SUNNY'S EASY BANANAS FOSTER

2 tablespoons salted butter
1/2 cup orange juice
1/4 cup packed light brown sugar
1/2 teaspoon pumpkin pie spice
2 bananas
1/4 cup bourbon
1 pint vanilla ice cream
1/4 cup chopped pecans or walnuts

Steps:

  • Melt the butter in a large nonstick skillet over medium heat. Stir in the orange juice, brown sugar and pumpkin pie spice and bring to a simmer. Slice the bananas and add to the skillet, stirring to coat. Saute until the bananas are tender and the sauce coats them, 2 to 3 minutes. Turn off the heat and add the bourbon. Light the liquid in the skillet with a click lighter and flambe, allowing the flames to subside. Turn on the heat and cook about 1 minute. Serve in bowls, warm, over vanilla ice cream with a sprinkle of nuts.

1 teaspoon vanilla
1/2 teaspoon cinnamon
1 pinch salt
2 scoops ice cream (vanilla or something more exotic like praline or wattleseed)

Steps:

  • Melt butter in a saucepan over medium heat.
  • Add sliced bananas and stir for 2 minutes.
  • Add brown sugar, vanilla, cinnamon, and salt.
  • Lower heat and continue cooking, stirring constantly for 2 more minutes.
  • Serve over a scoops of ice cream.
  • Note: 1 oz of booze may be added during the last 2 minutes of cooking (Rum works well), add with the pan off of the heat- Beware of flaming.

3 tablespoons unsalted butter
3 tablespoons packed brown sugar
2 bananas, peeled and halved lengthwise and crosswise
2 fluid ounces rum
1 fluid ounce banana liqueur
2 pinches ground cinnamon
2 scoops vanilla ice cream
2 small sprigs of mint

Steps:

  • Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.
  • Place bananas, cut-side down, in brown sugar mixture. Cook until just golden, about 30 seconds; flip and cook until golden on the other side, about 30 seconds.
  • Remove from heat. Pour rum and banana liqueur into skillet; return skillet to high heat. Cook until alcohol ignites and flames, 1 to 3 minutes; add cinnamon. When flames die, remove skillet from heat.
  • Scoop vanilla ice cream into 2 bowls. Divide bananas mixture between bowls and garnish with mint sprigs.

2 bananas, peeled and cut in quarters
2 tablespoons honey
2 eggs, beaten
1/4 cup rice flour
1/2 cup panko breadcrumbs
1/4 cup shredded coconut
1/2 cup oil
2 tablespoons butter
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon allspice
4 tablespoons banana liqueur
1/4 cup rum (use Malibu or another coconut rum for a coconut infusion)
1/2 teaspoon zest from lemon

Steps:

  • Mix the eggs and honey thoroughly in a shallow dish. Put the rice flour in another, separate dish and combine the panko and coconut in a third dish.
  • Heat the oil in a pan over high heat. Roll the Bananas in the rice flour first, then in the egg/honey mixture, then in the panko crumbs/coconut mixture to coat.
  • Place the bananas in the pan and cook, rolling gently when needed, until golden brown. Place into serving dishes.
  • For the sauce:.
  • Combine the butter, sugar, and cinnamon and allspice in a skillet. Place the pan over low heat on top of the stove, and cook, stirring, until the sugar dissolves.
  • Stir in the banana liqueur. Remove from heat and add in the rum.
  • Increase heat to high and cook the sauce until the rum burns off, or carefully flame the liqueur and brandy in the pan and cook until the flame dies out and the alcohol is cooked out (use a long match or a long-necked lighter).
  • Stir in the lemon zest and turn off the heat.
  • Pour the warm sauce over the top of the bananas and serve.

Peanut oil for frying
2 eggs lightly beaten
1/2 cup cold milk
3 tablespoons light brown sugar
1 cup flour
Pinch of baking soda
4 ripe bananas, sliced diagonally into 1/4-inch pieces
2 tablespoons confectioners' sugar

Steps:

  • Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees. Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl. Add the banana slices a few at a time, coating them well with the batter.
  • With a long slotted spoon remove the banana slices a few at a time and place them into the oil. Fry the bananas for 2 to 3 minutes, until lightly browned, turning them once. Drain them on paper towels and transfer them to a serving platter. Repeat the process until all of the bananas have been fried. Sprinkle them with the confectioners' sugar and serve warm.
