CLASSIC CHERRY DELIGHT

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

2 tablespoons confectioners' sugar
2 tablespoons butter, melted
FILLING:
4 ounces cream cheese, softened
3/4 cup confectioners' sugar
1/2 cup whipped topping
1 cup cherry pie filling

Steps:

  • In a bowl, combine the graham cracker crumbs, confectioners' sugar and butter. Press onto the bottom of an 8x4-in. loaf pan coated with cooking spray. , In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in whipped topping. Spread over crust. Spoon pie filling over top. Refrigerate for 1 hour or until chilled.

This recipe has been passed among my family members for so long that I cannot recall who first introducted it to us. It's one of the dessert cakes that I like to take to potluck gatherings and to school events because it's quick to prepare and travels well in a 9x13 baking pan. You can also make it in a bundt pan. And it make's a great Valentine's Day dessert, too.

1 (18 1/4 ounce) package cherry chip cake mix
2 eggs
1/2 cup butter, softened
1/4 cup chocolate chips (optional)
21 ounces cherry pie filling
1 cup chopped walnuts
1 cup powdered sugar
1 tablespoon water

Steps:

  • PREP WORK - Preheat oven to 350º. Spray the bottom and sides of a 9x13-inch baking pan or a bundt pan.
  • In a medium size bowl, beat the cake mix, eggs, and butter until smooth. If using, add the chocolate chips and mix just until the chips are well incorporated throughout the batter. Pour the batter into prepared baking pan. Spread the pie filling on top of the cake batter (do not stir or attempt to mix together the cake batter and pie filling; they will blend naturally during the baking process). Sprinkle the top with the chopped nuts.
  • Bake for 50 to 60 minutes or until a toothpick inserted in center of cake comes out clean. Cool for 15 minutes.
  • In a small bowl, mix the sugar and water until well blended. With a spoon, drizzle the sugar mixture over the cooled cake.

1 1/2 cups all-purpose flour
3/4 cup good quality cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 stick butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup dry red wine, such as burgundy
10 ounces dark chocolate, broken into chunks
1 cup dried tart cherries

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, cocoa powder, salt and baking soda in a bowl. In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries. On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.

2/3 cup quick oats
1/2 cup Bisquick baking mix

1 teaspoon cinnamon

Steps:

  • Preheat oven to 375F degrees.
  • Mix pie filling& cherries in an ungreased 8x8 baking pan.
  • Combine oats, baking mix, brown sugar, nuts, butter& cinnamon until crumbly; sprinkle over fruit.
  • Bake uncovered until fruit is hot& bubbly, and topping is golden brown, approximately 45 minutes.

1kg cherries , stones removed
400ml double cream
100g icing sugar
4 eggs , separated
wafers , to serve (optional)

Steps:

  • Set aside a handful (about 50g) of the pitted cherries. Place the remainder in a large pan set over a medium heat with the cream and 50g icing sugar. Bring up to the boil, then gently simmer for 5 mins until the cherries start to soften. Carefully whizz in a blender, then pass through a sieve.
  • Pour a little of the hot cherry cream over the egg yolks, whisk well, then pour back into the pan. Cook for about 5 mins more or until the mixture has thickened a little and will coat the back of a wooden spoon. Pour through a sieve into a bowl, cover the surface with cling film, then leave to cool completely.
  • Whisk the egg whites until stiff peaks form, then whisk in the remaining 50g sugar, 1 tbsp at a time. Keep whisking until the mixture is stiff and resembles shaving foam. Stir a third of the mixture into the cooled cream, mix until it is well incorporated, then gently fold through the remaining mixture in 2 goes.
  • Line a 900g loaf tin with cling film. Pour the mixture into the tin, then cover with cling film and place in the freezer for about 3 hrs until just starting to freeze. Stir the whole cherries into the semi-frozen mixture, then return to the freezer for at least 8 hrs or preferably overnight. Serve cut into slices with some berries, or sandwiched between wafers.
