EASY BACON PEA PASTA SALAD
The sweet pop of tender baby peas, creamy mayonnaise dressing, crunchy mild red onion, chopped hard-boiled eggs, and crisp bacon join forces with shell pasta in your new favourite spring and summer dish: Easy Bacon Pea Pasta Salad.

- In a large mixing bowl, gently stir together the peas, bacon, red onion, hard-boiled eggs, cheese, mayonnaise, and pickle brine or vinegar until evenly combined. Gently toss in the cooked pasta until everything is evenly distributed. Serve immediately, or (preferably) put in a tupperware, Gladware, or other tightly covered container in the refrigerator to give the flavours a chance to meld for an hour but up to three days prior to serving. Give it a gentle stir from top to bottom before serving.If the pasta soaks up the dressing and it seems a bit dry, stir in a little extra mayonnaise or add ranch dressing, 1 tablespoon at a time until the dressing reaches desired consistency.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble. Reserve 1 tablespoon bacon grease.
- Whisk mayonnaise, reserved bacon grease, honey, sugar, salt, and black pepper together in a bowl until dressing is smooth.
- Mix bacon, peas, celery, Cheddar cheese, and onion together in a bowl. Drizzle dressing over salad and toss to coat. Refrigerate until chilled, about 30 minutes.

- Place ricotta, parmesan, butter, salt and pepper in a large bowl. set aside. Fry bacon in skillet til crisp. Transfer bacon to paper plate to drain, crumbling once cooled. Reserve pan and bacon grease.
- To the bacon pan, add onion and cook about 3 minutes. Add garlic and cook 1 more minute. Transfer onion mixture to cheese mixture.
- Meanwhile, cook pasta in boiling water. When it is just 1 minute till done, add peas to water.
- Reserving 1 cup of pasta/pea water, drain pasta and peas. Add half of the pasta water to the cheese mixture along with the lemon juice and mix till smooth.
- Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.
PEAS, PASTA & BACON SALAD
When the temperature soars in the summer I can't face hot meals and serve nothing but assortments of salads, cheese and cold cuts for days on end. I value "main course" salads that will keep in the fridge from one meal to the next, and this one fits the bill. Fresh peas are quite amazing, but expensive and time consuming to shell. Frozen ones are not the same, but perfectly fine. If you use frozen peas, prep time will be much quicker. I have a big crop of snow peas this year; I think I will try them in this salad.

Steps:
- Shell the peas.
- One quart of peas in the pod should yield about two cups of peas.
- Cook the pasta in plenty of boiling water until it is al dente.
- Steam or boil the peas until tender.
- When each of these is done, plunge them into cold water to stop them cooking and to cool them.
- Meanwhile, chop the bacon into 1" pieces and fry it until crispy.
- Drain it well and allow it to cool.
- Wash and chop the celery finely.
- Add the bacon and celery to the cold drained pasta and peas.
- Mix the celery seed, pepper, cumin and mint into the mayonnaise and stir it into the salad.
- Refrigerate the salad for 20 minutes to an hour to allow the flavours to blend before serving.
- Serve garnished with a wedge of lemon, to be squeezed over if you like your salad a little tarter.

- Cook the pasta and peas: Bring a large pot of lightly salted water to a boil (SEE NOTE). Add the pasta to the boiling water and cook according to package directions. During the last 1-2 minutes of cooking, add the peas and cook until pasta is just al dente and peas are bright green.
- Drain pasta and peas: Transfer the pasta and peas to a colander. Rinse under cold water for 30 seconds to stop the cooking process. Gently shake the colander to remove as much water as possible.
