Steps:
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, sift together the flour, cocoa, baking soda, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugars until fluffy. Add eggs and vanilla extract; beat until well combined. Add the flour mixture, and beat on low speed, until just combined. Do not overbeat. With a wooden spoon, fold in chocolate and cherries. (Dough can be frozen at this point, wrapped well in plastic, up to 1 month; thaw completely before baking.)
- Form balls of dough, each about 1/4 cup; place balls on baking sheet about 3 inches apart. Bake until puffed and cracked, 9 to 11 minutes. Transfer to a wire rack to cool completely. Store in an airtight container, at room temperature, up to 3 days.

Steps:
- Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
- Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

Steps:
- For cherry topping: In small saucepan combine all topping ingredients and cook over medium-high heat, until cherries start to release their juice and the liquid thickens and becomes syrupy, 6-7 minutes; cool and refrigerate until needed (you can make this up to 1 day ahead).
- For shortcake biscuits: Preheat oven to 350F and set rack in middle of oven; combine all dry ingredients in a large bowl until blended; rub butter into flour mixture with your fingertips until mixture resembles coarse meal; in a small bowl, whisk egg yolks with buttermilk to blend; add to flour mixture and stir just until evenly moistened; turn dough out onto a floured board and, with lightly floured hands, knead just until it comes together (if the dough is very sticky, sprinkle on some additional all purpose flour); pat out to about 1 1/4 inches thick and cut into rounds with a 3 inch cutter; gather dough scraps and pat out again to make remaining shortcake biscuits; set 2 inches apart on a large baking sheet; bake biscuits for approximately 25 minutes, or until golden-brown, and transfer to a rack to cool completely.
- For whipped cream: Beat cream, sugar and vanilla until soft peaks form.
- To assemble: Slice shortcake biscuits in half and set bottoms of biscuits on 6 dessert plates; dollop generously with whipped cream and distribute cherry topping evenly over the cream; place biscuit tops over cherries at a slight angle and sprinkle tops lightly with confectioners' sugar.

- Break up the chocolate and add to the pan. Turn off the heat. Leave for a few minutes to melt, then stir until completely combined.
- Place the biscuits in a large bowl and bash with the end of a rolling pin until they are in various sized pieces with a few crumbs. Alternatively, you could use a plastic bag, but I prefer not to use plastic when I can get away with it.
- Toast the almonds in a dry frying pan until golden, if you haven't done so already, and stir into the biscuits along with the sour cherries or sour cherry chocolates, if using.

- Preheat oven to 180C. Beat butter and sugars in an electric mixer until light and fluffy (2-3 minutes), add eggs and vanilla and beat well to combine. Sift over flour, cocoa, bicarbonate of soda and ½ tsp salt, stir to combine, then stir in chocolate and sour cherries. Roll heaped tablespoons of mixture into rough balls, flatten slightly and place on baking-paper-lined oven trays, leaving plenty of room for them to spread. Bake until puffed and starting to set (8-9 minutes). Cool slightly on tray then transfer to a wire rack to cool completely. Cookies will puff while baking and flatten while cooling.
- Meanwhile, for chocolate ganache, bring cream and crème de cacao to the boil in a small saucepan, remove from heat, add chocolate, stand for 1 minute, stir until smooth. Cool until thick and spreadable (1-2 hours), then sandwich pairs of cookies together with ganache and stand until set. Cookies will keep in an airtight container for up to 3 days.
