SWEET CORNBREAD MUFFINS FOR DIABETICS



Sweet Cornbread Muffins for Diabetics image

My husband is a diabetic and still loves to have his sweets. I've learned to substitute ingredients. We just had these cornbread muffins tonight with venison chili. Really good, now we have to learn portion size!

Number Of Ingredients 9

1 c all-purpose flour
1 c yellow corn meal
1/4 c splenda blend sugar
1/4 c splenda brown sugar
1 tsp salt
2 tsp baking powder
1 large egg
1 c warm milk
1 stick butter, melted or 1/2 cup

Steps:

  • 1. Preheat oven to 375º F. Put paper liners in a muffin tin. Makes 12 muffins.
  • 2. In a large bowl put warm milk and add corn meal and stir to mix well, let set while measuring other ingredients. In another bowl mix flour, baking powder, salt and mix together well to blend.
  • 3. Now add egg and sugars to milk mixture. Mix well. Then add dry ingredients in with wet ingredients. Blend until flour mixture is well blended. Divide batter into the cupcake papers.
  • 4. Bake for 15 - 18 minutes or a toothpick comes out clean. Let cool enough to spread butter inside and eat!

1/2 cup all-purpose flour
1/2 cup cornmeal
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup egg substitute
1/2 cup fat-free evaporated milk
2 tablespoons canola oil

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In another bowl, combine the egg substitute, milk and oil; stir into dry ingredients just until moistened., Fill miniature muffin cups coated with cooking spray three-fourths full. Bake at 400° for 10-12 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 1/4 cups skim milk
1/4 cup unsweetened applesauce
2 egg whites
2 tablespoons cooking oil
1/2 cup flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Combine dry ingredients.
  • Mix milk,applesauce,egg whites and cooking oil.
  • Stir into dry ingredients until just moistened.
  • Fill greased muffin cups 2/3 full.
  • Bake at 400F 18-20 minutes.

Mini cornbread muffiins made with a can of diet soda. When you mix these up they will seem like they have too much liquid but they are perfect. Do not over bake them. In my oven at 350 it took 15 minutes. They taste like good without butter but excellent with!

1/3 cup coconut flour
1 tablespoon baking powder
1/2 teaspoon salt
3 g stevia
2 3/4 cups almond milk
12 ounces diet Dr. Pepper soda

Steps:

  • Preheat oven 350.
  • Combine dry ingredients in a small bowl add wet.
  • Mix until all ingredients are wet. Do not over mix!
  • Grease mini muffin pan and use 1/4 cup to fill.
  • Bake 15-20 minutes or until golden brown.
  • Leftover can be frozen!
