MOTHER GOOSE POPCORN
It doesn't sound like much but I prefer this as an alternative to caramel corn, it is that good. I make it at Christmas time, pink and green and mix them together. Simple to make, sweet and crunchy. Colorful to boot! It goes fast. As far as I know this is an old recipe from long ago.

Steps:
- Mix milk and sugar in a sauce pan and on medium heat bring to a boil.
- Careful not to let it burn and do not scrape the sides of the pan or the sugar will crystalize.
- Add vanilla extract and your choice of food coloring (it is usually pink or light green) and mix well.
- Place the popcorn in a large bowl then pour the hot liquid over it and coat as evenly as you can.
- Spread on a cookie sheet to dry.
DONNA'S MOTHER GOOSE POPCORN
We usually make this with red food coloring to make a pinkish popcorn, but you can use any color that suits you or the occasion.

PINK POPCORN
This Pink Popcorn is almost as fun to make as it is to eat! It is super versatile and you can make it any color or flavor you like!

- Pour over popped corn and stir until well coated and it goes sugary
- Spread the popcorn out in a single layer on some parchment paper or a baking sheet and let it dry. The popcorn is then ready to enjoy.

TUB-TIM GROB
Traditionally this is made with red food coloring, but I ran out and used blue instead. This is very tasty, and sweet. I do tend to like to add a tiny bit of vanilla.

Steps:
- Take water chestnuts, about 10-15 pieces.
- Slice each chestnut into half, making two round disks.
- Make two cuts into the two disks to make 6 equally sized pieces.
- Set chestnut pieces into a bowl and drop the red food coloring and a teaspoon of water and mix well.
- Drain the chestnuts of any juice.
- Put tapioca flour in a big bowl.
- Drop the chestnuts in and shake the bowl around to coat the chestnuts with flour.
- Scoop the chestnuts into a strainer to get rid of the excess flour.
- Put it into another bowl.Spray some water on the chestnuts with a misting spritzer. Put them back in the flour bowl. Coat them with flour again.
- Boil a pot of water. When boiling, dump the coated water chestnuts inches The cooked "rubies" will float, scoop them up in a strainer and dump them in ice water.
- In a small cup add sugar and water to make syrup. Microwave the cup for 3-4 minutes depending on your microwave.
- Divide the rubies into equal amounts and set in two bowls.
- Pour out water from the bowls.
- Add half of the coconut milk and half of the syrup to make one serving.
- Serve with crushed ice in the summer time.

MOMMA SIMO'S POPCORN
During a recent trip, I stayed in Fes with the family of a local friend. His mother spoke no English and I spoke no Arabic but our common language was cooking and we spent many hours in the kitchen together. One afternoon, she made this for me and it was just amazing. While cumin is as commonly used in Moroccan homes as salt and pepper in the US, the stellar ingredient in this simple recipe is the use of a good quality olive oil. The amounts stated here are approximates as Momma Simo never used a measuring device and eyed everything.

- Heat the olive oil in a large soup pot over medium high heat. Add popcorn kernels and cover pot with lid.
- Shake pot constantly while popcorn pops. You should hear the sounds of the corn popping. When the pot is silent, it is done.
- Toss the popcorn with salt and cumin and serve.

- Place popcorn in a large bowl and set aside. (Make sure that the bowl is large enough to mix hot syrup over popcorn without having the popcorn spill over).
- Cook sugar until it reaches the softball stage (235° F). Add food coloring until desired color is reached. (I sometimes don't use food coloring, it's up to you). Refer to NOTEs # 1 and 2 below.
