BEST DATE BARS
Date recipes are some of my favorite desserts to cook up. These date treats are very easy to bake, and one sheet of them will yield 48 good-sized bars. I sometimes add nuts, coconut or candied fruit. -Dorothy DeLeske, Scottsdale, Arizona

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

CHEWY DATE NUT BARS
You'll need just six ingredients, including a convenient boxed cake mix, to bake up these chewy bars chock-full of walnuts and dates. They are my husband's favorite snack, and he loves to take them to work. I often whip up a batch for bake sales or to share with my co-workers at our local car dealership.

- In a large bowl, combine cake mix and brown sugar. Add butter and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Combine dates and walnuts; stir into batter (batter will be stiff). , Spread into a greased 13x9-in. baking pan. Bake at 350° for 35-45 minutes or until edges are golden brown. Cool on a wire rack for 10 minutes. Run a knife around sides of pan to loosen; cool completely before cutting.

This is a family recipe but I am not sure where it came from. I love dates, so this is a favorite of mine for holidays (and it is easy).

- Bake in greased layer cake pans or square pans at 375 degrees for 35 minutes.
- Cool for 15 minutes.

Steps:
- Preheat oven to 350°F.
- Spray a 9 x 13-inch pan with non-stick cooking spray (Pam) or grease pan and then line pan with aluminum foil. Spray Pam over foil or grease foil.
- Sift flour, salt and baking powder in a medium bowl.
- Add all remaining ingredients (except for the powdered sugar) and mix well with a wooden spoon.
- Spoon mixture into pan, spreading evenly.
- Bake for 20-30 minutes or until golden brown.
- Invert onto work surface and carefully remove foil and slice into bars while still warm.
- Transfer bars to a rack to cool and sprinkle with powdered sugar (if desired).

DATE BARS
Similar to fig newtons but with dates! It uses honey to sweeten it instead of sugar which compliments the dates nicely. This recipe is from the American Wholefoods Cuisine cookbook.

Steps:
- Preheat oven to 350°F.
- Combine flour, oats, baking soda and salt. Stir in oil and honey until well blended together.
- Combine dates and water and simmer in a saucepan for about 5 minutes until soft and thick.
- Stir in honey.
- Pat only half of the crust into a greased 8x8 square pan making a thin layer all the way to the edges.
- Spread date filling over the crust smoothing it out so it covers all of the crust beneath it.
- Pat the remaining crust out on wax paper and transfer ontop of the date filling, remove wax paper.
- Bake for 20-25 minutes untili firm and golden.
- Cool in pan.
- Cut in small squares to serve. Enjoy!

- Make the filling: Boil dates, honey, and water until thick, about 5-10 minutes.
- add the nuts.
- Set aside to cool a bit.
- Prepare the crust: Combine all dry ingredients with the melted butter.

- Heat oven to 350 degrees. Roll pate brisee into an 8-by-18-inch rectangle. Roll onto a rolling pin and unroll over a 4 1/4-by-13 1/2 inch tart pan with a removable bottom. Using your fingers, gently press dough into pan. Trim overhanging dough flush with edges of pan. Chill 30 minutes.
- Place pine nuts on a baking sheet; toast nuts until golden brown, about 12 minutes. Transfer to a wire rack to cool.
- In a small bowl, toss and separate chopped dates with 2 tablespoons flour; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar. Add eggs, honey, vanilla, and lemon zest. Stir in remaining 6 tablespoons flour, cinnamon, and dates. Pour batter into the chilled shell; sprinkle with pine nuts.
- Bake until filling has browned and set, about 35 minutes. Transfer to a wire rack tn cool. Slice into 1-inch-thick bars. Serve.
