CHOCOLATE FUDGE

Make this moreish chocolate fudge as a sweet treat or homemade gift. Be sure to use a sugar thermometer to achieve the perfect melt-in-your-mouth consistency

Yield Makes 15 - 16 pieces

Number Of Ingredients 6

300ml whole milk
350g caster sugar
100g unsalted butter
1 tsp vanilla extract
100g dark chocolate, chopped (we used Green & Blacks, 70%)
chopped nuts, toffee pieces, mini chocolate buttons

Steps:

  • Line an 18cm square tin with greaseproof paper.
  • Put the milk, sugar and butter in a heavy-based saucepan. Heat gently, stirring continuously with a wooden spoon, until the sugar has dissolved and the butter has melted.
  • Bring to the boil for 15-20 mins, still stirring all the time. The mixture will bubble up - when it does, take it off the heat and keep stirring it until it sinks back down. Then return it to the heat.
  • Start to take the temperature after about 15 mins (continuing to stir or it will burn on the bottom). The time it takes to come up to temperature may vary, particularly in a cold kitchen. Once it reaches 115C on a temperature probe, remove it from the heat and stir in the vanilla extract and a good pinch of sea salt. Leave to cool for 5 mins.
  • Stir in the chopped chocolate and the mixture and keep stirring until the chocolate has melted. Quickly pour the mixture into your prepared tin and leave to set at room temperature.
  • Before the fudge has completely set, you can add rows of different toppings like nuts, toffees or mini chocolate buttons - just scatter them over the surface and gently press into the fudge until they stick. Make sure the fudge is only slightly warm when you do this - if it's too hot the toppings can melt. Once set, cut the fudge into small pieces and store in a sealed container.

3 cups semi-sweet chocolate (you could use bittersweet as well)
1 14oz can sweetened condensed milk
2 Tbsp cocoa powder, unsweetened
2 Tbsp butter
1/2 tsp salt
1 1/2 tsp vanilla extract
1 cup chopped walnuts or pecans, optional*

Steps:

  • Line an 8x8 square pan with non-stick foil.
  • In a medium-large sized pot, melt chocolate, sweetened condensed milk, cocoa powder, and butter over medium heat until the mixture is completely smooth.
  • Stir in vanilla extract, salt and chopped nuts (if using) into the fudge.
  • Pour the fudge into the prepared pan, smoothing it in an even layer.
  • Allow the fudge to chill in the fridge for about 4 hours, or until firm.
  • Remove foil from the pan and cut fudge into squares.
  • Enjoy!
  • I would store leftover fudge in the fridge as the fudge does soften when as room temperature.

1/2 cup butter (Not spread or tub product) or 1/2 cup margarine (Not spread or tub product)
1/3 cup water
1 (16 ounce) package powdered sugar
1/2 cup nonfat dry milk powder
1/2 cup unsweetened cocoa powder
1 pinch salt
1/2 cup chopped nuts

Steps:

  • In a small saucepan heat together butter and water just until boiling, stirring to melt butter.
  • Sift together powdered sugar, dry milk powder, coco powder and salt into a large bowl.
  • Add melted butter mixture.
  • Stir until well blended.
  • Stir in chopped nuts.
  • Turn into a buttered 8x8x2 inch pan.
  • Chill several hours.
  • Cut into squares.

Steps:

  • Place both ingredients in a microwave safe 8" x 8" dish.
  • Microwave on high for 2 to 3 minutes.
  • Remove (with oven mitts, please) and stir to combine.
  • Place in the refrigerator for 2 hours to set.
  • Fudge can be removed from refrigerator and stored at room temperature after it has set.
  • Once at room temperature you can melon scoop it, roll it in powdered cocoa and chopped nuts, and serve as truffles.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

  • Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water.   • Remove from heat. Add butter and vanilla. Do not stir. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss (about 7 minutes). Quickly spread in prepared pan; cool completely. Cut into squares. Store in tightly covered container at room temperature.
