Dom Deluise's Outrageous Yum-Yum Cake image

Number Of Ingredients 16

2 cups flour, sifted
1 tablespoon baking powder
1/2 teaspoon baking soda
2 cups sugar
1 large egg
1/2 cup unsalted butter, at room temperature
1 cup sour cream
1/2 cup water
2 teaspoons vanilla extract
1/2 cup cocoa powder, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons cocoa powder
12 ounces semi sweet chocolate chips
Chocolate Butter Icing
6 ounces semi sweet chocolate chips
3 tablespoons strong coffee
3/4 cup unsalted butter, soften

Steps:

  • Preheat oven to 350 degrees F. Sift flour, baking powder and baking soda on waxed paper. Butter and flour two 9" cake pans. In large mixing bowl, beat sugar and egg until sugar is dissolved. Add butter and mix into egg mixture. Add sour cream, water and vanilla; beat again. Add flour mixture and cocoa; beat slowly until flour is absorbed. Do not over-beat. Fold in chocolate pieces. Divide mixture in prepared pans. Bake 35-40 minutes or until tested done. Cool cakes on wire racks for 10 minutes. Remove from pans and cool completely. Frost. CHOCOLATE BUTTER ICING: In a small saucepan, melt chocolate chips in the coffee over very low heat. Remove pan from heat. Beat in butter, 1 Tb. at a time, until smooth. Set pan in bowl of ice and beat until icing is spreadable and holds its shape.

That's Dom DeLuise's Mamma. The recipe originated in Spinosa, Italy. If you want a carnivorous variation, you can some spareribs and/or Italian sausages with the garlic, and brown well before adding anything else. To make this completely vegetarian, use vegetable stock in place of chicken stock. You can add water or a little more broth if the soup is too thick. Serve with hot Italian bread.

2 garlic cloves, minced
1 onion, chopped
2 carrots, sliced
1 potato, peeled and diced (optional)
2 cups chicken broth
2 heads escarole, washed and coarsely chopped
parmesan cheese, grated

Steps:

  • Heat olive oil in a large saucepan and brown the garlic.
  • Add onion, carrots, and potato (if using). Cook 1 minute.
  • Add broth.
  • Add escarole, cover, and bring to a boil.
  • Reduce heat to low and simmer for 1 hour.
  • Spoon into bowls and sprinkle with grated cheese.

5 garlic cloves, minced
1/3 cup olive oil
3 onions, sliced into thin crescents
1/2 cup fresh parsley, finely chopped
1 lb spaghetti or 1 lb linguine
water for cooking pasta
3 large eggs
4 tablespoons parmesan cheese, grated
1/2 cup fresh basil, torn into small pieces
fresh ground pepper
parsley
basil
grated parmesan cheese

Steps:

  • Brown garlic in olive oil.
  • Add onions and gently saute until crunchy and brown.
  • When onions are almost done, add parsley and saute until limp.
  • Cook pasta in boiling water until al dente.
  • While pasta is cooking, beat eggs, cheese, and basil together.
  • Drain pasta and place in serving bowl.
  • Fold egg mixture into hot pasta.
  • Add onion mixture and mix well.
  • Sprinkle with pepper and top with additional parsley, basil and Parmesan.

1 tablespoon margarine (may sub butter)
1 large onion, chopped
1 large granny smith apple, chopped

Steps:

  • Cook rice as per the directions on the package (usually bringing water to a boil, adding rice, returning to a boil, reducing to a simmer, cover and cook for 45 minutes).
  • In a nonstick pan, saute onion in margarine until transparent (about 3-5 minutes).
  • Add chopped apple and brown together for 5 minutes.
  • Add the cooked rice and heat through. . .tossing gently. Serve.
