DARK CHOCOLATE FUDGE ICE CREAM
Oh yum, if you like rich chocolate you will love this. I don't make this all the time because its so chocolatey.

Steps:
- In a double broiler, melt the chocolate with the coffee powder over hot, not simmering, water.
- In a heavy saucepan, scald the cream and milk with the sugar, salt and vanilla bean (whole).
- Stir to be sur the sugar is dessolved.
- Add the melted chocolate and mix until smooth.
- Remove the vanilla bean, split it lengthwise and scrape the seeds into the chocolate cream.
- Discard the pod.
- Chill the chocolate cream thoroughly, either over ice or in the refrigerator.
- Then freeze in an ice cream maker following the manufacturers instrunctions.

- In a heavy saucepan, over low heat, melt chips and miniature marshmallows with sweetened condensed milk and salt. Remove from heat; stir in nuts and vanilla.
- Spread evenly into wax paper-lined 8 or 9-inch square pan.
- Chill for 2 hours or until firm.
- Turn fudge onto cutting board; peel off paper and cut into squares.
- Store loosely covered at room temperature.

- Chocolate Fudge Chunk Ice Cream:.
- In a mixing bowl, combine heavy cream, evaporated milk and salt. With a stand mixer, beat until stiff peaks form gradually increasing speed to high, as mixture thickens. Stir sweetened condensed milk and chocolate syrup together in a bowl until it is mixed well. Slowly drizzle in sweetened condensed milk/chocolate syrup mixture starting mixer speed at low and gradually increasing it to high. Beat on high speed until stiff peaks form. Add vanilla extract. Beat until it is well blended, maintaining stiff peaks. Spread one-quarter ice cream on the bottom of a freezer-safe container. Scatter 1/3 cup chocolate fudge chunks on top, distributing evenly. Spread one-quarter ice cream evenly over the chocolate fudge chunks. Scatter 1/3 cup chocolate fudge chunks on top, distributing evenly. Spread one-quarter ice cream evenly over the chocolate fudge chunks. Scatter 1/3 cup chocolate fudge chunks on top, distributing evenly. Spread remaining one-quarter ice cream evenly over the top of the chocolate fudge chunks. Gently swirl the ice cream with a knife to move and separate the chocolate fudge chunks. Scatter ½ cup chocolate fudge chunks over the top layer of ice cream, distributing evenly. Cover tightly. Freeze until firm and completely solid, about 8-10 hours.
- Chocolate Syrup:.
- In saucepan, whisk cocoa powder, sugar, water and salt. Bring to a rolling boil over medium heat. Boil for 1 minute, stirring constantly. Remove from heat. Stir in vanilla extract. Cool completely.
- Chocolate Fudge Chunks:.
- Line an 8x8-inch pan with foil. Set aside. Add all ingredients into a double-boiler. Stir and melt until the chocolate is melted and completely smooth. Pour in an even layer into prepared pan. Refrigerate or freeze until set. Remove foil from large chocolate bar and place on a cutting board. While still cold, cut into ½-inch cubes. Keep refrigerated or frozen.

CHOCOLATE FUDGE ICE CREAM PIE
I originally adopted this recipe from the Recipezaar account. It was called Classic Mud Pie but I changed it into my own recipe and it is no longer that 'classic' mud pie, so the name has been updated as well. Cook time does not include freezing time.

Steps:
- Over a double boiler on low heat, combine chocolate chips, heavy cream, and butter. Stir until chips are melted and mixture is smooth. Remove from heat, stir in coffee liqueur. Let cool for 10 minutes.
- Spread 1/2 C sauce on bottom and up the sides of the chocolate cookie crust, letting it pool in the bottom. Shake gently to level out. Freeze for 15 minutes.
- In a small bowl, combine cookies and cream ice cream and 1 Tbsp coffee liqueur. Pour over fudge sauce layer in pie pan. Freeze 2 1/2-3 hours.
- Once the first layer is mostly frozen, combine remaining Tbsp coffee liqueur with chocolate ice cream. Pour over first layer of ice cream.
- Freeze several hours or overnight until firm.
- Serve with remaining warm fudge sauce (if you haven't eaten it all already! yum!).
