frosting. Pour into 8 inch foiled lined pan and refrigerate for 1 hour. This step #1 is also the basic directions for each of the following fudge recipes below...
- 2. ROCKY ROAD FUDGE: 1- 12 ounce semi sweet chocolate chips, 1 can pillsbury chocolate supreme frosting, 1-1/2 cups mini marshmallows, and 3/4 chopped nuts. Use same directions as described in step #1 Be sure to add marshmallows and nuts after chocolate has been removed from the heat for a little while, so as not to melt the marshmallows.
- 3. FUNFETTI FUDGE: 1- 12 ounce bag white/vanilla chips, 1 can pillsbury pink vanilla cream supreme frosting, 1-1/2 cups mini marshmallows. Go to step #1 and follow directions. Do not add marshmallows while fudge mixture is still extremely hot. (I am not sure about the pink vanilla frosting..I believe you need to add food coloring to achieve the pink color for the vanilla frosting in the tub...)
- 4. TOFFEE BUTTERSCOTCH FUDGE: 1- 12 ounce pkg. butterscotch chips, 1 can pillsbury caramel pecan creamy supreme frosting, 1/2 cup chopped peanuts, 1/2 cup almond brickle chips. Go to step #1 and follow directions.
- 5. PEPPERMINT SWIRL FUDGE: 1- 12 ounce pkg. white/vanilla chips, 1 can pillsbury vanilla creamy supreme frosting, 1/2 tsp. peppermint extract, 4 drops red food coloring, 2 Tablespoons peppermint candy pieces, crushed. Prepare pan as above, melt chips then remove from stove top stir in frosting, peppermint extract and then spread into 8 inch pan..sprinkle crushed candy pieces on top and now take a knife and make swirls with the knife to make it a marble look...and refrigerate for 1 hour before serving.
OLD FASHIONED CHOCOLATE FUDGE FROSTING
This is a very good recipe for chocolate fudge icing. Makes enough for 2-layer cake, one 13-by-9-inch cake or 24 cupcakes.
