DECADENT TASTING GINGER PEAR OATMEAL

This was my decadent tasting gift to myself this morning (in an attempt to avoid all the baked goods that keep cropping up at work this holiday season). I modeled it on toni gifford's Ginger Peach Oatmeal #112474 which I love and eat often. But this is just enough different that I decided to post it so I'll remember. I loved it, but I love candied ginger. In fact, I may add more next time.

Number Of Ingredients 6

1/2 cup quick-cooking oats
1 cup water
2 tablespoons candied ginger, chunked up (2 pieces)
1/2 cup canned pears, chunked (in their own juice)
1 tablespoon Splenda brown sugar blend
1 1/2 tablespoons fat-free half-and-half

Steps:

  • Place the 1 cup water in a pan and bring it to a boil.
  • When it is boiling add the oatmeal and cook for 30 seconds to a minute. Then add the ginger and stir.
  • Wait a moment and add the canned pears and stir.
  • At this point the oatmeal should be done, but if you like it mushier feel free to let it cook longer.
  • Transfer the oatmeal and fruit to a bowl. Sprinkle the brown sugar substitute (or real brown sugar if you are so inclined) over the top. Then drizzle the half and half over the top.
  • Stir it all together and enjoy.

Low fat, not too sweet and the almonds give it a nice crunch. Try substituting dried blueberries, currants or raisins for the dried cranberries. You can also vary the nuts by substituting walnuts or pecans. This makes an excellent dessert when topped with vanilla pudding (or yoghurt) and sliced fresh fruit - I use strawberries. This baked oatmeal can be divided into squares for reheating later with a little more added milk.

2 cups oatmeal
2 cups 1% low-fat milk
1/2 cup slivered almonds
1/2 cup dried cranberries
1 apple, grated (I use Granny Smith)
4 tablespoons maple syrup
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg

Steps:

  • Spray baking dish with non stick spray.
  • Mix all ingredients together in baking dish.
  • Cover and bake at 400 for 45 minutes.

1 cup rolled oats
⅓ cup brown sugar
½ cup all-purpose flour
1 teaspoon finely chopped crystallized ginger
1 teaspoon ground cinnamon
¼ cup butter
2 tablespoons white sugar
2 tablespoons all-purpose flour
2 teaspoons finely chopped crystallized ginger
8 cups peeled and sliced pears
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
  • In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
  • In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
  • Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

As one of those people who eat oatmeal 3 or 4 times a week, I am always looking for was to make my daily bowl more interesting. This recent invention was quite wonderful and sophisticated in flavor. Not a kid dish as the ginger adds a bit of spice, use more or less if you are inclined.

1 cup oats
2 cups water
2 tablespoons crystallized ginger or 2 tablespoons candied ginger, fine diced
1 cup canned peaches in juice
sugar (optional) or sugar substitute, to taste (optional)
yogurt (optional) or cream, to taste (optional)

Steps:

  • Bring water to boil in a small saucepan; add oatmeal and cook 1 minute (if you want you can use the peach juice as part of your 2 cups of liquid).
  • Add finely chopped ginger to the pot (be sure to cut small as it swells quite a bit); continue to cook another 2-3 minutes.
  • Add peaches and cook oatmeal until desired doneness, about 2-4 minutes depending on your grain and eating preferences.
  • Serve topped with sweetener, milk, yogurt or cream, again according to your tastes.
