1 1/2 pounds beef (chuck or round), cut into 1 1/2 inch cubes
6 tablespoons oil, plus 2 tablespoons, plus 2 tablespoons
4 ounces chopped onion
2 ounces chopped celery
2 ounces chopped carrot
2 cloves garlic, minced, plus 1 clove
2 tablespoons tomato paste
2 quarts veal stock
2 bay leaves
8 ounces shiitake mushrooms, sliced
8 ounces portobello mushrooms, sliced
1 teaspoon chopped thyme leaves
8 ounces tourneed carrots
8 ounces tourneed celeriac
8 ounces tourneed turnips

Steps:

  • In a large skillet, sear the beef in 6 tablespoons oil. Add the onion, celery, 2 ounces of the carrot, 2 cloves of the garlic and caramelize. Add tomato paste, stock, and bay leaves. Simmer and let cook until meat is tender, about 1 hour. If meat is not tender, continue cooking, checking every 30 minutes. Meanwhile, preheat the oven to 350 degrees F. Toss the tourneed carrots, celeriac, and turnip with oil. Roast until tender, about 40 minutes.
  • In a separate saucepan, saute the mushrooms and thyme in oil, until the mushrooms have given up most of their liquid and are tender. Add the mushroom mixture to the stew. Serve beef with roasted vegetables.

¼ teaspoon ground black pepper
1 tablespoon olive oil
8 ounces small shallots, peeled
3 cloves garlic, minced
1 package (8 ounces) mushrooms, cut in quarters
2 tablespoons all-purpose flour
1 can (14.5 ounces) diced tomatoes, drained
1 cup Swanson® Beef Stock
3 tablespoons balsamic vinegar
1 tablespoon packed brown sugar
1 lemon
¼ cup chopped fresh parsley

Steps:

  • 1. Season the beef with the salt and black pepper.
  • 2. Heat the oil in a 12-inch skillet over medium-high heat. Add the beef and cook until well browned on all sides. Remove the beef from the skillet. Pour off all but 1 tablespoon fat.
  • 3. Add the shallots to the skillet. Cook for 10 minutes or until tender, stirring occasionally. Add the garlic, mushrooms and flour and cook and stir for 1 minute. Stir in the tomatoes.
  • 4. Stir the stock, vinegar and brown sugar in a small bowl until the mixture is smooth. Stir the stock mixture in the skillet and heat to a boil. Return the beef to the skillet. Reduce the heat to low. Cover and cook for 1½ hours.
  • 5. Uncover the skillet and cook for 30 minutes or until the beef is fork-tender and the vegetables are tender.
  • 6. Grate 2 tablespoons zest from the lemon. Stir the lemon zest and parsley in a small bowl. Sprinkle the lemon zest mixture over the beef mixture.

Steps:

  • In a large Dutch oven, heat vegetable oil over high heat until very hot.
  • Season shanks on both sides with the Essence, transfer to Dutch oven and cook until browned on both sides, about 3 to 4 minutes per side. Transfer shanks to a plate and set aside. Add onion, celery, carrots and mushrooms to the Dutch oven and cook, stirring occasionally, until vegetables are soft and beginning to caramelize, about 7 minutes.
  • Add garlic, bay leaves, thyme, and rosemary and cook for 2 minutes. Add red wine and stir well with a wooden spoon, scraping bottom of pan to loosen any bits. Add tomato paste, crushed tomatoes, beef stock, basil, parsley, crushed red pepper, salt, and black pepper and stir well to combine.
  • Return shanks to the Dutch oven and bring sauce to a boil. Cover Dutch oven, lower heat to a simmer and cook for 5 hours, stirring occasionally, or until shanks are tender. Taste the sauce and adjust seasoning if necessary. Serve immediately, with sauce ladled over Basil-Mashed Potatoes. Serve with Sauteed Fennel and Leeks.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

  • In a saucepan combine potatoes with enough water to cover by 1 inch and add 1 1/2 teaspoons salt. Bring to a boil, reduce heat to a simmer, and cook until potatoes are fork-tender, about 15 to 20 minutes.
  • Drain potatoes in a colander. Add butter and milk to the saucepan and heat until butter is melted. Return potatoes to the saucepan, add sour cream, and mash with a potato masher until desired smoothness is achieved. Season with more salt (if necessary) and black pepper. Stir in chopped basil and serve immediately.

  • Heat a medium sized saute pan over medium high heat. Add olive oil. Add fennel and saute for 3 minutes, until translucent. Add leeks and season with salt and pepper. Saute until fennel and leeks are tender, another 4 minutes. Add lemon zest and butter and toss. Adjust seasoning and serve.

