1 (14 ounce) can light coconut milk
1 tablespoon vanilla
2/3 cup sweetened flaked coconut, divided
4 large eggs
1/2 teaspoon cream of tartar
1 dash salt
1 cup sugar
4 tablespoons hot water
1/2 teaspoon vanilla
1/4 teaspoon coconut extract

Steps:

  • Preheat oven to 350 degrees.
  • Coat 2 (9 inch) round cake pans with cooking spray, dust with 1 tablespoon flour.
  • Combine 2 1/4 cups flour, baking powder,and salt, stirring with a whisk.
  • Place sugar and butter in a large bowl, beat with a mixer at medium speed until well blended (for about 5 minutes).
  • Add eggs, one at a time, beating well after each addition.
  • Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour mixture.
  • Stir in vanilla.
  • Pour batter into prepared pans.
  • Sharply tap the pans once on countertop to remove air bubbles.
  • Bake at 350 degrees for 30 minutes or until a wooden pick inserted in the centre comes out clean.
  • Cool in pans 10 minutes on wire racks, and remove from pans.
  • Cool completely on wire racks.
  • Place 1 cake layer on a plate, spread with 1 cup fluffy coconut frosting.
  • Sprinkle with 1/3 cup coconut.
  • Top with remaining cake layer, spread remaining frosting over top and sides of cake.
  • Sprinkle with 1/3 cup coconut over top of cake.
  • Store cake loosely covered in refrigerator.

  • Place egg whites, cream of tartar, and salt in a large bowl, beat with a mixer at high speed until stiff peaks form.
  • Combine sugar and water in a saucepan, bring to a boil.
  • Cook, without stirring, until candy thermometer registers 238 degrees.
  • Pour hot sugar syrup in a thin steam over egg whites, beating at high speed.
  • Stir in extracts.

1 cup milk
4 ounces sweetened shredded coconut
1 pound cream cheese, at room temperature
1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
1 pound confectioners' sugar, sifted
6 ounces sweetened shredded coconut

Steps:

  • Preheat the oven to 350 degrees F. Grease 2 (9-inch) round cake pans, then line them parchment paper. Grease them again and dust lightly with flour.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy. Crack the eggs into a small bowl. With the mixer on medium speed, add the eggs 1 at a time, scraping down the bowl once during mixing. Add the vanilla and almond extracts and mix well. The mixture might look curdled; don't be concerned.
  • In a separate bowl, sift together the flour, baking powder, baking soda and salt. With the mixer on low speed, alternately add the dry ingredients and the milk to the batter in 3 parts, beginning and ending with dry ingredients. Mix until just combined. Fold in the 4 ounces of coconut with a rubber spatula.
  • Pour the batter evenly into the 2 pans and smooth the top with a knife. Bake in the center of the oven for 45 to 55 minutes, until the tops are browned and a cake tester comes out clean. Cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.
  • For the frosting, in the bowl of an electric mixer fitted with a paddle attachment, combine the cream cheese, butter, vanilla and almond extract on low speed. Add the confectioners' sugar and mix until just smooth (don't whip!).
  • To assemble, place 1 layer on a flat serving plate, top side down, and spread with frosting. Place the second layer on top, top side up, and frost the top and sides. To decorate the cake, sprinkle the top with coconut and lightly press more coconut onto the sides. Serve at room temperature.

3 egg whites (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)

13 1/2 ounces coconut milk (not lite)
14 ounces sweetened condensed milk (not lite)

Steps:

  • Preheat oven according to box instructions.
  • Mix cake according to box instructions adding 1/2 tsp of coconut extract to cake ingredients.
  • Bake according to pan size and cool on wire rack for 5 minutes.
  • Whisk the Coconut Milk, condensed milk and remaining 1/2 tsp of coconut extract together.
  • While cake is still warm, poke holes with thin bamboo skewer, or long tonged fork, in even rows across top.
  • If making a layer cake poke holes in both layers. (Tips: We thought the thin bamboo skewer made the best holes. First dip skewer into coconut milk mixture to prevent cake from being pulled out of holes, then poke cake.).
  • Using a liquid measuring cup slowly pour 2 cups of coconut mixture into all holes, and across the cake.
  • Cover and refrigerate until completely chilled.
  • Save remaining coconut sauce for pancakes, it makes a delicious syrup.
  • Frost 9" by 13" cake with favorite topping or whipped cream and sprinkle with coconut flakes.
  • Refrigerate.
  • If making layer cake unmold carefully and, using 2 wide spatulas, transfer first layer of cake to dish.
  • Frost.
  • Carefully layer second cake on top.
  • Frost, sprinkle with flakes and refrigerate until cake is to be served.

