50-Minute Donuts Recipe by Tasty image

Here's what you need: bacon, cake flour, baking soda, baking powder, kosher salt, whole milk, vanilla extract, granulated sugar, unsalted butter, vegetable oil, large egg, nonstick cooking spray, turbinado sugar, powdered sugar, whole milk, maple syrup, kosher salt

Provided by Matt Ciampa

Categories     Bakery Goods

Yield 12 donuts

Number Of Ingredients 17

6 slices bacon
1 cup cake flour
⅛ teaspoon baking soda
¾ teaspoon baking powder
¼ teaspoon kosher salt
½ cup whole milk, plus 2 tablespoons
1 teaspoon vanilla extract
¾ cup granulated sugar
2 tablespoons unsalted butter, softened
2 tablespoons vegetable oil
1 large egg
nonstick cooking spray, for greasing
2 tablespoons turbinado sugar, for sprinkling
2 cups powdered sugar
3 tablespoons whole milk
4 tablespoons maple syrup
kosher salt

Steps:

  • Preheat the oven to 350°F (180°C).
  • Arrange the bacon in a single layer on a baking sheet. Bake for 12-15 minutes, until crisp. Remove from the oven and let cool.
  • Make the donuts: In a medium bowl, sift together cake flour, baking soda, baking powder, and salt.
  • In a liquid measuring cup, whisk together the milk and vanilla.
  • In a large bowl, cream together the granulated sugar, butter, and vegetable oil with an electric hand mixer until pale and fluffy. Scrape down the sides of the bowl with a rubber spatula. Beat in the eggs until well combined, then scrape down the sides of the bowl again.
  • Add about ⅓ of the dry ingredients to the butter mixture and stir until just incorporated. Add ½ of the milk mixture and stir until combined. Continue alternating between the dry ingredients and milk mixture until the batter comes together. Do not overmix.
  • Let the batter rest for 15 minutes.
  • Once the bacon has cooled, chop into small pieces.
  • Reduce the oven temperature to 325°F (160°C). Liberally spray 2 6-cavity donut pans with nonstick spray.
  • Sprinkle ¾ of the chopped bacon into the donut molds.
  • Pour the batter into the molds, filling each about ¾ of the way full to leave some room for them to rise.
  • Bake the donutes for 15-20 minutes, until golden brown and cooked through. Immediately turn out of the molds onto a wire rack and let cool completely.
  • While donuts are baking, make the glaze: In a small bowl, whisk together the powdered sugar, milk, maple syrup, and salt until smooth and creamy. Add more milk as needed.
  • Once the donuts have cooled, dip the tops in the glaze, then return to the rack to let any excess glaze drip off. While the glaze is still wet, sprinkle the tops of the donuts with the turbinado sugar and reserved chopped bacon.
  • Enjoy!

CRISPY AND CREAMY DOUGHNUTS

Crispy and Creamy Doughnuts image

I have tried so many versions of glazed doughnuts, and this one finally came out perfect! Just like the ones at my favorite doughnut shop.

Provided by Kelly

Categories     Bread     Yeast Bread Recipes

Time 2h40m

Yield 18

Number Of Ingredients 13

2 (.25 ounce) envelopes active dry yeast
¼ cup warm water (105 to 115 degrees)
1 ½ cups lukewarm milk
½ cup white sugar
1 teaspoon salt
2 eggs
⅓ cup shortening
5 cups all-purpose flour
1 quart vegetable oil for frying
⅓ cup butter
2 cups confectioners' sugar
1 ½ teaspoons vanilla
4 tablespoons hot water or as needed

Steps:

  • Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
  • In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of the flour. Mix for a few minutes at low speed, or stirring with a wooden spoon. Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double. Dough is ready if you touch it, and the indention remains.
  • Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
  • Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
  • Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up.

CHOCOLATE-STUFFED CHURRO DONUTS RECIPE BY TASTY

Chocolate-Stuffed Churro Donuts Recipe by Tasty image

Here's what you need: butter, brown sugar, salt, water, flour, vanilla extract, eggs, chocolate chips, oil, cinnamon sugar, piping bag, nonstick baking sheet

Provided by Alix Traeger

Categories     Desserts

Yield 6 servings

Number Of Ingredients 12

4 tablespoons butter, cubed
2 tablespoons brown sugar
½ teaspoon salt
1 cup water
1 cup flour
1 teaspoon vanilla extract
3 eggs
½ cup chocolate chips
oil, for frying
cinnamon sugar
piping bag, with a large star tip
nonstick baking sheet

