Time 45m

Yield 48

Number Of Ingredients 14

1-1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
6 tablespoons cold butter
1 large egg
1/2 teaspoon vanilla
1 (6 ounce) container vanilla yogurt
1 cup peeled and chopped apple (about 1 large apple)
1/2 cup peeled and shredded apple (about 1 small apple)
2 cups powdered sugar, divided
1/3 cup apple cider

Steps:

  • Preheat oven to 350°F. Lightly spray two mini muffin pans with non-stick cooking spray.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in the butter with a pastry blender or two knives until coarse crumbs form.
  • In a small bowl, whisk together the egg, vanilla and yogurt. Add the yogurt mixture to the flour mixture and stir until well combined. Fold in the chopped and shredded apples.
  • Place a few teaspoons of batter in each muffin cup. Bake for 15 minutes until they just start to brown.
  • Remove the fritters from the oven and turn the oven broiler on high. Line two cookie sheets with parchment. Transfer the fritters to the cookie sheets.
  • In a small bowl, whisk together 1 cup powdered sugar and 4 tablespoons apple cider. The glaze should be very thin. Brush the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes until the glaze starts to caramelize the tops of each fritter. Rotate the baking sheets every minute to insure even caramelization. Be sure to watch the fritters carefully so they don't blacken and burn.
  • Remove from the oven. Whisk remaining powdered sugar and apple cider into leftover glaze until it's smooth and thick. Brush glaze evenly over broiled fritters. Let set on cookie sheets until glaze hardens, about 15 minutes.
  • Notes: Store in the refrigerator. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for 5-10 minutes.

CLASSIC APPLE FRITTERS DOUGHNUTS

Classic Apple Fritters Doughnuts image

These are best on the day they are made, but they freeze beautifully if you can't eat them all up right away. A deep fryer is recommended or alternately, at least, a thermometer so you can monitor oil temperature to ensure good results.

Categories     Snack

Time 2h30m

Number Of Ingredients 23

1 1/2 Tbsp active dry or instant yeast
1/2 cup warm water
2 tsp white sugar
2 cups bread flour (plus more, as needed (can use all purpose flour. See Note 1))
1/4 cup white sugar
1/4 tsp baking powder
1/4 tsp mace ((can substitute nutmeg))
1 tsp salt
2 Tbsp shortening or lard ((can use vegetable oil. See Note 2))
1 large egg
1/4 tsp vanilla
2 medium tart apples (peeled, cored and chopped into 1/2-inch pieces *see Note 3)
1/4 cup white sugar
2 tsp freshly squeezed lemon juice
4 tsp cinnamon
1 Tbsp bread flour
2 cups confectioners/icing sugar
1 1/2 tsp light corn (or golden syrup)
1/4 tsp salt
1/4 tsp vanilla
1 Tbsp white sugar
1/3 cup water
vegetable oil (for frying (or similar, neutral-tasting oil))

Steps:

  • For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
  • Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
  • When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
  • Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
  • Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.
  • *See the video above this Recipe Card for a complete demonstration of the following shaping and cutting process.
  • When bread has finished it's first rise, remove to a lightly floured surface and roll into a 10-inch x 10-inch square. Sprinkle the apples over one half of the dough. Sprinkle all the cinnamon evenly over the apples and then sprinkle with the 1 Tbsp. flour. Fold the empty side of the dough over the side with the apples. Using a sharp knife or a bench scraper, cut the dough into 1/2-inch wide strips from top to bottom. Repeat cutting 1/2-inch strips from side to side, so you end up with small chunks of dough. Gather up the dough bits and cut some more, from different directions, until it is in small chunks and evenly mixed with cinnamon/apples/dough etc.
  • Using floured hands, roughly shape into a 12-inch long x 3-inch wide log. Cut the log into 1 inch slices. With each slice, roughly pat into a disc, about the size of your palm (use some additional flour, as needed, if your dough is sticky). Place the dough discs onto a parchment lined or floured baking sheet, leaving a couple of inches of room around each. Repeat with all 12 dough pieces. Cover with plastic wrap or a clean tea towel and set-aside to rise until doubled again, about 30-45 minutes (approximately. Will vary depending on room temperature. The fritters should double in size and look puffy).
  • When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
  • In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
  • When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
  • While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.

SUPER EASY APPLE FRITTERS (VIDEO)

Super Easy Apple Fritters (video) image

Easy and fluffy apple fritters recipe with a cinnamon glaze!

