6 small Gala apples
6 wooden pop sticks
1 package (14 ounces) caramels, unwrapped
2 tablespoons water

Steps:

Remove stems and thoroughly wash and dry apples; insert pop sticks into tops. Line a baking sheet with parchment and grease the parchment; set aside., Place caramels and water in a small saucepan; cook and stir over medium-low heat 3-5 minutes or until smooth, stirring frequently. Remove from heat; cool slightly. Dip each apple in caramel mixture, allowing excess to drip off. Place on prepared pan. Refrigerate until set.

1 1/2 cups Original Bisquick™ mix
2/3 cup granulated sugar
1/2 cup milk
2 medium cooking apples, peeled and sliced (2 cups)
1 tablespoon lemon juice
3/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup boiling water
Sweetened whipped cream or ice cream, if desired

Steps:

Heat oven to 350°F. Mix Bisquick and granulated sugar in medium bowl. Stir in milk until blended.
Pour into ungreased square pan, 9x9x2 inches. Top with apples; sprinkle with lemon juice. Mix brown sugar and cinnamon; sprinkle over apples. Pour boiling water over apples.
Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with whipped cream.

This is a recipe I found on Pillsbury's web site which is easy enough for a weeknight dessert, especially if you premake the crust. You could probably substitue fresh apples for the canned and acheive a wonderful result. I also want to try this with a crust made of gingersnaps.

Ingredients

1 (15 ounce) box refrigerated pie crusts, softened as directed on box
2 (6 ounce) containers custard style creme caramel yogurt
1 (3 ounce) package cream cheese, softened
1 (21 ounce) can apple pie filling
3 tablespoons caramel topping (bought or homemade)

Steps:

Heat oven to 375°F Remove pie crusts from pouches.
Place 1 crust flat in center of ungreased large cookie sheet.
If necessary, press out folds or creases.
Place second crust flat over first crust, matching edges and pressing to seal.
With rolling pin, roll out into 14-inch round.
Fold 1/2 inch of crust edge under, forming border; press to seal seam.
If desired, flute edge.
Prick crust generously with fork.
Bake 20 to 25 minutes or until golden brown.
Cool completely, about 30 minutes.
In medium bowl, beat yogurt and cream cheese with electric mixer on medium speed until blended.
Spread evenly over cooled baked crust.
Spread pie filling evenly over yogurt mixture.
Drizzle caramel topping over top.
Cut into wedges.

1/2 cup granulated sugar
1/2 cup milk
2 medium cooking apples, peeled and sliced
1 tablespoon lemon juice
1 cup packed brown sugar
1/2 teaspoon ground cinnamon (or my sweet spice blend Sweet Spice Blend)
1 cup boiling water
sweetened whipped cream (optional) or ice cream (optional)

Steps:

Heat oven to 350ºF.
Mix Bisquick and granulated sugar in medium bowl.
Stir in milk until blended.
Pour into ungreased square pan, 9x9x2 inches.
Top with apples; sprinkle with lemon juice.
Mix brown sugar and cinnamon; sprinkle over apples.
Pour boiling water over apples.
(DO NOT STIR) Bake 50 to 60 minutes or until toothpick inserted in center comes out clean.
Serve warm with whipped cream.
