My pineapple chicken recipe combines sweet fruit and veggies with savory BBQ. This sticky, spicy dish comes together in just 40 minutes!

2 lbs boneless (skinless chicken breasts chopped)
1 cup barbecue sauce of choice (divided)
1 onion (large, sliced)
2 bell peppers (red and or green, chopped)
12 oz pineapple chunks fresh or frozen (thawed)
1 jalapeño ( seeded and diced)
1/2 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400°F. Coat a baking dish with cooking spray, set aside.
  • Cut onion in half and slice thin. Cut bell peppers into bite size pieces. Seed and dice the jalapeño. Set aide.
  • In a bowl add chopped, bite-size chicken pieces and 2/3 cup of the barbecue sauce. Toss to coat, set aside to marinate for 15 minutes.
  • Arrange sliced onion in baking dish and top with marinated chicken pieces, bell peppers and pineapple. Brush remaining barbecue sauce on top, toss to coat and sprinkle on the diced jalapeño. Season with salt and pepper.
  • Bake uncovered for 30-35 minutes, or until internal temperature of chicken reads 165°F.
  • Serve and spoon sauce and juices over chicken.

2 (18 ounce) bottles barbecue sauce
1 (8 ounce) can crushed pineapple
1 tablespoon garlic powder
½ teaspoon chili powder
6 chicken leg quarters

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix barbecue sauce, pineapple, garlic powder, and chili powder together in a bowl.
  • Lay chicken legs in a 9x13-inch baking dish. Pour barbecue sauce mixture on top, making sure to coat all of the chicken. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour.
  • Remove chicken from the oven and let cool 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place baked chicken on the hot grill and cook until browned on each side, 10 to 15 minutes.

  • In a large bowl, combine the first six ingredients; add chicken and turn to coat. Cover and refrigerate 1-2 hours., Drain and discard marinade. 1 (20 ounce) can pineapple chunks in juice, drained with juice reserved
1/2 cup fat-free chicken broth
2 tablespoons light brown sugar
2 teaspoons Worcestershire sauce
1/2 teaspoon mild chili powder
1/8 teaspoon clove
1 cup cherry tomatoes
3 green onions, chopped
1 tablespoon cornstarch
3 tablespoons water
hot cooked rice

Steps:

  • Mix together vinegar, ginger, and chicken in a bowl, making sure chicken is coated.
  • In a skillet, heat 1/2 cup reserved pineapple juice, broth, brown sugar, Worcestershire sauce, chili powder, and cloves; bring to a boil, then reduce heat.
  • Add the chicken to the skillet and cook for 5 minutes or until chicken is cooked through.
  • Mix together cornstarch with water, set aside.

4 skinless, boneless chicken breast halves
4 pineapple rings
3 tablespoons soy sauce
2 tablespoons fresh lime juice
2 tablespoons pineapple juice
3 tablespoons honey

½ teaspoon sesame oil
1 clove garlic, minced

Steps:

1 (15.25 ounce) can pineapple slices (in 100% juice)
1 cup barbecue sauce
1 teaspoon minced garlic
1 Tablespoon soy sauce
6 boneless skinless chicken breasts
1 red bell pepper (cut into bite-sized pieces)
1 green bell pepper (cut into bite-sized pieces)
4 green onions (diced)
Salt and pepper, to taste

Steps:

  • Preheat grill to high heat.
  • Drain juice from pineapple slices into a small mixing bowl.
  • Whisk in barbecue sauce, minced garlic, and soy sauce; set aside.
  • Place 6 pieces of foil (approx. 12"x18") on a clean working surface and spray with nonstick cooking spray.
  • Place a chicken breast in the center of each piece of foil.
  • Divide pineapple slices, peppers and green onions evenly on top of each chicken breast.
  • Season with salt and pepper, to taste.
  • Reserve 1/2 cup barbecue pineapple sauce; set aside.
  • Drizzle remaining barbecue sauce evenly over foil packs.

This recipe has a Polynesian touch to it. Its quick and simple to make. I made up this recipe when I was baking chicken and wanted to put a twist to it. If you like pineapple and honey BBQ sauce you will love this.

2 roasting chickens
20 ounces pineapple chunks
1/2 cup honey barbeque sauce
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven 350 degrees.
  • Wash chicken.
  • Spray with non stick oil in a 9x13 inch baking casserole dish.
  • Place chickens side by side, pressing firmly to get all of chicken into dish.
  • Sprinkle salt and pepper lightly over both chickens.
  • Open can of pineapple chunks and drain off juice add juice to chicken for moisture while cooking along with 2 cups of water. Set pineapple aside for later.
  • Cover with foil and bake for 1 hour.
  • Now add BBQ sauce, spreading evenly with brush. Cook for 8-10 minutes repeat.
  • Add remaining BBQ sauce to top of chickens and top it off with your remaining pineapple.
  • Bake for 30-45 minutes. Check to see if done and if not, bake another 30-45 minutes.
  • This is great with stewed red skinned potatoes and baby sweet peas and strawberry short cake.
