SLOW COOKER LASAGNA

2 teaspoons olive oil
1 medium onion diced
2 pounds ground beef
1 pound Italian sausage, casing removed
3 cloves garlic, finely chopped
One 28-ounce can diced tomatoes
One 14.5-ounce can diced tomatoes
One 6-ounce can tomato paste
1 tablespoon minced fresh basil
1 tablespoon minced fresh flat-leaf parsley
1 teaspoon dried oregano
1/2 teaspoon kosher salt
Freshly ground black pepper
3 cups ricotta cheese
3/4 cup freshly grated Parmesan
1/2 cup grated Romano
1 tablespoon minced fresh basil
1 tablespoon minced fresh flat-leaf parsley
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, beaten
Nonstick cooking spray, for spraying the slow cooker
15 uncooked lasagna noodles
2 cups grated mozzarella
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • For the meat mixture: In a large skillet over medium-high heat, add the olive oil and onion and saute for 5 minutes. Add the ground beef, sausage and garlic and cook until brown, 7 to 9 minutes. Add the tomatoes with their juice, tomato paste, basil, parsley, oregano, salt and some pepper and stir. Set aside.
  • For the cheese mixture: In a medium bowl, combine the ricotta, Parmesan, Romano, basil, parsley, salt, pepper and eggs and stir together well.
  • For the lasagna: Spray a 6-quart slow cooker with cooking spray.
  • Spoon in one-quarter of the meat mixture on the bottom and top with 5 lasagna noodles, broken to fit. Add a third of the cheese mixture, then sprinkle with 1/2 cup mozzarella. Repeat this layering twice, starting with the meat mixture and ending with the mozzarella, for 3 layers total.
  • For the fourth layer, top with the remaining meat mixture and remaining 1/2 cup mozzarella. Cover and cook on low for 4 hours. Turn off the heat and allow the lasagna to sit 30 minutes before serving. Sprinkle with chopped parsley.

16 ounces shredded mozzarella cheese

Steps:

  • In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through.
  • In a large bowl mix together the cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese.
  • Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used.
  • Cover, and cook on LOW setting for 4 to 6 hours.

9 lasagna noodles
¼ cup margarine
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup milk
½ cup vegetable broth, or as needed
2 tablespoons white wine
½ cup grated Parmesan cheese
1 cup light ricotta cheese
1 egg
1 egg white
1 tablespoon olive oil
2 cups coarsely shredded carrots
2 cups coarsely chopped zucchini
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt margarine in a skillet over low heat; cook and stir flour, salt, and pepper into the melted margarine until smooth and bubbling, 2 to 3 minutes. Add milk and broth into flour mixture, stirring constantly; bring sauce to a boil. Stir wine into sauce and remove from heat. Stir Parmesan cheese into sauce until smooth.
  • Whisk ricotta cheese, egg, and egg white together in a bowl.
  • Heat olive oil in a skillet over medium-high heat; saute carrots, zucchini, and spinach until just becoming tender, 5 to 10 minutes. Stir vegetable mixture into ricotta mixture.
  • Layer 1/3 the lasagna noodles, 1/3 the ricotta-vegetable mixture, and 1/3 the Parmesan sauce in a 9x13-inch baking dish; repeat layering 2 more times with remaining ingredients, ending with a layer of mozzarella cheese.
  • Bake in the preheated oven until cheese is lightly browned and bubbling, about 30 minutes.

This is the easiest ever Crockpot Lasagna Recipe! Just brown the beef and onions, then add ricotta cheese, lasagna noodles and jarred tomato sauce. Cooks hands-off all day and is easy to assemble.

