These Air Fryer Donuts From Scratch are worth the effort to get those donut shop style yeast doughnuts right at home. Light, airy donuts air fried then dipped in chocolate glaze with sprinkles!

- Combine warm water and yeast in measuring cup. Let sit in warm area for 5 mintes to proof yeast. Combine flour, sugar, yeast/water mixture, eggs and salt in large mixing bowl. If using a stand mixer use the dough hook attachment to mix on a medium speed for 8-10 minutes or until the dough is pulling away from the sides of the bowl. You can also do this by hand using a wooden spoon, dough whisk or similar. *If dough is too wet and is dripping, not binding, add more flour a little at a time while mixing until the dough comes together. Leaving the mixer on a medium speed, add the softened butter a little at a time making sure to fully incorporate the butter into the dough each time. When all the butter has been added, leave the mixer running on a low-medium speed for a further 5 minutes or until the dough is very smooth and elastic. If you're not using a mixer, knead the dough by hand for 8-10 minutes. Cover the mixing bowl with plastic wrap and leave the dough to rise and double in size. This will take approximately 1 hour depending how warm your kitchen is. It may take up to 3 hours if your kitchen is very cold. When the dough has risen, punch the air out of it and put it in the fridge for 24 hours. *See notes. Line three baking trays with floured parchment paper. Roll the dough out until it is about 1/2 inch thick then use a 3.5 inch donut cutter (or something round, like a glass) to cut 10-15 donuts out of the dough. Use a donut hole cutter or an upturned piping nozzle to cut the donut holes from the middle of each donut. Anything small and round will work just as well. Transfer 5 donut rings and 5 donut holes to each baking tray, leaving space in-between them. Loosely cover with plastic wrap and leave to rise for an hour. Prepare topping/glaze before air frying donuts. To make the chocolate glaze, put the powdered sugar, cocoa powder and milk into a small bowl and whisk together until smooth. To make the Cinnamon coating, mix the sugar and cinnamon in a small bowl. In a separate bowl, melt the butter - you will use this to brush the donuts with later to give the cinnamon sugar something to stick to. To make the vanilla glaze, put the butter and sugar into a small saucepan and melt together. When it has melted add vanilla then hot water a tablespoon at a time until the glaze reaches a runny consistency. (You can also just microwave the butter to melt then whisk in powdered sugar, vanilla and water) Lightly grease the tray of the air fryer with oil. When the donuts have puffed up, carefully transfer them into the air fryer basket, you should be able to fit 3 or 4 depending how big your air fryer is. Air fry at 350ºF for 2-3 minutes then flip them over and air fry at 350ºF for 2 more minutes. At this point they should be done or may need 1-2 more minutes depending on your air fryer. The donuts should be golden brown in color. Repeat with the remaining donuts and holes. While the donuts are still hot mix the chocolate glaze ingredients: Dip the donuts into the chocolate glaze. Add sprinkles while glaze is still wet.

AIR FRYER DOUGHNUTS
Who doesn't love a doughnut? With the help of an air fryer, you can enjoy homemade yeast doughnuts without any of the hassle of cooking with hot oil. But are they as good? Well, after much testing, we cracked the code for creating a tender doughnut that is not deep fried - it's all about using a combination of all-purpose and cake flour. This recipe results in a tender doughnut that is lighter than air. Dusted in cinnamon sugar, these become simply irresistible!

- Sprinkle the yeast over the warm milk in a liquid measuring cup. Let stand until foamy on top, about 10 minutes.
- Beat the egg and oil using a stand mixer fitted with the paddle attachment on medium speed until combined. Add the vanilla, 2 tablespoons of the melted butter, and the yeast mixture. Mix on low speed until combined.
- Whisk the all-purpose flour, cake flour, 1/4 cup of the sugar, and the salt in a medium bowl. Add to the stand mixer in two additions, mixing on low speed after each addition until combined. Continue beating on medium speed, scraping down the sides of the bowl as needed, until the dough is no longer sticky to the touch, about 1 minute.
- Turn the dough out onto a lightly floured surface. Knead into a smooth ball. Brush a large bowl with melted butter. Add the dough and cover with a clean kitchen cloth. Let rise until doubled in size, about 2 hours.
- Turn the dough out onto a lightly floured surface. Roll out to 1/2 inch thick. Cut out 8 doughnuts with a doughnut cutter (or use a wide-mouth Mason jar to create the outer edge and the wide end of a metal pastry tip or a shot glass for the inner edge). Reserve the smaller rounds for making doughnut holes. Cover with the clean cloth and let rise for 30 minutes more.
- Place half of the doughnuts in a 6-quart air fryer and cook at 350 degrees F until golden brown all over, 5 to 6 minutes. Remove to a cooling rack and repeat with the remaining doughnuts and doughnut holes.
- Brush the doughnuts on all sides with the remaining 2 tablespoons melted butter. Combine the remaining 1/4 cup sugar with the cinnamon in a shallow bowl. Place the doughnuts into the cinnamon sugar and sprinkle to coat on all sides. Serve warm or at room temperature.

- Combine the milk, melted butter, yeast, 1 tsp of the sugar and the vanilla extract in the bowl of a stand mixer. Leave for 8-10 mins for the yeast to activate.
- In a separate bowl, combine the remaining sugar, flour, ½ tsp salt and the cinnamon, if using. Mix the beaten egg into the milk mixture, then fold in the dry ingredients. Knead with a dough hook on a medium speed for 5-8 mins until the dough is smooth and elastic. You can also knead by hand for 10-12 mins, until smooth. It's a very sticky dough, so be patient with it.
- Transfer to a lightly oiled bowl, cover with a clean tea towel and leave in a warm place for 1 hr 30 mins until the dough has doubled in size. Tip the dough out onto a lightly floured surface and roll out to around 1.5cm thick. Cut out your doughnuts using a doughnut cutter or two cutters (1 x 7.5cm and 1 x 2.5cm for the middle). Put the doughnuts on a lined baking sheet, along with the doughnut centres, if you like, and cover with a clean tea towel. Leave to rise for 40 mins or overnight in the fridge (the doughnuts will hold their shape better if proved in the fridge).
- When ready to cook, place 2-3 doughnuts (and their centres, if keeping) in the air-fryer basket and cook at 180C for 5-6 mins, following manufacturer's instructions, until golden. (Bear in mind that some air fryers generate more intense heat, so keep checking to make sure the doughnuts don't burn.) Remove from the basket and leave to cool on a wire rack while you cook the remaining doughnuts. You can place a sheet of baking parchment at the bottom of your basket if you're worried about the doughnuts sticking and to prevent indents from the basket forming on the doughnuts.
- While the final batch is cooking, sift the icing sugar into a bowl and stir in the milk and vanilla extract. When the doughnuts have cooled, dip the top of each one in the glaze. Leave on the wire rack for the glaze to set. Best eaten on the day but will keep for up to 24 hours in an airtight container.

- Preheat air fryer to 375°. Separate biscuits. Cut out centers using a 1-inch cutter; save centers. In batches, place doughnuts in a single layer in greased air fryer. Cook until golden brown and puffed, turning once, about 5 minutes. In batches, cook doughnut holes until golden brown, 3-4 minutes., Meanwhile, in a shallow dish, combine sugar and cinnamon. In a separate bowl, mix melted butter and vanilla. Brush doughnuts and doughnut holes with butter; toss in sugar mixture. Serve warm.
