1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
24 peanut butter sandwich cookies, finely crushed (about 3 cups)
3 pkg. (4 oz. each) BAKER'S White Chocolate, broken into pieces, melted
1/4 cup creamy peanut butter
24 mini peanut butter creme-filled sandwich cookies, cut crosswise in half

Steps:

  • Mix cream cheese and cookie crumbs until blended.
  • Shape into 48 (1-inch) balls; place in single layer in shallow waxed paper-lined pan. Freeze 10 min.
  • Mix chocolate and peanut butter until blended. Dip balls in chocolate mixture; return to prepared pan. Top each ball with 1 mini cookie half.
  • Refrigerate 1 hour or until firm.

1 ⅓ cups graham cracker crumbs
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Mix together peanut butter, butter or margarine, confectioners' sugar, and graham cracker crumbs. Shape into 1 inch balls.
  • Melt chocolate chips and shortening in top of double boiler. Dip balls into chocolate mixture and let dry on waxed paper. (Poke each ball with a toothpick for easier dipping.)

1 ½ cups peanut butter
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon maple flavored extract
2 cups semisweet chocolate chips

Steps:

  • Combine the butter, peanut butter, confectioners' sugar, vanilla and maple flavoring. Cream well and knead well.
  • Melt the chocolate chips over low heat. Roll the dough into 1 inch balls. Dip into melted chocolate chips.
  • Refrigerate overnight (or at least for about 15 minutes) on a cookie sheet lined with wax paper.

Peanut butter and chocolate are a perfect pairing--and these sweet and salty peanut butter balls covered in bittersweet chocolate are sure to satisfy your craving. Make sure the balls are chilled and firm before rolling them in the chocolate. It will ensure that they do not fall apart and helps the chocolate set faster. If the chocolate thickens while you are dipping the balls, just pop it back in the microwave for 20 seconds and stir until smooth.

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.
  • Holding with two forks, dip each peanut butter ball into the melted chocolate to evenly coat. Tap off excess chocolate. Place the balls back on the baking sheet. Chill in the refrigerator until the chocolate is firm and set, about 1 hour. Serve chilled. Refrigerate extra balls in an airtight container.

This is a recipe that my mom used to make at Christmas. She always played ingredients by ear, so the measurements are approximate. These are chocolate coated peanut butter balls and are very sweet and addictive. They also taste very good without the chocolate coating for those that aren't into chocolate. (prep time includes rolling time and dip time and if a smaller batch is made then it can be drastically decreased)

Number Of Ingredients 6

2 tablespoons butter, softened
2 cups peanut butter
2 cups powdered sugar
2 cups Rice Krispies
2 cups semi-sweet chocolate chips
2 tablespoons paraffin wax (added by your best judgment so the amount might be off)

Steps:

  • 1. In a large bowl, mix all ingredients by hand, with the exception of the chocolate chips.
  • 2. roll into bitesize balls Note: if mix is too runny or soft, add more rice Krispies, if its too crumbly, add more peanut butter.
  • 3. Melt chocolate over double boiler or in saucepan over low heat. adding wax till the chocolate looks shiny, (this helps it harden as a coating so might be optional, I have never tried it with it).
  • 4. dip balls in chocolate, roll them around and take them out and place them on wax paper until the chocolate coating hardens.
  • 5. Store in an airtight container in the fridge or in the freezer.

1 1/2 cups sifted powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter or 3 tablespoons margarine, softened
1 lb dipping chocolate or 1 lb confectioner's coating

Steps:

  • Stir together powdered sugar, peanut butter and butter until well mixed.
  • Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
  • Let balls stand for 20 minutes until dry.
  • Melt the dipping chocolate or confectioners' coating.
  • Drop balls one at a time in melted chocolate.
  • Using a fork, remove from the chocolate, letting excess chocolate drip off.
  • Place back on the waxed paper.
  • Let stand until dry.
  • Store tightly covered in a cool dry place.
