- Preheat oven to 350 degrees F (175 degrees C).
- Saute apple and onion in butter or margarine until tender. Add curry powder and saute 1 minute more. Add flour and continue to cook 1 minute longer. Add stock or broth and milk; stir well.
- Salt and pepper chicken breasts to taste and lay in a single layer in a 9x13 inch (or larger) baking dish. Pour sauce mixture over chicken breasts and bake in preheated oven for 45 to 50 minutes, until chicken is done.

- In medium saucepan, combine water and salt. Bring to a boil. Add peas; return to a boil. Remove from heat; immediately stir in couscous. Cover; let stand 5 minutes. Fluff couscous with fork; cool 20 minutes.

- Place the couscous in a medium bowl. Melt the butter in the boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.
- Whisk together the yogurt, olive oil, vinegar, curry, turmeric, salt, and pepper. Pour over the fluffed couscous, and mix well with a fork. Add the carrots, parsley, currants, almonds, scallions, and red onions, mix well, and season to taste. Serve at room temperature.

- 1. Prepare and chop chicken, onions. & apples and set aside. Make rice or couscous while cooking curry.
- 2. In large deep skillet, melt butter and olive oil together. Add onion and saute a few minutes. Add apple and saute a few more minutes until crisp/soft.
- 3. Sprinkle flour over mixture and cook for 2 minutes to cook out flour taste. Add currys and all spices. Stir in chicken broth, coconut milk and apple juice. Stir and cook over medium heat until thick and bubbling, adding more liquid if needed. Stir in chicken and cook another 10 minutes. Add more curry to suit ur taste. Serve over rice or couscous. Enjoy!
- 4. Note about the curry: Start with the lesser amount and add more at the end before the chicken if u desire a stronger curry taste, as I do.

A great blend of exciting and subtle flavors that are infused into the chicken during cooking, making every bite juicy and lively. - Preheat oven to 400 degrees F (200 degrees C).
- Stir together 2 tablespoons of smoked paprika, chili powder, 7 1/2 teaspoons curry powder, 4 1/2 teaspoons onion powder, salt, 1 teaspoon garlic powder, black pepper, 1/4 teaspoon sage, and ginger in a small bowl. Pour in 2 tablespoons lemon juice, 1/2 cup chicken broth, and vegetable oil; stir to form a paste.
- Rub a little of the paste on the inside cavity of the chicken, then massage the remaining paste all over the chicken, placing it under the skin where you can. Truss the chicken if desired, and place onto a roasting pan.
- Roast in preheated oven until the chicken is no longer pink and the juices run clear, about 90 minutes. If using a meat thermometer, be sure the chicken has reached at least 165 degrees F (75 degrees C) in the thickest part of the thigh.

- Chop whole onion.
- Heat canola oil in nonstick skillet until very hot. Reduce heat to medium high, and add oil. Saute onion until it begins to soften.
- Mince garlic, and add to onion as it cooks. Chop celery and apple. Add to onion and garlic; cook a couple of minutes.
- Wash, dry and cut chicken into cubes.
- Grate ginger; add to the pan with cumin, coriander, cayenne and turmeric, and cook 30 seconds.
- Push the ingredients to one side, and brown chicken pieces on both sides. Then, stir all ingredients together and add stock. Cover and cook over medium-high heat, bringing to boil. Season with salt.
- Serve with cranberry chutney or chutney of choice.

- Heat 2 tablespoons of the oil and fry the onions and garlic in a pot until golden brown on medium heat. Then add the mushrooms and the green peppers. Stir until softened followed by adding one shot of Martini, curry powder and basil. Leave on low heat.
- Meanwhile heat one tablespoon of the oil in a pan on medium heat. Add half of the cubed chicken breast and stir in 2 teaspoons of Tandoori masala. Add one shot of Martini until the chicken is cooked through. Do not forget to stir the pot occasionally.
- Transfer the cooked chicken from the pan to the pot.
- Repeat steps 2 & 3 with the rest of the chicken, Tandoori and one shot of martini.
- Stir thoroughly for 5 minutes all the ingredients in the pot and add the chopped apple. Stir for another five minutes while adding the last shot of Martini.
- Add the couscous and warm water in the pot and mixed thoroughly for 2 minutes. Leave on a low heat for 3 minutes until ready.

- Cauliflower: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a baking sheet liberally with vegetable oil cooking spray. Set aside.
- In a medium bowl, toss the cauliflower and olive oil together until coated. Put in a single layer on the prepared baking sheet and season with salt and pepper, to taste. Roast until golden and tender, about 25 to 30 minutes. Set aside to cool for 10 minutes.
- Salad: In a medium saucepan, bring the chicken broth, curry powder and salt to a boil over medium-high heat. Remove the pan from the heat and stir in the couscous. Cover the pot and allow the couscous to absorb the liquid, about 5 to 7 minutes. Fluff the couscous with a fork and transfer it to a large serving bowl. Stir in the cooked cauliflower, cranberries, cashews, cucumber, parsley, and lemon zest. Refrigerate until ready to serve.
- Dressing: In a small bowl, whisk together the yogurt, olive oil and curry powder until smooth. Whisk in the lemon juice and season with salt and pepper, to taste.
- Just before serving, add the dressing to the salad and toss well to coat.