3/4 cup buttermilk
1/2 cup sweetened cream of coconut (from one 15-ounce can), stirred well (see Cook's Note)
1 3/4 cups granulated sugar
4 large eggs, at room temperature, separated
2 teaspoons pure vanilla extract
1 teaspoon coconut extract
2 sticks unsalted butter, at room temperature
12 ounces cream cheese, at room temperature
3 1/2 cups confectioners' sugar
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1 teaspoon coconut extract
2 cups sweetened shredded coconut

Steps:

  • For the cake: Position racks in the middle and lower third of the oven and preheat to 350 degrees F. Butter three 9-inch round cake pans and line the bottoms with parchment paper; butter the parchment, dust with flour and tap out the excess. Set aside.
  • Whisk the flour, baking powder, baking soda and salt in a medium bowl. Whisk the buttermilk and cream of coconut in a small bowl. Beat the butter and 1 1/4 cups granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 4 minutes. Add the egg yolks, one at a time, beating well after each addition, then beat in the vanilla and coconut extracts. Reduce the mixer speed to low; beat in the flour mixture in three batches, alternating with the buttermilk mixture, until combined.
  • Beat the egg whites and the remaining 1/2 cup granulated sugar in a large bowl with clean beaters on medium-high speed until stiff glossy peaks form, 4 to 5 minutes. Using a rubber spatula, fold the egg whites into the batter in three batches until just combined (do not overmix). Divide the batter among the prepared pans and bake, switching the pans halfway through, until the cakes are lightly browned and the centers spring back when lightly pressed, 30 to 35 minutes. Transfer to racks and let cool 20 minutes in the pans, then run a small knife around the edges of each cake and carefully invert onto the racks; remove the parchment and let cool completely.
  • For the frosting: Beat the butter and cream cheese in a large bowl with a mixer on medium-high speed until smooth, about 2 minutes. Reduce the mixer speed to low and beat in about half of the confectioners' sugar until combined. Add the remaining confectioners' sugar, salt and vanilla and coconut extracts and beat until combined. Increase the mixer speed to medium high and continue beating, scraping down the sides of the bowl as needed, until light and fluffy, about 3 minutes.
  • Place one cake layer on a cake stand or platter and top with a heaping 2/3 cup frosting. Add another cake layer, more frosting and the last cake layer. Cover the top and sides of the cake with the remaining frosting. Sprinkle the coconut all over the top and sides of the cake, gently pressing to adhere.

200g unsalted butter , softened
100g golden caster sugar
100g light brown soft sugar
3 large eggs
60g desiccated coconut
200g self-raising flour
100g Greek yogurt
½ tsp coconut flavouring (optional, see tip below)
200g milk or dark chocolate , chopped into small pieces
200ml double cream
40g white chocolate , melted
handful of coconut flakes, toasted, or desiccated coconut or sprinkles

Steps:

  • Line a 22 x 28cm rectangular cake tin with baking parchment. Heat the oven to 180C/160C fan/gas 4.
  • First, prepare the topping. Put the milk or dark chocolate pieces in a large heatproof bowl. Heat the double cream in a medium pan until just steaming, then slowly pour over the chocolate, whisking until the chocolate has melted and the mix is smooth. Leave to cool slightly, then chill for 1 hr 30 mins until soft, but still spoonable.
  • Beat the butter, sugars and ¼ tsp salt together in a stand mixer or using an electric whisk for 5 mins, or until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the desiccated coconut, flour, yogurt and coconut flavouring, if using, and briefly beat until just combined. Spoon the mix into the tin, smooth the surface using the back of a spoon, then bake for 30 mins until golden and firm to the touch. Leave in the tin to cool completely.
  • When fully cool, spread over the chocolate topping, then drizzle with the white chocolate and scatter over the toasted coconut flakes. Chill for around 15 mins until the topping is set. Cut into 12 squares, then serve.