1 lb extra-lean ground beef
1 yellow onion, diced
2 cloves garlic, minced
1/2 tsp each salt & pepper
2 (650mL) jars tomato sauce (I used Classico's sweet basil marinara sauce)
1 lb lasagna noodles (can use either oven ready or normal)
1 (475g) tub ricotta cheese
2 cups mozzarella cheese
1/2 cup water
Chopped fresh basil or parsley, for garnish

Steps:

  • In a large frying pan, brown the ground beef over med-high heat. When beef is almost cooked through, add onions, garlic, salt & pepper and 1 jar of tomato sauce, then stir to combine.
  • Spray slow cooker with cooking spray, then layer in a bit of meat sauce. Add lasagna noodles (you may need to break some into pieces to make them fit), then add some ricotta and mozzarella cheese, and more of the meat sauce. All layers should be about 1 inch thick. Repeat until the slow cooker is full - usually 3 layers total.
  • Pour the other jar of tomato sauce overtop of lasagna, then add mozzarella cheese to the top. Pour water in on the sides. Cook on high for 3 hours, or on low for 6 hours.
  • Garnish lasagna with basil and/or parsley, then serve and enjoy!

1 bell pepper, chopped
1 carrot, grated
2 garlic cloves, minced
1 (28 ounce) can tomato sauce

1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon basil
1 teaspoon parsley
1/4 teaspoon crushed red pepper flakes
6 ounces cottage cheese (we like 2%)
1/2 cup parmesan cheese, grated
12 ounces lasagna noodles, uncooked
12 ounces mozzarella cheese, shredded
1/2 cup red wine
1/2 cup water

Steps:

  • Brown ground beef, onion, bell pepper, carrot and garlic in frypan.
  • Add tomato sauce, tomato paste, salt, black pepper, oregano, basil, parsley and red pepper flakes.
  • Cook for 3 or 4 minutes.
  • Spoon a layer of meat sauce onto the bottom of the slow cooker.
  • Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.
  • Repeat with sauce, noodles and cheeses until all are used up.
  • Add wine and water around the lasagna.
  • Cover and cook on low for 4 hours.

1 cup water
1 egg
1 container (15 oz.) POLLY-O Original Ricotta Cheese
2 Tbsp. chopped fresh parsley
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Mozzarella Cheese, divided
1/4 cup KRAFT Grated Parmesan Cheese, divided
6 lasagna noodles, uncooked

Steps:

  • Brown meat in large skillet; drain. Return meat to skillet; stir in pasta sauce and water.
  • Combine egg, ricotta, parsley, 1-1/2 cups mozzarella and 2 Tbsp. Parmesan.

This is my mother-in-law's lasagna recipe, and it has a really great flavor. This is a really good recipe that doesn't use some of the more expensive kinds of cheeses that many lasagna recipes call for. (The one change I've made is to use small pasta shells instead of the lasagna noodles, just because I think it's a bit quicker -- but it tastes great either way). I'm going to try making several batches of lasagna at once and freezing it for later.

1 lb small shell pasta, cooked, drained, and rinsed in cold water
1 lb ground beef
1 quart pasta sauce
1 lb cottage cheese
1/2 lb mozzarella cheese, grated

Steps:

  • Preheat oven to 375 degrees. Cook ground beef until browned. Drain. Season with salt and pepper. Add pasta sauce. (I usually do this while the pasta is cooking.) Put a layer of pasta in a 9x9 pan. Top with ½ of the cottage cheese, ½ of the mozzarella cheese, and ½ the meat sauce. Sprinkle with Parmesan cheese. Repeat layers. Cook at 375° for 30 minutes.

  • In a large deep pan over medium heat, combine ground beef and onion. Cook, breaking up meat with a spatula until no longer pink (5 min). Add garlic and sauté 1 to 2 mins. Add 1/4 cup red wine and simmer until nearly evaporated (5 min).
  • Add 3 cups marinara, 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp thyme, 1/2 tsp sugar and 2 Tbsp chopped parsley. Mix well, cover and simmer 5 min.:
  • Make the cheese sauce: In a medium bowl, combine: 15 oz ricotta, 16 oz cottage cheese, 1 large egg, 1 cup mozzarella cheese, and 2 Tbsp parsley. Mix well.
  • Lightly oil slow cooker. Spread 1 cup marinara sauce on the bottom then top with 3 noodles, breaking them to fit. Top with 1/3 of the Meat Sauce, sprinkle with 3/4 cup of your mozzarella cheese, then spread the top with 1/2 of your ricotta cheese mixture and repeat until you have 3 layers of noodles. Top the third layer of noodles with remaining meat sauce, 3/4 cup mozzarella and pour 1/2 cup water around the edges, allowing some of it to go down the side of the dish into lasagna.
