CRAWFISH AND CREAM OVER PASTA

1 pound linguine or fettucine
2 tablespoons olive oil
6 tablespoons unsalted butter
1 cup chopped yellow onions
2 tablespoons minced garlic
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
1/4 teaspoon cayenne
1/4 cup dry white wine
2 cups heavy cream
1 tablespoon fresh lemon juice
1 pound crawfish tails* (See Cook's Note)
1/2 cup chopped green onions
1/2 cup chopped fresh parsley leaves
1 cup grated Parmesan
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes. Drain, reserving 1/4 cup of the cooking liquid. Return to the pot and toss with the olive oil and reserved cooking liquid. Cover to keep warm.
  • In a large saute pan or skillet, melt the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. Add the garlic, Essence, salt, and cayenne, and cook, stirring, for 1 minute. Add the white wine and cook over high heat until nearly all evaporated. Add the cream lemon juice and cook, stirring occasionally, until slightly reduced. Add the crawfish tails and cook, stirring, to warm through. Add the onions and parsley and cook for 1 minute. Add the cooked pasta and toss to coat with the sauce. Cook until the pasta is warmed through, about 1 minute. Remove from the heat and add 1/2 cup of the cheese.
  • Turn out into a serving bowl and top with the remaining 1/2 cup of cheese. Serve.
  • Combine all ingredients thoroughly.

Wow! Enough said. Actually, this is the most incredible creamy pasta dish ever created. It's courtesy of Chef Gus Martin, from Dickie Brennan's Palace Cafe in New Orleans. Better drink some red wine with this to combat the clogging arteries, though. It's well worth all the effort, you will be hailed a hero! To make with chicken or crawfish, just substitute same amount for the shrimp. For the Creole Seasonings we use Recipe #22089.

3 tomatoes
2 red bell peppers
vegetable oil
1 quart heavy whipping cream
2 teaspoons garlic, shopped
1 tablespoon butter
1 1/2 lbs shrimp, peeled
1 cup leek, sliced
2 cups shiitake mushrooms, julienned
1 tablespoon creole seasoning
1 (12 ounce) bottle abita amber beer
16 ounces angel hair pasta, cooked al dente
kosher salt, to taste
1/2 cup romano cheese, freshly grated
3 -4 tablespoons fresh parsley, chopped

Steps:

  • Preheat the oven to 400 degrees.
  • Core the tomatoes and cut into halves.
  • Core the bell peppers and cut into halves lengthwise, discarding the seeds and membranes.
  • Rub the skins of the tomatoes and peppers with a small amount of vegetable oil and make a small slit in the skin of each tomato half.
  • Arrange cut side down in a baking pan and roast in the oven until the skins blister.
  • Squeeze the seeds from the tomatoes and chop coarsely.
  • Julienne the bell peppers.
  • Bring the cream to a boil in a heavy saucepan.
  • Stir in the roasted tomatoes and cook until the mixture is reduced 1/3 and the sauce will coat the spoon.
  • Saute the garlic in the butter in a large saute pan until golden brown.
  • Add the shrimp, leeks, mushrooms, and Creole seasoning.
  • Saute until the shrimp are partially cooked.
  • Add the beer and stir to deglaze the pan.
  • Cook until the beer has evaporated.
  • Add the tomato cream and pasta; mix well and season with kosher salt.
  • Spoon onto serving plates and top with the Romano cheese and roasted bell peppers.
  • Garnish with parsley.

1 lb pasta (fettuccine, linguine, rotini, penne, or bowties
1 lb crawfish tails and fat (louisiana - don't use chinese)
1 stick butter (don't use margarine)
1 pt half and half*
1 large bunch green onions and tops, sliced
1-2 Tbsp garlic, minced
creole seasoning and salt to taste

Steps:

  • 1. Cook pasta in salt water according to the directions on the package. Drain, then rinse under cool water to stop the cooking. Drain again, thoroughly.
  • 2. Melt the butter in a large skillet and saute onions and garlic for 3 minutes.
  • 3. *If using raw shrimp, add them with the onions and garlic at the beginning.
  • 4. Add the crawfish and half-and-half, sauté until bubbly.
  • 5. Add Creole seasoning - 1 big pinch then taste. Add more as needed but tasting before adding the next pinch until you think it's right. Add salt if needed. If you've boiled your own crawfish add the crawfish fat to the mixture as well.
  • 6. Cook for 5 - 10 minutes over medium heat until the sauce thickens.
  • 7. Add the pasta to the pot and toss well. You may not need to use all of the pasta. (I double the recipe when using the whole pound of pasta.) Let it sit for about 10 minutes over very low heat, stirring often.
  • 8. Serve immediately, with lots of French bread and a nice white wine. Buon Appetito!
  • 9. *COOKS NOTE: Most of the time I use half Heavy Cream and half - Half and Half, or in other words 1 1/3 cups heavy cream and 2/3 cups milk. I generally buy Heavy Cream because it can be cut with milk to make Half and Half. The sauce seems to thicken better than straight Half and Half but using all Heavy Cream is too thick.
  • 10. *Tip: The sauce is excellent over Redfish on da Half Shell or grilled filets - I call it Redfish Monica.
  • 11. *Options: If you don't have crawfish, use bay scallops, shrimp, lump crabmeat (add last and fold in gently).