3 garlic cloves, bruised, peeled
6 whole allspice
3 whole cloves
2 sprigs fresh parsley
2 sprigs fresh thyme or 1/4 teaspoon dried thyme
1 bay leaf
1 dried red chili pepper
1 (13 3/4 ounce) can beef broth
1 (12 ounce) bottle Guinness stout
2 teaspoons tomato paste
2 tablespoons unsalted butter
2 cups fresh mushrooms, thickly sliced
1 tablespoon red wine vinegar (or to taste)
2 -3 tablespoons chopped fresh parsley

Steps:

  • Arrange rack in lower third of oven. Preheat oven to 350 degrees.
  • Heat 2 T. oil in Dutch oven over high heat. Add 5 or 6 meat cubes and sprinkle with salt and pepper. Brown meat on all sides, 5-6 minutes; transfer to plate. Brown remaining meat in batches, adding oil as needed.
  • Add onions, carrots, and garlic to Dutch oven and stir to coat with oil. Reduce heat to medium and cook, stirring occasionally, until onions are light golden, about 15 minutes.
  • Meanwhile, tie allspice, cloves, parsley and thyme sprigs, bay leaf, and chile pepper in a piece of cheesecloth.

1.5kg/3lb 5oz braising steak , thickly sliced
500g red onion (about 3)
15g dried porcini mushrooms
3 tbsp olive oil
1 tbsp plain flour
425ml port
250g chestnut mushroom , whole, or halved if large

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Pat the beef dry with kitchen paper and season both sides. Thinly slice the onions. Pour 600ml boiling water over the dried mushrooms. Soak for 30 mins, then drain, reserving the juices.
  • Heat 2 tbsp of the oil in a large, flameproof casserole, then add the meat and fry on both sides until browned. you may need to do this in batches. Remove the meat from the pan, pour in the remaining oil, then add the onions and fry for 10 mins until softened and lightly browned. Return the meat to the pan, sprinkle in the flour and cook for 1 min.
  • Add the port, mushroom liquid and soaked mushrooms. Bring to the boil, season, then cover tightly and cook in the oven for 1½-2 hrs until the meat is tender. Check after 1 hr and give it a stir. If the sauce looks like it's getting too thick, add a splash of boiling water.
  • Taste and add more seasoning if necessary, then add the chestnut mushrooms and cook for a further 10 mins.

Miso adds an extra savory element, balanced with a touch of maple syrup, which further enhances the autumnal feel. Serve over mashed potatoes, rice, or noodles.

1 (2 1/2 pound) boneless beef chuck roast, cut into 2-inch thick strips
kosher salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste

3 king trumpet mushrooms, halved lengthwise
1 yellow onion, diced
¼ cup sake
3 tablespoons yellow miso

This is another easy recipe to do, it is another great one for winter. The best thing about this recipe is, it is one of those recipes you can make for 4 people or 10, all the ingredients just get thrown in together and cooked.

olive oil
1 kg topside beef, rolled
1 onion, sliced
4 garlic cloves, crushed
4 sprigs fresh thyme
2 sprigs fresh oregano
2 bay leaves
1/2 cup dry red wine
1 1/2 cups water
1 teaspoon beef stock (concentrated, I use quite a dense paste, so adjust for taste and what you use.)
1/4 cup dry red wine, extra
2 1/2 teaspoons cornflour
500 -600 g mixed mushrooms (Whatever is in season Swiss brown, button, shitake, oyster, chanterelles etc..)
70 g butter
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh parsley, finely chopped

Steps:

  • Heat a couple of tablespoons of olive oil in a pan, add beef and cook, turning until browned all over. Remove beef from pan and set aside, wipe pan clean add about a tablespoon more of oil, add onions and garlic and cooked until onions are soft.
  • Add herbs, red wine, water and stock, stir, return beef to pan cook covered, turning beef once for two hours or until beef is tender.
  • Discard herbs, strain liquid into sauce pan, keep onions to one side. Turn heat up to medium high, add extra wine, mix a little water to cornflour and pour into sauce. Stir until sauce boils and thickens.
  • Buttery Mushrooms.
  • I cut the mushrooms in different ways for presentation at the end. For example Button mushrooms-halved, Swiss brown quartered, Shitake-sliced, oyster-halved, chanterelles-chopped. So adjust for what you can buy at the time.
  • Heat butter in a pan, add mushrooms, stir until tender, stir in herbs.
  • To serve slice beef and place on serving platter with mushrooms and reserved onions.
  • I made this just for 2 and I bought a half a kilo of beef we are quite piggy with steak. This recipe will serve 4-5 depending on appetites. I also bought beef fillet as it is not expensive where I live, so the photo does look different, as it is thinner round than rolled topside.

  • Place the beef shanks onto a large plate or platter, and sprinkle both sides liberally with salt, some freshly-cracked black pepper, and the flour; place a large heavy bottom braising pot or pan over medium-high/high heat, and add about 2-3 tablespoons of the olive oil to the pot; once the oil is hot, add the beef shanks into the pot, and allow them to brown and caramelize for about 4-5 minutes on each side; once browned, remove the shanks from the pot, and set aside on a plate for a moment.
  • Next, reduce the heat to low, and add into the pot the remaining tablespoon of olive oil and the butter; once hot and melted, add in the sliced onion along with the Italian seasoning, and allow it to caramelize for a couple of moments, scraping up any tasty brown bits on the bottom of the pot; next, add in the garlic and stir, and once the garlic becomes aromatic, stir in the mushrooms.
