PEPPERONI 'N CHEESE BALLS
Easy to make treat that the kids and grownups alike will love. Cubes of mozzarella and pepperoni slices are enclosed in refrigerator French bread dough and baked. Found this on the internet, but I'm betting it originally came from Pillsbury who makes the dough.

Steps:
- Preheat oven to 375°.
- Unroll dough and cut in half, then cut each piece in half and repeat until you have 8 pieces.
- Place 2 slices of pepperoni on the corner of each dough square, then top with one cube of cheese, then 2 more slices of pepperoni.
- Wrap dough around pepperoni and cheese and be sure to seal all seams well.
- Place on a lightly greased baking sheet and bake in center of oven for 10 minutes or until dough is golden brown.
- Note: If desired, brush edges of dough with an egg white and water mixture to ensure sealing.

Steps:
- Heat oven to 350°F.
- Unroll pizza dough; cut into 8 rectangles. Top with pepperoni and mozzarella.
- Fold edges of dough over filling, then pinch together to completely enclose filling. Roll each into ball.
- Place on parchment-covered rimmed baking sheet. Brush with oil; sprinkle with Parmesan.
- Bake 20 to 25 min. or until golden brown. Serve warm.

- Prepare roll mix by package directions, omitting egg and using 1 cup water (no need for dough to rise). Place 1 cheese cube on 1 pepperoni slice. Shape pieces of dough carefully around cheese and pepperoni, forming balls. Fry in deep hot oil 5 minutes or till brown, turning once.

AMAZING PUFF BALLS
These are wonderful! My cousin brought them as an appetizer for Thanksgiving dinner one year, and I got the recipe. I make them for work parties, and even quick snacks at home. You can always make more or less by using more or less cream cheese and crescent rolls! Trust me, these are excellent!

Steps:
- Take out the crescent rolls, and seperate into the individual triangles.
- Flatten each triangle and slice it so that it becomes three small triangles.
- Dice or chop your pepperoni into tiny, tiny pieces.
- Mix the pepperoni into the cream cheese, stir very well so all of the pepperoni pieces are mixed into the cream cheese.
- Take a little spoonful of your cream cheese/pepperoni mixture and put it in the middle of one of your crescent rolls triangles.
- Pinch up all of the sides around the filling.
- Repeat and place them all on a cookie sheet.
- Bake for the amount of time stated on the crescent rolls (usually 11 minutes at 350°F).
- Let cool for a few minutes before serving!

- In a medium bowl mix together cheese, shrimp, cilantro, chilies and chili powder. Form into 3/4-inch balls. Set aside.
- Heat oil in a heavy saucepan or deep fryer to 350-degrees F.
- Combine flour, cornstarch, baking powder and salt in a pie pan or shallow dish.
- Make a well in center of flour mixture and add water and 2 tablespoons oil, whisk to combine.
- In another pie pan pour in breadcrumbs.
- Dip cheese balls in batter, roll in breadcrumbs and then deep fry in batches.
- Drain on paper towels.

- Mix grated cheese with 1/2 teaspoon chili powder. Take 1 teaspoon of the cheese mix and form a ball.
- When all cheese balls are done, roll them through flour. Mix egg with water and beat well. Mix the bread crumbs with remaining chili powder. Dip the cheese balls in egg, one at a time, then roll through flour again then back to egg dipping. Lastly roll through bread crumbs and nicely coat the whole ball.
- When all balls are coated as above, heat oil in a skillet. The oil should cover at least half the balls. Cook the cheese balls until golden, about 3 minutes on each size. Remove on a paper towel. Stick a toothpick so they're easier to grab and serve.
