- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
- In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.

- Preparation
- Bringing water to boil, Add a pinch of salt and olive oil.
- Boil macaroni until Al Dente, (follow instructional guide on back of box for boiling instructions).
- Strain macaroni, Rinse with cold water to stop cooking process.
- Set macaroni inside.
- In a deepen skillet add butter and flour making a roux. Stirring continuously incorporate both ingredients really well, assuring to eliminate any lumps.
- Adding half-and-half continue stirring, add cheeses one at a time and stir until everything is incorporated and cheeses are melted.
- QUICK METHOD (FOLLOW THIS METHOD FOR BEST RESULTS)
- Add melted cheese sauce directly to macaroni and combine. Stirring until cheese and macaroni becomes incorporated. Add cheesy mac to pan in two batches and top each layer with shredded cheese.
- Place in oven to bake for about 25 to 30 minutes at 350°F, Or until cheese melts. (For Smaller Serving Size Less Baking Time Is Required, Bake Until Cheese Melts)
- Remove from oven. And allow too cool for about five minutes before serving.

SUPER EASY MACARONI AND CHEESE RECIPE
Steps:
- Bring a pot of salted water to a boil over medium high heat. Add the pasta to the boiling water and cook until al dente, approximately 8 minutes.
- While the pasta is cooking, melt the butter in a medium saucepan over medium high heat. Sprinkle the flour over the butter and whisk to combine. Continue cooking for 2-3 minutes until golden whisking constantly.
- While whisking, slowly add the milk to the butter/flour mixture. Turn the heat to low. Bring the milk mixture to a simmer and continue cooking, whisking constantly, until slightly thickened, approximately 4-5 minutes. DO NOT BOIL.
- Stir the cheese into the milk mixture and remove from the heat. Continue stirring until the cheese is thoroughly combined. Season with salt and pepper, to taste.
- Drain the pasta, do not rinse. Fold the macaroni into the cheese sauce and stir to combine.Check for seasoning and add salt/pepper, if needed.
- Serve immediately.

- Prepare the pasta: In a small pan, warm the milk, onion, garlic and bay leaf until almost boiling. Remove from the heat, leave covered to infuse for 10 mins, then strain. Cook the macaroni according to pack instructions until just soft, but still with a little bite (this is called al dente in Italian). This will take about 10 mins. Drain in a colander, then run under the tap and stir to stop the pasta sticking together.
- Make a roux: (A roux is simply flour and fat, cooked together, then used to thicken sauces.) Heat oven to 190C/ fan 170C/gas 5 and butter a 25 x 18cm ovenproof dish. Melt the butter in the medium pan. When foaming, add the flour, then cook, stirring constantly, for 1 min on a low heat.
- Finish the sauce: Slowly stir the warm infused milk into the roux until smooth. Simmer for 3-4 mins, stirring often, until the sauce has thickened and has a coating consistency (run your finger through the sauce on a spoon - it should leave a trail). Remove the pan from the heat, then add the cheddar and mustard powder. Season, then stir until the cheese has melted.
- Assemble and bake: Mix the cheesesauce through the macaroni to coat it well, then tip into the prepared dish. Sprinkle the Parmesan and breadcrumbs over the top, then bake for 15-20 mins until golden brown and bubbling. Serve piping hot on its own or with a green salad.

DONNA'S EASY BAKED MACARONI & CHEESE
My husband's baked macaroni & cheese is absolutely delicious and is a requirement at ALL family gatherings. The simplicity of the dish is what makes it so easy and tasty. There is no flour or roux, or eggs. Sometimes less is more!

- 1. The American favorite pasta is small elbow noodles or rotini. The Italian favorite is long macaroni or Bucatini.
- 2. Boil the pasta of your choice in very well salted water until al dente. Don't cook the pasta completely because it will finish cooking in the oven. Pour into a colander and quickly rinse with cold water to stop the cooking - allow to drain.
- 3. In the same pot that you boiled the pasta, add butter and melt it over low heat. Turn Off Heat! Add the milk and the drained pasta - stir well. Taste at this point to see if it needs any additional salt. Remember that cheese is salty so don't add too much if it's needed.
- 4. Add about 1/3 of the shredded cheese to the pasta & milk and stir. It doesn't have to completely melt, just get it mixed well.
- 5. In a large casserole dish layer half of the noodles, then put a layer of cheese.
- 6. Add the rest of the noodles and all of the remaining liquid, then layer the top with the remaining cheese.
- 7. Bake at 350° F for 30-40 minutes until hot and bubbly and cheese is golden brown. Remove from oven and allow to sit about 5-10 minutes. Serve hot. Enjoy!
- 8. *NOTES: I prefer to use a mixture of mild and sharp cheddar. Use Colby or whatever flavor cheese that you like to make it your own. If you like pepper, granulated garlic or onion then add it - I don't think it needs it but make it to your taste.

- Preheat oven to 350 degrees F (180 degrees C). Butter an 8 by 11 or 9 by 13-inch baking dish and set aside.
- Fill a large stockpot or dutch oven halfway with chicken broth (or water if you don't have broth), and bring to a boil. Add in elbow macaroni and cook until just under al dente, according to package directions. Do not fully cook or overcook the macaroni pasta, it'll finish cooking through completely in the oven. Once just under al dente, drain the pasta.
- While the pasta boils, use a wooden spoon to mix the half and half, heavy cream, half of the cheddar cheese, half of the Colby jack cheese, all of the mozzarella cheese, all of the American cheese, and all of the cream cheese in a large mixing bowl.
- Add smoked paprika, garlic powder, onion powder, mustard powder, and some kosher salt and pepper, stirring well and tasting the mixture to ensure there is a good flavor. Do not add too much salt, since cheese is pretty salty and will add its saltiness as it bakes. Once satisfied with the seasoning, stir in the cooked macaroni and eggs until well incorporated with the cheese.
- Pour the macaroni mixture into the baking dish and spread evenly.
- Top the macaroni and cheese generously with the rest of the cheddar cheese and colby jack cheese. Sprinkle the top with a little more smoked paprika, if desired.
- Bake the mac and cheese for 35 minutes or until the cheese crust is bubbly and nicely browned. Do not over-bake or the macaroni pasta will become mushy and the cheese mixture will become dry.
- Let the baked macaroni and cheese cool for about 10 minutes or until just cool enough to serve. Serve hot so the cheese is nice and creamy.
- Keep in an airtight container in the fridge for up to 4 days.
