A copycat recipe for the bourbon chicken served at many food court Chinese restaurants. This may not be authentic Chinese food, but it is delicious.

1 Tbsp olive oil
2 LB chicken thighs, skinless.
1 tsp ground ginger
1/2 tsp garlic powder
1/4 tsp black pepper (I used 4 turns on the pepper mill)
1/3 Cup soy sauce
1/3 Cup Bourbon (or whatever brown whiskey you have sitting around. Dark rum would probably work too). If you don't keep alcohol in your house you can substitute apple juice or cranberry juice. If you use juice, use a little less brown sugar. It really is delicious with just apple juice and no Bourbon.
1/2 Cup water
1 Tbsp rice vinegar (white wine vinegar or plain white vinegar would do if you don't have rice vinegar)
1/2 Cup brown sugar, tightly packed
1 Tbsp cornstarch dissolved in 3 Tbsp cold water

Steps:

  • Cut the chicken thighs into 1 inch pieces, and remove any excess fat or skin.
  • In a small bowl combine the ginger, pepper, soy sauce, whisky, water, garlic, vinegar and brown sugar. Set aside.
  • In a large saute pan or skillet heat the oil on medium high heat.
  • Add the chicken and cook until the juices have cooked off and the chicken starts to brown, about 8-10 minutes. Stir the chicken every 1-2 minutes so it doesn't burn and browns evenly.
  • Add the bourbon mixture and stir well. Allow the liquid to come to a boil and then turn the heat down to medium. Simmer uncovered for about 15 minutes. Don't rush this as you want the alcohol to cook off from the whiskey.
  • Add in the cornstarch liquid and stir briskly. The sauce will thicken quickly.
  • Serve over rice.

2 boneless skinless chicken breasts
2 cups home fries or 2 cups hash browns
1 teaspoon fajita seasoning mix
1 small bell pepper
1 small onion
4 eggs
1/4 cup half-and-half
1/2 cup shredded cheese
1/2 cup sour cream (optional)
1/2 cup guacamole (optional)
salt and pepper
salsa (optional)

Steps:

  • Rub chicken breast with fajita seasoning and let marinade for 1/2 hour.
  • Slice marinated chicken into strips.
  • Use cooking spray and braise chicken in a hot skillet until done.
  • Add onion and bell pepper to skillet fry and stir on high so as to cook quickly.
  • Remove all from heat and set aside. Brown left over cooked potatoes or use frozen hash browns, cooked until desired crispness. Salt and pepper to you taste. Divide in half and place on serving platters.
  • Mix egg with half and half, salt and pepper to taste. Cook egg mixture into two separate omelets.
  • Place on top of browned potatoes. Place one half of cooked fajita meat and cooked onions and peppers on top of omelet.
  • Sprinkle with 1/4 cup cheese on each platter of fajita platter.
  • Serve with sour cream, guacamole, and salsa if you like.

This is a very quick, easy, and delicious recipe for bourbon chicken and the one I make most often -- and it really contains bourbon!

3 lbs boneless skinless chicken thighs, trimmed of fat and cut into bite-size pieces
1 cup soy sauce
1/2 lb dark brown sugar
1 teaspoon garlic powder
2 tablespoons Bourbon

Steps:

  • Make marinade and add chicken. Pour into a large ziplock bag, and refrigerate several hours or overnight, turning occasionally.
  • Pour contents into a deep baking dish, cover and bake at 350º for 45 to 60 minutes.
  • Serve over rice if desired.

This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten. Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

2 lbs boneless chicken breasts, cut into bite-size pieces
1 -2 tablespoon olive oil
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Steps:

  • Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.
  • Heat oil in a large skillet.
  • Add chicken pieces and cook until lightly browned.
  • Remove chicken.
  • Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
  • Add chicken and bring to a hard boil.
  • Reduce heat and simmer for 20 minutes.
  • Serve over hot rice and ENJOY.

I never was convinced there was bourbon in bourbon chicken. I set up a lab experiment in my little kitchen, sample box of mall bourbon chicken, and my own ingredients, all ready for a Food Network style Throwdown, (without Bobby Flay). I already had a general plan for what I thought might be in Bourbon Chicken, and then I went to work, chopping, mixing, cooking, tasting, tasting, tasting, and I feel confident I got this done. Side by side taste tests get a thumbs up for my recipe. Note: I used some low calorie ingredients in mine, and if you choose to use full calorie options, be careful not to burn or over sweeten your sauce. You can get ketjap manis in oriental grocery stores. Don't substitute regular soy sauce for it- the flavor and texture is totally different. Or you could try making Recipe #39318, reduced to the thickness of honey. I think the ketjap manis I used must have given it the reddish color, although I hadn't noticed that using it before. Maybe it was the cherry coke? The color won't really matter so don't worry about it.

3 tablespoons unsalted butter
1/2 cup ketjap manis (Indonesian sweet & thick soy sauce)
1/2 cup diet cherry coke (optional cherry coke or cherry pepsi)
1/4 cup Splenda brown sugar blend (optional brown sugar or palm sugar)
1 tablespoon rice vinegar
2 teaspoons ground ginger
1 teaspoon salt
1/2 teaspoon black pepper
1/2-1 teaspoon liquid smoke

Steps:

  • Mix ingredients for sauce in a small bowl.
  • Saute chicken in butter in a large skillet, until nicely browned, being careful not to burn the butter.
  • Add the sauce and stir, bringing to a boil.
  • Reduce heat and cook, stirring, 20-25 minutes or until sauce has thickened and chicken is cooked through.

1 lb dark chicken meat
4 ounces soy sauce
1/2 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon powdered ginger
2 tablespoons dried onion flakes
1/2 cup Jim Beam bourbon whiskey
2 tablespoons white wine

Steps:

  • Either pull apart or cut chicken meat into bite size chunks.
  • Mix all the marinade ingredients and pour over chicken pieces in a bowl.
  • Cover and refrigerate (stirring often) for several hours (best overnight).
  • Bake chicken at 350 for one hour in a single layer, basting every 10 minutes.
  • Remove chicken.
  • Scrape pan juices with all the brown bits into a frying pan.
  • Heat, and add 2 Tbs. white wine.
  • Stir and add chicken.
  • Cook for 1 minute and serve.