Steps:

  • In a saucepan over medium-high heat, add butter, brown sugar, salt, and water, and bring to a boil.
  • As soon as the butter has fully melted and the mixture begins to boil, reduce the heat to medium-low and add in flour.
  • Using a wooden spoon, stir until the dough comes together to form a ball and there are no lumps.
  • Remove from heat and let cool for 5 minutes before proceeding to the next step (to prevent accidentally cooking the eggs).
  • Mix in the vanilla extract and add in the eggs, one at a time, being sure to fully incorporate each egg before adding the next.
  • Once all the eggs are incorporated, transfer it to a piping bag with a large star tip.
  • On a nonstick baking sheet, pipe the dough in circles leaving a hole in the center.
  • Place the chocolate chips in a ring and top with remaining dough, making sure there are no gaps in between each layer.
  • Transfer the tray to the freezer and freeze until solid, about 3 hours or overnight.
  • Heat oil in a deep pot to 350˚F (175˚C).
  • Remove the baking tray from the freezer and use a butter knife to release the churro donuts. Return any extras to the freezer while you wait to fry.
  • Fry the donuts in batches to avoid overcrowding the pan, until brown and the dough is cooked through.
  • Drain on a paper towel before rolling in cinnamon sugar.
  • Enjoy!

DOUGHNUTS

Doughnuts image

Homemade doughnuts are a bit of a project, but they're less work than you might think, and the result is a truly great, hot, crisp doughnut. Once you've mastered this basic recipe for a fluffy, yeasted doughnut, you can do pretty much anything you like in terms of glazes, toppings and fillings.

Provided by Mark Bittman

Categories     breakfast, snack, dessert

Time 3h

Yield About 1 dozen.

Number Of Ingredients 8

1 1/4 cups milk
2 1/4 teaspoons (one package) active dry yeast
2 eggs
8 tablespoons (1 stick) butter, melted and cooled
1/4 cup granulated sugar
1 teaspoon salt
4 1/4 cups all-purpose flour, plus more for rolling out the dough
2 quarts neutral oil, for frying, plus more for the bowl.

Steps:

  • Heat the milk until it is warm but not hot, about 90 degrees. In a large bowl, combine it with the yeast. Stir lightly, and let sit until the mixture is foamy, about 5 minutes.
  • Using an electric mixer or a stand mixer fitted with a dough hook, beat the eggs, butter, sugar and salt into the yeast mixture. Add half of the flour (2 cups plus 2 tablespoons), and mix until combined, then mix in the rest of the flour until the dough pulls away from the sides of the bowl. Add more flour, about 2 tablespoons at a time, if the dough is too wet. If you're using an electric mixer, the dough will probably become too thick to beat; when it does, transfer it to a floured surface, and gently knead it until smooth. Grease a large bowl with a little oil. Transfer the dough to the bowl, and cover. Let rise at room temperature until it doubles in size, about 1 hour.
  • Turn the dough out onto a well-floured surface, and roll it to 1/2-inch thickness. Cut out the doughnuts with a doughnut cutter, concentric cookie cutters or a drinking glass and a shot glass (the larger one should be about 3 inches in diameter), flouring the cutters as you go. Reserve the doughnut holes. If you're making filled doughnuts, don't cut out the middle. Knead any scraps together, being careful not to overwork, and let rest for a few minutes before repeating the process.
  • Put the doughnuts on two floured baking sheets so that there is plenty of room between each one. Cover with a kitchen towel, and let rise in a warm place until they are slightly puffed up and delicate, about 45 minutes. If your kitchen isn't warm, heat the oven to 200 at the beginning of this step, then turn off the heat, put the baking sheets in the oven and leave the door ajar.
  • About 15 minutes before the doughnuts are done rising, put the oil in a heavy-bottomed pot or Dutch oven over medium heat, and heat it to 375. Meanwhile, line cooling racks, baking sheets or plates with paper towels.
  • Carefully add the doughnuts to the oil, a few at a time. If they're too delicate to pick up with your fingers (they may be this way only if you rose them in the oven), use a metal spatula to pick them up and slide them into the oil. It's O.K. if they deflate a bit; they'll puff back up as they fry. When the bottoms are deep golden, after 45 seconds to a minute, use a slotted spoon to flip; cook until they're deep golden all over. Doughnut holes cook faster. Transfer the doughnuts to the prepared plates or racks, and repeat with the rest of the dough, adjusting the heat as needed to keep the oil at 375. Glaze or fill as follows, and serve as soon as possible.