Provided by tatyanaseverydayfood

Categories     Dessert

Number Of Ingredients 14

2 to 3 medium apples
2 large eggs
2/3 cup milk
1/3 cup sugar
1 tsp vanilla extract
1 3/4 cup all-purpose flour
2 tsp baking powder
1 tbsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp salt
6 to 8 cups canola oil (for frying)
2 cups confectioner's sugar
2 to 3 tbsp milk
1 tsp ground cinnamon

Steps:

  • Prepare the apples first. Peel them, then use a sharp knife to dice the apples into pea-sized pieces and place the diced apples in a large mixing bowl. If desired, pour a tablespoon of lemon juice over the apples to prevent browning.
  • In a separate mixing bowl, combine the milk, eggs, vanilla and sugar and whisk for a minute until the mixture is smooth. In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg and salt. Stir to combine the dry ingredients, then gradually add them to the wet batter. Mix the flour into the batter just until it's incorporated; do not overmix. Fold in the diced apples with a spatula.
  • Pour the frying oil into a large pot, attached a thermometer and heat over medium-high heat until the oil reaches 350F/177C. For each fritter, use approximately 1/4 cup of batter for small fritters. Fry the fritters for 5 to 6 minutes, until the donuts are a rich golden color. For larger fritters, reduce to heat to 325F/163C and increase time to 7 to 8 minutes. Remove the fried fritters onto a wire rack lined with paper towels to absorb any excess oil.
  • For the glaze, simply whisk together the milk, confectioner's sugar and cinnamon in a medium-sized mixing bowl until the glaze is smooth. The glaze needs to be on the thin side; add more milk if necessary.
  • Allow the fritters to cool for 2 to 3 minutes, then gently roll each fritter in the prepared glaze, coating it evenly all over. Place the glazed donuts onto a wire rack and allow the glaze to set and any excess to drip off.

EASY HOMEMADE APPLE FRITTERS

Easy Homemade Apple Fritters image

These Easy Homemade Apple Fritters are packed full of fresh apples, simple to make, and can be ready in just 30 minutes!

Provided by Tracy

Categories     Breakfast

Time 30m

Number Of Ingredients 17

3-4 cups apples, diced (about 2-3 apples, peeled and diced into bite-size pieces (honeycrisp or granny smith))
1 tablespoon lemon juice (fresh)
1 1/4 cup all purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 teaspoons baking powder
pinch nutmeg (or apple pie spice!)
pinch ground ginger ((optional))
1 tablespoon granulated sugar
2 large eggs (at room temperature)
1/3 cup milk
1 tablespoon melted butter (cooled)
1 teaspoon vanilla extract
Vegetable oil for frying
1 cup confectioner's sugar
1/2 teaspoon vanilla extract
2-5 teaspoons milk (or water)

Steps:

  • Dice your apples, place in a bowl and add lemon juice. This will prevent the apples from browning.
  • In a large bowl, whisk eggs. Add milk, vanilla, and cooled melted butter (don't add it hot, you'll cook your eggs!) Whisk together with a fork until it is all combined.
  • In another medium sized bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger.
  • Add dry ingredients to wet and mix well until a loose dough is formed. Fold in the apples.
  • Fill a frying pan or sauce pan with about 3-4 cups of oil or so that you have about 3-4 inches of oil in your pan. Heat oil over medium heat until the oil reaches 375°F with a candy thermometer or an instant read thermometer. If you don't have a thermometer, use the wooden spoon test (see notes).
  • Use a measuring cup to drop batter into oil, 1/4 cup or 1/3 cup. Fry until the outside is golden brown. Flip and fry other side until golden brown, for a total of about 4-5 minutes. You'll know they're done if you insert a small knife into the center and it comes clean. If not, fry a little longer so that the center is fully cooked. This time will depend on the size of your fritter.
  • Use a slotted spoon to transfer to a paper towel-lined cooling rack and let cool. Repeat with all the batter.

Provided by Chef Pisces

Categories     Dessert

Time 14m

Yield 1 1, 6 serving(s)

Number Of Ingredients 7

1 jar of motts applesauce
5 cups swan's down cake flour
1/4 cup unbleached cane sugar
3 eggs
3 cups corn oil
1 cup powdered sugar (optional)
raspberry preserves, as a garnish or dipping sauce

Steps:

  • Pour the oil into a deep-fryer and preheat. An electric skillet works also, but they might not be as crisp.
  • In a mixing bowl, beat the eggs with a fork, and set aside.
  • In another bowl, sift together the flour and sugar, then combine with the eggs and apple sauce. With an electric mixer, mix on a low speed till everything is well incorporated into a reasonably thick batter. The batter should be refrigerated for at least an hour before frying.
  • In a deep fryer, on a medium to high heat, drop the batter by the spoonful into the basket, and lower it into the oil. They burn quickly, and should only be deep fried for a couple of minutes or till golden brown. In an electric skillet on medium, the fritters cook for about 4 minutes on each side. Once they're golden, drain on paper towels and when cool, they may be rolled in powdered sugar and served with Raspberry preserves.

  • In a large bowl combine the kefir, one egg, sugar. In another bowl mix the flour, salt and baking soda. Add the wet ingredients to the dry and stir to combine. Stir in the diced apples and let it sit undisturbed for 20 minutes.
  • Add the oil to a non-stick frying pan to cover the bottom up to 1/4 inch/1 cm deep and heat it over medium heat. Test if the oil is ready by sprinkling a tiny amount of flour. If it sizzles, the oil is hot enough for frying.
  • Stir the batter to ensure an even distribution of the apples throughout. Scoop a small amount with either a spoon or an ice cream scoop and drop a fritter no larger than 2 inches in diameter into the hot oil. Let it cook until golden brown then flip and cook on the other side. The fritters will puff up as soon as they are flipped. Each batch takes 4.5-5 minutes to cook on medium heat. Continue until the batter is gone. You may need to add more oil throughout the process.
