An easy strawberry cake mix recipe that tastes almost as good as scratch! The perfect recipe for when you want a delicious strawberry cake but you're short on time. Frosted with a yummy lemon buttercream!

1 box strawberry cake mix (or white if you can't find strawberry)
1 cup AP flour
1 cup granulated sugar
1/4 tsp salt
1 cup sour cream (room temp)
1/2 cup melted butter
1/2 cup milk
3/4 cup strawberry puree
3 eggs
1 tsp strawberry emulsion (or extract)
1/2 tsp lemon extract
3/4 cup pasteurized egg whites
5 cups powdered sugar
3 cups unsalted butter (softened to room temperature)
1/2 tsp salt
2 tsp lemon extract
1/4 cup lemon curd (optional)
1 Tbsp lemon zest

Steps:

The instructions for this cake are super easy. Basically, put it all into a bowl and mix it for 2 minutes! Voila! Cake batter is ready.
Pour batter into three 8" cake pans prepared with cake goop or your preferred pan release. Bake at 350ºF for 25-35 minutes or until a toothpick inserted comes out clean
Place pasteurized egg whites and powdered sugar in the bowl of a stand mixer with the whisk attachment. Mix on low until combined and then bump up to high and whip for 3 minutes. It will look like royal icing, not meringue.
Add in your salt then your butter in small pieces while mixing on low until combined, then bump up to high. Whip until light, white and fluffy and it doesn't taste like butter anymore. This can take 10-15 minutes.
Switch to the paddle attachment and mix on low for 15 minutes to smooth buttercream and reduce bubbles (optional)
Mix in your lemon curd, lemon zest and extract until combined.
Frost and decorate your cake as desired

This easy Strawberry Cake all starts with a simple cake mix! So flavorful!

Number Of Ingredients 7

Ingredients

1 box white cake mix ( 15.25 oz) (432g)
1 small box ( 3 ounce) (85g) strawberry Jello
3 Tablespoons all purpose flour
4 eggs
3/4 cup vegetable oil ( I used canola oil)
1/2 cup milk
3/4 cup pureed ripe strawberries

Steps:

Preheat oven to 325 degrees, grease and flour three 8 inch round pans or two 9 inch round pans
Put all ingredients into your mixing bowl and mix on low speed until the ingredients are blended. Then increase speed to medium and mix for approximately 2 minutes, scraping down sides of bowl mid way through.
The mashed strawberries should be well blended into the batter.
Bake for 30 min. or until tooth pick comes out clean.

Strawberry Bundt Cake With Lemon Glaze Drizzle (Uses Cake Mix) image

A very delicious and moist Strawberry Bundt Cake. You could certainly make this with strawberry glaze or plain sugared glaze if you wanted to, or even just dust with powdered sugar, but my favorite is the lemon glaze topping as it offsets the sweet strawberry flavor perfectly. This cake is very pretty and goes well for brunches, dinner parties, think pink events, etc. Also, the recipe is for a Bundt cake, but you could easily make a layer cake using two 8" round cake pans instead then use a frosting. ** Note: my oven is gas and cooks quickly, you may need to cook a little longer depending your oven, but basically cake is done when toothpick comes out clean.

1 (18 1/4 ounce) box strawberry cake mix (Duncan Hines Moist Deluxe)
1/3 cup vegetable oil
1 cup water
3 large eggs
2 tablespoons sour cream (heaping tablespoons)
2/3 cup strawberry (either fresh strawberries pulsed a few times with food processor or strawberry pie filling drained)
1 dash cooking spray (Bakers Joy works best)
1 3/4 cups powdered confectioners' sugar (or 2 cups if thicker texture desired)
5 tablespoons fresh lemon juice

Steps:

Preheat oven to 350 degrees. Spray Bundt or tube pan with Bakers Joy (or spray two 8" pans with cooking spray to make layer cake).
Blend together cake mix, oil, water, eggs, and sour cream in large bowl on low speed for 1 minute then medium high speed for 2 minutes.
Pulse strawberries a few times until chopped (be careful not to puree them) then stir those into batter by hand then pour batter into Bundt pan (or round pans).
Bake for 35-40 minutes for bundt pan until done (bake 30 min for round pans). Remove from oven & let cool in pans on wire rack for 15 minutes before removing from pan.
Cool completely then glaze by combining the powdered sugar & lemon juice - whisk together until creamy then drizzle over top and sides of cake.
