This frosting is sooo good. It almost has a whipped consistency, and it tastes absolutely delicious. I use it when I want a rich & smooth chocolate frosting. It is my "go-to" frosting, and my family is always asking me to use it. I cannot even remember where I found it because I have been using it for so long. I usually end up doubling the recipe, which is the perfect amount for a two-layer cake. The most important step is letting your cream cheese and butter soften. Enjoy!

1 cup unsalted butter
1 1/2 cups sugar
2 large eggs
1/2 cup good quality cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 cups sifted all-purpose flour
1 1/2 cups buttermilk
1 tablespoon instant coffee, dissolved in
1 tablespoon hot water
1 cup sour cream
1 cup icing sugar or 1 cup confectioners' sugar, sifted after measuring
1 cup heavy cream

Steps:

  • Preheat oven to 350°F.
  • Butter a 10-inch springform pan and line the bottom with parchment paper.
  • Cream together the butter and the sugar with an electric mixer until light and fluffy.
  • Add the eggs, one at a time, continue beating until thick and light.
  • Sieve together the cocoa, baking soda, baking powder, cinnamon and flour.
  • With your mixer on low speed add the dry ingredients in 4 portions, alternating with the buttermilk and coffee, beat until all is very well blended.
  • Pour the batter in the springform pan and bake for 50 to 60 minutes, or until a cake tester comes out clean.
  • Run a knife around the edge of the cake and let the cake cool completely whilst in the pan.
  • Make the frosting just before you need it.
  • Mix together the sour cream and the icing sugar, whip the cream until stiff, then mix the two creams together.
  • Release the cake and turn it upside down on a platter.
  • With a serrated knife cut the cake into layers (I use a piece of sewing thread to cut the cake).
  • Spread frosting over one layer, carefully replace the other layer on the top and spread the rest of the frosting over the top and the sides.
  • Leave in the fridge until ready to serve.

I adopted this recipe 9/06. It is incredible. The great reviews are not misleading. I don't get why the instructions tell you to trim the cake. I just chilled the cake for a bit and then spread the frosting on the sides of the cake. This will be my main chocolate cake from now on. I didn't take a great picture of the cake, but the one I took gives you a hint of how much I loved this cake. I didn't share it, I just got a fork and ate it for 3 days right off of the platter. The original description follows..... This is a super chocolatey buttermilk cake and icing. Very easy to make. This cake is "the" employee comfort food at the catering company where I work.

1 1/2 cups unsalted butter
1 1/2 cups water
1/2 cup unsweetened cocoa

  • Combine very well.
  • Pour into cake pan and bake until skewer comes out clean.
  • Cool for 20 minutes while making icing.
  • ICING: Melt butter, add buttermilk and cocoa.
  • Whisk until smooth.
  • Put powdered sugar into a food processor.
  • With motor running, pour cocoa mixture through feed tube.
  • Do not over process.
  • Put a platter over the cake pan, flip over so that the cake comes out onto the platter.
  • Remove parchment Pour icing over the top of cake and spread evenly over cake to the edges using an offset spatula.
  • Do not worry if some goes over the sides.
  • Refrigerate cake for 2 hours.
  • Remove from refrigerator and with a serrated knife, trim all 4 sides of the cake about 1/4 inch.
  • Cut into pieces to serve.

Increase the speed to medium and beat until the frosting is fluffy, 2 minutes more.
  • Use at once to frost your cake or cover and keep refrigerated till you are ready to frost.
