2 cucumbers - halved, seeded, and cut into 1/8-inch slices
2 cups blueberries
1 cup crumbled feta cheese
½ cup chopped scallions
¼ cup finely chopped flat-leaf parsley
3 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon honey
salt and ground black pepper to taste

Steps:

Combine cucumbers, blueberries, feta cheese, scallions, and parsley in a bowl.
Mix oil, vinegar, honey, salt, and pepper together in a bowl. Pour dressing over salad; toss to combine.

2 medium cucumbers
1/2 teaspoon salt
1/4 cup chopped green onions
1 cup (4 ounces) crumbled feta cheese
2 tablespoons lemon juice
1 tablespoon olive oil
1/8 to 1/4 teaspoon coarsely ground pepper

Steps:

Cut cucumbers in half lengthwise. Using a spoon, remove seeds and discard. Cut cucumbers into 1/2-in. cubes; place in a bowl. Sprinkle with salt. Stir in onions. Combine the cheese, lemon juice, oil and pepper; add to cucumber mixture and stir gently.
