This Barbecue Grilled Chicken Marinade is fast, easy and delicious! It uses bottled BBQ sauce to start out the marinade, then you add in extra spices & herbs for the best chicken marinade ever!

1/2 cup olive oil
1/4 cup favourite BBQ sauce
1/4 cup apple cider vinegr
1 tablespoon minced garlic
1 teaspoon onion owder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
4 chicken breasts ( bone in and skin on)

Steps:

  • Combine all of the marinade ingredients until smooth and mixed thoroughly.
  • Place the chicken breasts into a large sealing plastic bag. Pour 2/3 of the marinade into the bag, coating the chicken. Place the remaining marinade into a container to save for basting later while cooking.
  • Place in the fridge SKIN SIDE DOWN and let marinate anywhere from 2-24 hours.
  • When ready to cook, pre-heat your grill to medium-high heat. ( 375-425 °F) , oiling the grill if necessary.
  • Remove the chicken from the bag, placing on the grill bone side down - skin facing up.
  • Discard the bag and marinade and retrieve the fresh, reserved marinade. Brush on the chicken every 5-8 minutes, basting well. Cook until the chicken reaches 165 °F. Remove and serve.

1 tbsp Vinegar

1/2 tsp Thyme (Dried)

Cilantro, basil or parsely (Fresh, for garnish)

Steps:

  • In a deep mixing bowl, add oil, soy sauce, lemon juice, honey, vinegar, ginger, garlic, black pepper, thyme, oregano, paprika, red chili flakes and additional salt (optional).
  • Mix everything together.
  • Place chicken breasts in the bowl and mix them in the marinade thoroughly.
  • Cover bowl tightly with saran wrap and marinate in the fridge for a minimum of 30 minutes up to maximum of 24 hours.
  • When you are ready to grill or bake, use tongs to remove chicken pieces from marinade and place it on a hot grill. Grill each side for 6-7 minutes or until the chicken is fully cooked through.
  • While grilling, baste the chicken with reserved marinade a few times.
  • Remove chicken breasts from grill and place them on a serving dish. Garnish with chopped parsley, cilantro or basil.
  • Let the chicken rest for 5 mins and then enjoy!

Steps:

  • To make marinade, whisk together the BBQ sauce, Italian dressing, apple cider vinegar, and pressed garlic.

Simple chicken marinade with lemon, herbs and garlic powder

3 tbsp lemon juice and zest of 1 lemon
2 tbsp regular olive oil
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp zaatar mix
A good pinch of salt (approx 1/4 tsp)

Steps:

  • In a large mixing bowl add the lemon juice and zest, salt, regular olive oil, garlic powder, zaatar and stir well together
  • Taste the marinade to see if it needs any seasoning adjustment
  • If you are using thighs, gash the chicken with a sharp knife. Add to the bowl and using your hands rub the marinade under the skin
  • If you are using chicken breast, cut into bite sized chunks and mix well with the marinade
  • Seal the mixing bowl with cling film or transfer to an airtight bag and place in the fridge
  • Ideally you should let the chicken marinade overnight but a good few hours is the next best thing
  • Once the barbecue is ready, grill on a low heat on each side until well done, and cover if possible

In our house, we don't agree on how much barbecue sauce should be added to our pulled chicken. Some like the sauce to be dripping, and I like a minimal amount. This is a simple recipe for pulled chicken, and you may add any amount of barbecue sauce you would like. You could also use this pulled chicken as a protein for a green salad, or a filling for a taco, with a few seasoning tweaks. Or, dice it (instead of pulling it) and use in a mayonnaise-based chicken salad. However you choose to use it, you can start it on the stovetop, finish it in the oven, and have dinner on the table in less than an hour.

3 pounds bone-in chicken breast halves, with skin
salt and ground black pepper to taste
2 tablespoons avocado oil
½ cup barbeque sauce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pat chicken breasts dry with a paper towel. Season both sides with salt and pepper.
  • Heat oil in a 12-inch, nonstick, oven-safe skillet over medium heat. Add chicken, skin-side down, to the hot oil and cook until lightly browned, 2 to 3 minutes. Turn and brown on the other side, 2 to 3 minutes.
  • Cover the skillet and transfer to the preheated oven. Bake until an instant-read thermometer inserted near the bone reads 160 degrees F (71 degrees C), 25 to 30 minutes.
  • Remove from the oven. Transfer chicken to a cutting board and cover with foil; let sit until cool enough to handle, about 10 minutes. The residual heat will bring the internal temperature to the recommended 165 degrees F (74 degrees C).
  • Remove and discard skin and bones. Use 2 forks to shred chicken.
  • Serve warm with barbecue sauce.
