CINNAMON SWIRL QUICK BREAD
This vanilla flavored cinnamon swirl quick bread is moist and soft with a thick ribbon of cinnamon sugar swirled inside. Feel free to turn this recipe into muffins or mini loaves. See recipe notes below.

- Preheat oven to 350°F (177°C). Spray a 9×5 inch loaf pan with nonstick spray.
- Mix the 1/2 cup (100g) granulated sugar and 1 Tablespoon of ground cinnamon together.
- Whisk the flour, baking soda, and salt together in a large bowl. In a medium bowl, whisk the egg and 3/4 cup (150g) granulated sugar together until combined. Whisk in the oil, sour cream, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients, then whisk to completely combine. Avoid over-mixing. You will have about 3 cups of batter.
- Pour/spread half of the batter into prepared loaf pan. Sprinkle almost all of the cinnamon sugar evenly on top (reserve about 2 Tablespoons for topping). It's a very thick layer of cinnamon sugar. Carefully pour/spread remaining batter evenly on top. The top layer of batter will want to stick to the cinnamon sugar filling, making spreading a little tougher to do, but use a spoon to carefully spread it out as best you can. Sprinkle with the rest of the cinnamon sugar. Using a knife, make a large swirl down the loaf pan, as shown in the video tutorial above. Avoid over-swirling, which will mix the layers together too much.
- Bake the bread for 50 minutes to 1 hour, covering loosely with foil about halfway through to prevent the top from over-browning. Poke the center of the bread with a toothpick. If it comes out clean, the bread is done. Oven times will vary between ovens. My bread usually takes 55 minutes. Cool bread completely in the pan set on a wire rack.
- Drizzle with icing, if using. Slice and serve. Cover and store leftover bread at room temperature for 1 day or in the refrigerator for up to 1 week.

- In a bowl, combine flour #1, custard mix, and salt. Mix well. In a saucepan heat water, milk, and butter #1 until warm (120-130 degrees). (Be very careful to make sure that the liquid is not too hot nor too cool.) Butter does not need to melt. Add yeast to the warmed liquid, stirring to dissolve. Let sit for 5 minutes. Add liquid mixture and eggs to flour mixture. Blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, gradually stir in enough of flour #2 to make a firm dough. (I used my KitchenAid mixer for this but used the bread hook attachment. The dough should not be sticky when you are finished adding all of the flour and it should clear the bowl on it's own.) Knead on a floured (#3) surface until smooth and elastic, about 5 minutes. (If you used a mixer you can skip this step. Place in greased bowl, turning dough to grease all over. Cover and let rise in a warm place until light and doubled, about 1 hour. Combine sugar and cinnamon for filling. Punch down dough and divide into parts (1 part for 1-2 servings, 2 parts for 4-7 servings, 4 parts for 8+ servings). On a lightly floured surface, roll each part to a 14x7 inch rectangle. Spread each with softened butter (#2) and sprinkle with the filling. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges at end. Place loaves in greased 9x5 loaf pans. Cover and let rise in a warm place until doubled in size, about another hour. Bake at 375F for 35-40 minutes.
CINNAMON SWIRL BREAD
Steps:
- In a large bowl, dissolve yeast in warm water. Add milk, 1/2 cup sugar, eggs, butter, salt and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix cinnamon and remaining sugar. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x8-in. rectangle; sprinkle each with about 1/4 cup cinnamon sugar to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 9x5-in. loaf pans, seam side down., Cover with kitchen towels; let rise in a warm place until doubled, about 1-1/2 hours. Preheat oven to 350°., Bake until golden brown, 30-35 minutes. Remove from pans to wire racks to cool.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
- In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
- Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
- Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.

- Combine 2 cups flour, yeast, custard mix and salt in a large mixing bowl. Mix well.
- Heat milk, water, and 1/4 cup butter in saucepan until warm (120° to 130°, butter need not be melted).
- Add milk mixture and eggs to flour mixture. Blend at low speed until moistened, then for 3 minutes at medium speed.
- By hand, stir in enough remaining flour to make a firm dough.
- Knead on floured board until smooth and elastic (5 to 8 minutes).
- Place in greased bowl, turning to grease top. Cover and let rise in warm place until doubled in bulk (about 1 hour).
- For filling, combine 1/2 cup sugar and 1 tablespoon cinnamon, and set aside.
- Punch dough down and divide into two parts.
- On lightly floured surface, roll each half to a 14 x 7 inch rectangle.
- Spread each with 1 tablespoon softened butter and sprinkle with sugar and cinnamon filling.
- Roll up tightly, pressing dough into roll with each turn. Pinch ends and edges to seal.
- Place in greased 9 x 5 inch loaf pans.
- Cover and let rise in warm place until doubled in bulk (about 1 hour).
- Bake at 375° for 35-40 minutes.
- Brush tops with melted butter and sprinkle with mixture of 1 1/2 tablespoons of sugar and 1 teaspoon of cinnamon.
- Remove from pans and cool on rack.

CINNAMON SWIRL BREAD AND VALENTINE BRUNCH FRENCH TOAST
This is another variation of the Dutch oven no-knead bread that I've been experimenting with for the last few weeks, and a request by one of my daughters. After making the loaf someone asked for french toast and this is what we used. This is definately going to be on our Valentines Brunch menu next Sunday! Can't wait!!

- ~~~*~~~THE BREAD~~~*~~~
- for bread.. mix dry ingredients, then pour into water and mix until moistened, dump into greased container and close lid for 12 hours on counter.
- dump dough onto floured surface and fold edges into middle several times. If you're going to add raisins you can do that now by folding them into the bread. turn over and form ball. sprinkle with flour and cover with plastic wrap for 2 1/2 hours on counter.
- put dutch oven or covered casserole dish into oven. set oven at 500 degrees.
- while oven is heating melt butter and mix sugars in a seperate bowl.
- remove plastic wrap from dough, and turn over. brush butter onto dough, and spread sugar mixture over it. loosely roll it up.
- when oven is heated remove dutch oven and remove lid. gently lift dough and drop into dutch oven, replace lid and put back in oven. bake for 30 minutes.
- remove lid and bake for another 10 minutes. keep your eye on it, this recipe is exact for my oven but others have reported burning so check on it!
- remove from oven and immediately dump onto cooling rack to cool. yumm!! The bread is done now and you can go ahead and eat it without making the french toast...its so good it might never make the next steps!!!!
- ~~~*~~~FRENCH TOAST~~~*~~~
- slice bread into 3/4 inch slices the night before and lay on cooling racks in cool oven overnight. This will allow the bread to become slightly stale and hold the custard better.
- In the morning, preheat the oven to 350 degrees. mix the ingredients for the egg dip and pour some into a large baking dish. lay bread in the dip and pour more on to soak. after 5 minutes flip and soak another 3 or 4 minutes.
- fry 2 slices at a time in butter until browned, lay in greased baking dish. The frying cooks the outside but the custard is still raw in the middle of the bread, so you have to bake for 15 minutes after frying. Serve with butter, cinnamon sugar, maple syrup or fresh berries and whipped cream!

- Blend half-and-half, eggs, sugar, vanilla extract, and salt in a blender until smooth. Arrange bread in a 9x13-inch baking dish; sprinkle with raisins and cinnamon. Pour egg mixture over bread.
