FROZEN RAVIOLI PIEROGIES



Frozen Ravioli Pierogies image

Number Of Ingredients 8

One 20-ounce package frozen cheese ravioli
4 tablespoons butter, plus 2 tablespoons more if needed
1 tablespoon olive oil
1 pound Italian sausage, crumbled
1/4 teaspoon freshly grated nutmeg
2 large onions, cut in half and sliced
One 16-ounce tub sour cream
1/3 cup chopped fresh parsley

Steps:

  • Bring a pot of water to a boil. Add the ravioli and cook until slightly underdone, 8 to 9 minutes (the cook time will depend on the ravioli size).
  • Heat the butter and olive oil in a large skillet over medium-high heat. Add the sausage, nutmeg and onions and cook until the onions are translucent and the sausage is done, about 10 minutes. Remove the sausage and onions with a slotted spoon and set aside. Add the cooked ravioli to the pan and fry in the sausage fat (add 2 more tablespoons butter if the pan is dry) until golden, 3 to 5 minutes. Add the onion-sausage mixture back in along with the sour cream and cook for 2 minutes. Finish with parsley and serve immediately.

Makes a great easy weeknight dinner and is easily a one-dish meal. I usually serve this with a side of pickled beets and/or rye bread/rolls.

16 ounces frozen pierogi (I like to use Mrs. T's brand)
4 ounces deli corned beef, sliced thin and chopped
1 cup sauerkraut, drained well
1/3 cup thousand island dressing
4 ounces swiss cheese (shredded or sliced thin)

Steps:

  • Preheat over to 425 degrees.
  • In a saucepan, bring 2 quarts of water to a boil; add pierogies and cook for about 5 minutes or until they float.
  • Drain and transfer pierogies into a greased 10 inch round baking dish.
  • Layer on top of the pierogies: corned beef, sauerkraut, dressing and end with the swiss cheese.
  • Bake for 10 minutes or until pierogies are hot and cheese melts.

1 lb ground beef
1/2 cup onion, chopped
1/4 cup all-purpose flour
1 (14 1/2 ounce) can beef broth
1 (16 ounce) package frozen cheese and potato pierogies, thawed
2 cups frozen mixed vegetables, thawed and drained
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon italian seasoning
1/2 cup cheddar cheese, shredded

Steps:

  • In large skillet, cook beef and onion over medium heat until meat is no longer pink; drain, reserving 3 T drippings.
  • Sprinkle flour over beef and drippings; stir until blended.
  • Gradually add beef broth.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Stir in the pierogies, vegetables and seasonings.
  • Cook, uncovered, for 4-5 minutes or until heated through.
  • Sprinkle with cheese.
