Categories     Soups, Stews and Chili Recipes     Soup Recipes     Noodle Soup Recipes

Time 2h30m

Yield 4

Number Of Ingredients 18

1 whole cardamom pod
2 whole cloves
1 star anise pod
1 teaspoon fennel seeds
2 teaspoons coriander seed
1 (2 inch) piece fresh ginger, peeled and smashed
½ onion, peeled
1 turkey carcass
8 cups water, or more as needed
1 (16 ounce) package dried flat rice noodles
¼ cup fish sauce
salt to taste
1 cup shredded leftover cooked turkey
1 tablespoon shredded fresh basil leaves
1 tablespoon chopped fresh cilantro
¼ onion, thinly sliced
1 lime, cut into wedges
1 tablespoon chile-garlic sauce (such as Sriracha®), or to taste

Steps:

  • Toast the cardamom pod, cloves, star anise, fennel, and coriander in a small skillet over medium-low heat until fragrant, 5 to 7 minutes. Place the spices onto the center of a 8 inch square piece of cheesecloth. Gather together the edges of the cheesecloth, and tie with kitchen twine to secure. Sear both sides of the ginger and 1/2 onion in the same skillet until lightly charred, about 3 minutes on each side.
  • Place the turkey carcass, water, sachet, ginger, and onion in a large pot over medium-high eat. Bring to a boil, then reduce to a simmer. Simmer for 2 hours.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rice noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the noodles have cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Remove the carcass, sachet, ginger, and onion from the soup. Strain the soup to remove any meat that may have fallen off the bones, if necessary. Season with fish sauce and salt. Divide the rice noodles and turkey meat evenly into 4 large bowls. Scatter the basil, cilantro, and sliced onion on top. Ladle the soup on top. Serve with a wedge of lime and hot sauce.

DAY-AFTER TURKEY SOUP

Day-After Turkey Soup image

Provided by Food Network Kitchen

Time 1h25m

Yield 4 Quarts

Number Of Ingredients 14

Carcass of one turkey (about 1½ pounds) without skin
8 cups low-sodium chicken broth
1 head garlic, halved crosswise
2 bay leaves
2 sprigs fresh thyme
2 cups diced skinless turkey meat (white or dark meat)
½ pound green beans, trimmed and cut into 1-inch pieces
2 cups frozen corn kernels
1 large sweet potato, peeled and cut into ½-inch dice
1 cup small dry pasta shape, such as ditalini
¼ cup loosely packed fresh dill sprigs, chopped
½ teaspoon freshly ground black pepper
Kosher salt
Crusty bread for serving

Steps:

  • 1. Put the turkey carcass, broth, garlic, bay leaves and thyme in a large Dutch oven (cut carcass in pieces if necessary so it fits) and add enough water to cover by an inch. Bring to a boil over medium-high heat; lower heat and simmer, uncovered, about 40 minutes. Strain the soup through a fine-mesh strainer into a large bowl; discard the solids. Add all but 2 cups of the broth back to the Dutch oven; reserve the remaining broth for another use (it will keep refrigerated up to 3 days or frozen up to 1 month).
  • 2. Add the turkey meat, green beans, corn and sweet potatoes to the pot; cover and cook over medium heat for 15 minutes. Add the pasta and continue to cook, uncovered, until the pasta and potatoes are tender, 10 to 12 minutes. Stir in the dill and pepper and season to taste with salt. Serve with the bread.

AFTER THANKSGIVING TURKEY SOUP

After Thanksgiving Turkey Soup image

I made this soup the day after Thanksgiving. The recipe is from The Gourmet Cookbook. Although it appears to be time consuming, much of the preparation time is cooling the broth in the refrigerator overnight. I think this is the best turkey soup I have ever had and it has become a favorite in my house.

