EASY LEMONADE COOKIES



Easy Lemonade Cookies image

These simple, delicious lemonade cookies are guaranteed to become a favorite. Made with butter, lemonade, eggs, sugar, they couldn't be easier.

Number Of Ingredients 8

1 cup butter
1 cup granulated suga r
2 eggs
3 cups all-purpose flour ( sift before measuring )
1 teaspoon baking soda
1 small can (6 ounces) frozen lemonade concentrate (thawed, divided)
Optional: 2 teaspoons lemon zest
1/2 cup granulated sugar (for sprinkling)

Steps:

  • Pre-heat oven to 400 F.
  • In a mixing bowl with an electric mixer, cream butter and sugar until light. Add eggs and beat until light and fluffy.
  • Sift together the sifted flour and baking soda; add to the creamed mixture, alternating with 1/2 cup of the lemonade concentrate.
  • Stir in grated lemon peel, if using.
  • Drop dough by teaspoonfuls, 2 inches apart, onto ungreased baking sheets.
  • Bake cookies at 400 F for 8 minutes or until lightly browned around edges.
  • Remove the cookies to racks to cool completely.
  • Brush hot cookies with remaining lemonade concentrate and then sprinkle with some granulated sugar. Expert Tip If you prefer iced cookies, combine 2 cups of confectioners' sugar with 4 tablespoons of fresh lemon juice or lemonade concentrate and a few teaspoons of finely grated lemon zest. Number Of Ingredients 6

2 cups sugar
2 cups water
1 gallon cold water
2 cups fresh lemon juice
1 lemon, sliced, plus 1 lemon, cut into wedges, for garnish
Ice

Steps:

  • Make a simple syrup by adding the sugar and water to a medium saucepan. Bring to a boil over low heat. Stir until the sugar dissolves, then remove from the heat and set aside to cool.
  • Add a gallon of cold water and the lemon juice to a large glass pitcher. Add the simple syrup and the lemon slices. Stir well. Pour the lemonade into tall glasses filled with ice. Garnish the rims with lemon wedges and enjoy icy cold!

3 whole lemons
6 tablespoons granulated sugar

Steps:

  • Wash the lemons and pat dry.
  • Slice 1 lemon into thin slices for garnish.
  • Cut the remaining lemons into halves.
  • Squeeze out their juice with a juicer into a large pitcher.
  • Stir in 6 Tablespoons of sugar.
  • Pour in enough cold water to equal 16 oz or 4 8oz glasses.
  • Garish with lemon slices.
  • The basic recipe 1 Lemon + 3 T Sugar + Ice cold water = 2 Glass of Wonderful Lemonade.