2 (12-ounce) bottles lager style beer (recommended: Budweiser)
1 cup water
1/4 cup apple cider vinegar
2 onions, quartered
1 garlic clove, smashed
1 tablespoon Neelys Seasoning Rub, plus more for garnish, recipe follows
1 tablespoon crab boil seasoning (recommended: Old Bay)
2 bay leaves
3 whole peppercorns
1 lemon, quartered
1 tablespoon hot sauce
2 pounds large shrimp, peeled and deveined
Lemon wedges, for garnish
BBQ Cocktail Sauce, for garnish, recipe follows
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
1/2 cup Neelys Barbecue Sauce, recipe follows
1/2 cup prepared horseradish
1/2 cup ketchup
1 lemon, juiced
Dash hot sauce
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Add all ingredients, except shrimp and garnishes to a large saucepan on high heat. Bring to a boil for 10 minutes. Reduce the heat to low. Add the shrimp and cook until bright pink, about 5 minutes. Drain the shrimp from the cooking liquid and place in a serving dish. Chill or eat while warm, sprinkled with the dry rub before serving alongside Cocktail Sauce.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • Mix all ingredients in a small bowl. Cover and refrigerate until use.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
  • Yield: 3 1/2 cups

This is a traditional crawfish dish in New Orleans. This dish can be spicy or mild depending on the amount of red pepper flakes you use, so be careful.

1 (16 ounce) package bow tie pasta
¾ stick butter
1 clove garlic, minced
salt and pepper to taste
1 yellow onion, chopped
1 tablespoon crushed red pepper flakes, divided
1 pound crawfish tails
2 pints heavy cream
½ tablespoon crushed red pepper flakes
1 bunch green onions, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
  • While the pasta cooks, melt the butter in a large, deep skillet over medium heat. Cook and stir the garlic in the butter 1 to 2 minutes; season with salt and pepper. Stir in the yellow onion and 1/2 tablespoon red pepper flakes; cook until the yellow onion becomes translucent. Add the crawfish tails; cook 2 to 3 minutes, stirring continually; transfer the crawfish to a bowl, leaving as many onions as possible in the skillet.
  • Pour the heavy cream into the skillet and bring to a boil; reduce heat to low, and simmer until thickened. Sprinkle the remaining 1/2 tablespoon red pepper flakes into the cream, return the crawfish to the sauce and simmer 2 to 3 minutes. Serve sauce over the drained pasta; garnish with chopped green onion.

1/2 cup chopped bell pepper
1/4 cup chopped green onion top
2 cloves garlic, minced
1 teaspoon seafood seasoning (I use Paul Prudhomme's Blackened Redfish Seasoning)
1/3 cup white zinfandel wine
1/8 teaspoon crab boil
1 (26 ounce) can cream of mushroom soup
1 (12 ounce) package of frozen crawfish, thawed,do not drain
bow tie pasta, cooked
1 -2 teaspoon rosemary (I use 2)
2 bay leaves

Steps:

  • Melt butter and saute onion, bell pepper and green onions until tender.
  • Add garlic, crawfish, seafood seasoning, crab boil, and wine.
  • Saute for a few minutes.
  • Add soup and stir until blended.
  • Simmer until smooth and heated through (Note: during cooking a little WATER may be needed to thin slightly.)
  • Toss with bowtie pasta, a little at a time until coated how you like.

1 tablespoon olive oil
3 garlic cloves, minced
1/4 cup scallion, chopped
2 teaspoons cajun seasoning
1 cup cream
1 (14 ounce) can chicken broth
1/4 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
1/2 cup parmesan cheese, shredded
12 shrimp, cooked
8 ounces crawfish tail meat, thawed

Steps:

  • Saute garlic in olive oil for 1 minute.
  • Add Scallions & Cajun seasoning - saute for 1 minute.
  • Add Cream and most of the can of chicken broth - Simmer 5 minutes (Note: the amount of chicken broth determines how thin you like your sauce).

2 tablespoons canola oil
1 onion, chopped
6 cloves garlic, chopped
2 tablespoons minced fresh ginger root
2 pounds large shrimp, peeled and deveined
1 pinch salt
½ teaspoon ground black pepper
1 tablespoon red pepper flakes, or to taste
¾ cup beer
¼ cup ketchup
1 tablespoon white sugar
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon toasted sesame oil
3 green onions, chopped

Steps:

  • Heat canola oil in a large skillet over high heat, and cook and stir onion, garlic, and ginger just until fragrant, about 15 seconds. Add the shrimp, salt, and black pepper, and cook and stir until the shrimp is slightly pink, about 5 minutes. Stir in the beer, ketchup, and sugar, and bring the sauce to a boil.
  • Dissolve the cornstarch in the water, and stir into the boiling sauce. Cook until the sauce returns to a boil and thickens, the shrimp are bright pink on the outside, and the meat is no longer transparent in the center, about 5 minutes. Stir in the sesame oil; remove from heat. Sprinkle with the green onions.

The recipe is very flexible, try substituting chicken or shrimp for the sausage! Everytime we make this for company, they beg for the recipe! Serve with garlic bread and a salad and you have a great meal!

1 lb smoked sausage, sliced (can use pork, beef, or turkey)
1 green pepper, sliced
1 onion, sliced
1 teaspoon blackening seasoning
1 cup alfredo sauce (I like Ragu Light Parmesan Alfredo)
1 teaspoon Tabasco sauce

Steps:

  • Cook fettuccine noodles as directed on package.
  • In a large non stick skillet add the sausage, green pepper and onion. Sprinkle with the blackening seasoning and stir.
  • Cook in skillet on medium-high heat until browned.
  • Add the Alfredo sauce and Tabasco.
  • Reduce heat to medium and simmer until sauce is hot, stirring occasionally.
  • Pour sausage and vegetables over pasta.
  • Toss until coated.

  • Add cream and jalapeno cream cheese and cook until heated through and cream cheese is melted. Add your favorite Cajun seasoning, to taste. Stir in the parmesan to incorporate.
  • Add prepared pasta and heat through. Reduce heat to medium-low and cook until sauce is slightly thickened.
  • Garnish with additional parmesan cheese.
