DARK CHOCOLATE COOKIES WITH SOUR CHERRIES



Dark Chocolate Cookies with Sour Cherries image

These cookies get their intense flavor from bittersweet chocolate and cocoa; dried cherries lend an unexpected tartness.

1 3/4 cups all-purpose flour
1 1/4 cups unsweetened Dutch-process cocoa powder
2 teaspoons baking soda
1/4 teaspoon salt
1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
1 1/4 cups granulated sugar
3/4 cup firmly packed dark-brown sugar
2 large eggs
1/4 teaspoon pure vanilla extract
12 ounces bittersweet chocolate, coarsely chopped
1 1/2 cups dried sour cherries, firmly packed (9 ounces)

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, sift together the flour, cocoa, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugars until fluffy. Add eggs and vanilla extract; beat until well combined. Add the flour mixture, and beat on low speed, until just combined. Do not overbeat. With a wooden spoon, fold in chocolate and cherries. (Dough can be frozen at this point, wrapped well in plastic, up to 1 month; thaw completely before baking.)
  • Form balls of dough, each about 1/4 cup; place balls on baking sheet about 3 inches apart. Bake until puffed and cracked, 9 to 11 minutes. Transfer to a wire rack to cool completely. Store in an airtight container, at room temperature, up to 3 days.

200g unsalted butter , at room temperature
85g light muscovado sugar
85g golden caster sugar
1 egg
225g self-raising flour
50g plain chocolate , 50-70% cocoa, roughly chopped
50g white chocolate , roughly chopped
85g natural colour glacé cherry , roughly chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
  • Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

You'll love dipping this chocolate cherry biscotti in some hot cocoa or coffee; it's a sweet little indulgence you can enjoy any day of the week. Dark Chocolate Cherry Biscotti also make for a great present! Pop a few in a clear bag, tie it with ribbon and voilà, the perfect gift! 2 3/4 cups Gold Medal™ All-Purpose Flour
3 tablespoons Hershey's™ Special Dark™ Cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups sugar
3 eggs
2 teaspoons vanilla
1 1/2 cups dark chocolate chips
1 cup chopped dried cherries
2/3 cup white vanilla baking chips
1 teaspoon vegetable shortening

Steps:

  • Heat oven to 350°F. Line 18x13-inch baking sheet with cooking parchment paper.
  • In medium bowl, mix flour, cocoa, baking powder and salt.
  • In large bowl, beat butter and sugar with electric mixer on medium speed about 3 minutes or until creamy. Beat in eggs and vanilla. Stir in flour mixture. Stir in chocolate chips and cherries. Divide dough into thirds on lightly floured surface. Lightly flour hands, and shape each piece of dough into 12-inch long log. Place logs on baking sheet, 4 inches apart. Press down gently to flatten to 2 inches wide.
  • Bake 25 to 30 minutes or until set, but still slightly soft. Place baking sheet on cooling rack; cool completely, about 1 hour. Transfer to cutting board and, with serrated knife, cut logs crosswise into 1/2-inch slices. Place slices cut side down on ungreased large cookie sheets, 1/2 inch apart.
  • Bake 10 minutes. Turn cookies over; bake 5 to 10 minutes longer or until tops are dry. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In small microwavable bowl, microwave vanilla baking chips and shortening uncovered on High 30 to 60 seconds, stirring after 30 seconds, until melted and smooth. Transfer melted chips to small resealable food-storage plastic bag; cut small corner from one end of bag. Drizzle over biscotti. Let stand until drizzle is set, about 30 minutes.
  • Store in tightly covered container.

5 cups fresh sour cherries, pitted (water-packed are fine too, drain well)
3/4 cup honey, plus
1/4 cup balsamic vinegar
1/4 teaspoon cinnamon
2 cups all-purpose flour (approximately)
2/3 cup sugar
2/3 cup cocoa
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 lb cold butter, cut into 1/2 inch pieces
2 large egg yolks
3/4 cup buttermilk
1 1/2 cups heavy cream
1 1/2 tablespoons confectioners' sugar (+ additional)
3/4 teaspoon vanilla extract

Steps:

  • For cherry topping: In small saucepan combine all topping ingredients and cook over medium-high heat, until cherries start to release their juice and the liquid thickens and becomes syrupy, 6-7 minutes; cool and refrigerate until needed (you can make this up to 1 day ahead).
  • For shortcake biscuits: Preheat oven to 350F and set rack in middle of oven; combine all dry ingredients in a large bowl until blended; rub butter into flour mixture with your fingertips until mixture resembles coarse meal; in a small bowl, whisk egg yolks with buttermilk to blend; add to flour mixture and stir just until evenly moistened; turn dough out onto a floured board and, with lightly floured hands, knead just until it comes together (if the dough is very sticky, sprinkle on some additional all purpose flour); pat out to about 1 1/4 inches thick and cut into rounds with a 3 inch cutter; gather dough scraps and pat out again to make remaining shortcake biscuits; set 2 inches apart on a large baking sheet; bake biscuits for approximately 25 minutes, or until golden-brown, and transfer to a rack to cool completely.
  • For whipped cream: Beat cream, sugar and vanilla until soft peaks form.
  • To assemble: Slice shortcake biscuits in half and set bottoms of biscuits on 6 dessert plates; dollop generously with whipped cream and distribute cherry topping evenly over the cream; place biscuit tops over cherries at a slight angle and sprinkle tops lightly with confectioners' sugar.

110 g soft butter
85 g soft dark brown sugar
30 g caster sugar
1 medium egg, beaten
170 g plain flour
1/4 teaspoon bicarbonate of soda
1 pinch salt
30 g cocoa powder
55 g chocolate chips
55 g dried sour cherries, chopped
55 g pecan nuts, chopped
caster sugar, to sprinkle

Steps:

  • Beat the butter with the sugars and then beat in the egg gradually.
  • Sieve together the flour, bicarbonate of soda, salt and cocoa powder.
  • Stir into the butter and sugar mixture.
  • Stir in the chocolate chips, sour cherries and pecan nuts.
  • Form into a 4cm diameter log and wrap in clingfilm Chill until firm.
  • Preheat the oven to 180C/350F/gas mark 4.
  • Lightly grease 2 baking sheets.
  • Slice the dough into 2/3 cm rounds and spinkle with caster sugar.
  • Bake for 10- 12 minutes or until just firm to the touch.
  • Cool on a wire rack.