DAY AFTER THANKSGIVING DINNER

Day After Thanksgiving Dinner image

Several years ago, on the Friday after Thanksgiving, I wanted to use my leftovers for something other than a turkey sandwich or turkey soup. I opened up all the containers in the fridge and came up with this. It's a family favorite and easy to create. It's also easy to put together from scratch, without using leftovers. I've provided amounts as a guideline but the recipe is very forgiving and can be adjusted or modified for more or less, depending on how many ingredients you have on hand. Also - if your stuffing isn't very savory, you can add more herbs to either your turkey mixture or your stuffing mixture - or both!!

Provided by shooz616

Categories     Poultry

Time 45m

Yield 4 serving(s)

Number Of Ingredients 11

5 tablespoons butter
5 tablespoons flour
salt & pepper
1/2 teaspoon thyme
1 (16 ounce) can chicken broth
1 cup gravy
1 cup milk
1 1/2 cups roasted turkey, shredded or cubed
2 cups mashed potatoes
1 -2 cup prepared stuffing
1 egg, beaten

Steps:

  • Mix together the stuffing and mashed potatoes.
  • Add the egg and mix thoroughly.
  • With your hands, form 1-1/2 to 2 inch balls (patties will work as well).
  • Place the balls on a greased baking sheet and bake in a 350 degree oven until heated through and a bit crunchy on the outside (about 15-20 minutes).
  • While the stuffing balls are baking, make a roux, as follows:.
  • Sift the flour, salt, pepper and thyme together.
  • Melt the butter.
  • Add the seasoned flour, one tablespoon at a time, mixing after each. (I use a whisk to keep the consistency smooth.).
  • When the roux is smooth and bubbling, remove from heat and slowly add chicken broth, stirring and incorporating after each addition.
  • Stir in the gravy and the milk.
  • Return to heat and bring to a slow boil, stirring constantly, until thick and smooth.
  • Stir in the turkey pieces and heat through. (At this point, you can add more of any of the liquids if the sauce is too thick.)
  • Serve the turkey and gravy sauce over the crunchy stuffing balls. Any leftover vegetables can be served with the meal or a green salad would be a great compliment. And don't forget the cranberry sauce!

WHAT HAPPENS TO YOUR BODY THE DAY AFTER THANKSGIVING

From eatthis.com
Estimated Reading Time 7 mins
  • You feel thirsty. Have you ever woken up in the middle of the night after a day of drinking or eating a lot of sodium-filled foods such as meat supreme pizza?
  • You have heartburn or acid reflux. "When we eat, our stomach produces hydrochloric acid to help with digestion. However, eating large amounts of food at once causes high amounts of acid to be produced that can end up making their way to the esophagus, causing heartburn," explains Kelli McGrane, MS, RD for food tracking app Lose It!
  • You may be using the restroom a lot the next day. Sydney Greene, MS, RD, points out that Thanksgiving can be hard for those with dietary restrictions, especially food intolerances.
  • You feel lethargic. Bannan says that while the amino acid in turkey called tryptophan is often to blame for post-meal fatigue, it actually may not be the sole reason you feel ready for a nap after a large Thanksgiving dinner.
  • You feel gassy. We hate to say it, but it's the truth. "When you overeat, digestion slows and your stomach expands to accommodate the food, which pushes on your other organs.
  • You feel anxious and irritable. "Refined carbohydrates include foods made from white flour and sugar. When grains have been stripped of their fibrous and nutrient-dense outer layer in processing, all that is left is a carbohydrate serving devoid of nutrition," says Greene. "
  • You can't sleep that night. There's another way Thanksgiving dinner can negatively affect your sleep and that's by overeating. "Your body has a circadian clock that controls not only your sleep cycles, but also the natural rise and fall of hunger hormones," explains McGrane.
  • You have a headache. "Eating a salt-heavy meal, not drinking enough water, and having a few alcoholic beverages can leave you with a pounding headache, even without the hangover," says Bannan.
  • Your pants are feeling tight. Greene says that one generic box of stuffing contains 5,300 milligrams of sodium, which is more than double the recommended 2,300 milligrams one should consume at most each day.
  • You may feel hungrier than usual the next day. This seems a bit backward, right? Well, here's the situation. When you overeat, your body goes into overtime to digest the excess calories, and the next day it can feel exhausted.
