1 cup chopped onion
1 garlic clove, minced
2 tablespoons cooking oil
chicken, cut up
1 cup canned tomato, drained and liquid reserved (from a 14-ounce can)
2 tablespoons lime juice
1 teaspoon salt
1/2 teaspoon dried oregano, crushed
1/8 teaspoon pepper
1/4 cup raisins
2 teaspoons grated lime zest
1 (20 ounce) can pineapple chunks, drained
3 tablespoons rum
1 tablespoon flour mixed with 2 tablespoons water
hot cooked rice, for serving

Steps:

  • In a skillet, cook onion and garlic in hot oil until tender but not brown; remove. Brown chicken, then return onion and garlic to pan. Add tomato liquid, lime juice, salt, oregano and pepper. Simmer, covered, 30 minutes. Cut up tomatoes if whole and add to pan with raisins and lime zest. Simmer, covered, about 25 minutes, until chicken is cooked through. Remove chicken, skim fat from sauce, and stir in pineapple, rum and flour mixture. Cook, stirring, until thickened. Return chicken to sauce and warm through. Serve over rice.

1/3 cup olive oil
1/3 cup vinegar
1/3 cup orange juice
1/3 cup sugar
salt and pepper
1 head iceberg lettuce, shredded
2 cups of fresh ripe pineapple chunks
1 medium red onion, sliced thin
1 large florida avocado, peeled and sliced
fresh lime

Steps:

  • Combine olive oil, vinegar, orange juice, and sugar in a blender until smooth. Add salt and pepper to this mixture to taste. Lightly toss the lettuce, pineapple, and red onion together. Pour on the oil and vinegar mixture until everything is well coated. Adjust the amount used to your own preference, more or less.
  • Garnish individual salads with several avocado slices lightly seasoned with salt and pepper and a squeeze of lime juice.

This Cuban Chicken Salad is made with roasted red peppers and cilantro. Serve on crispy beds of fried, grated green plantains called Aranitas.

1 8-ounce skinless and boneless chicken breast
Salt
3 new red or white potatoes (3 ounces)
1 finely diced plus 2 julienned canned roasted red peppers or pimientos
2 hard-boiled large eggs, peeled and finely chopped
1 small red onion, peeled and cut into 1/8-inch dice
3 tablespoons frozen peas, thawed
1/3 cup finely chopped cilantro leaves plus 2 tablespoons leaves, for garnish
Freshly ground pepper
1 cup mayonnaise
Aranitas

Steps:

  • Place the chicken in a medium saucepan, and cover with cold salted water. Place the pan over high heat, and bring the water to a boil. Reduce heat to medium; simmer until chicken turns opaque, about 8 minutes. Remove the chicken from the water; set aside until cool enough to handle. Cut into 1/8-inch dice, and set aside in a large bowl.
  • Place the potatoes in a saucepan; cover with cold salted water. Place pan over high heat, and bring water to a boil. Reduce the heat to medium, and simmer potatoes until fork tender, about 10 minutes. Remove potatoes from water; set aside to cool. Peel, cut into fine dice, and add to the chicken.
  • Add the diced red pepper, eggs, onion, peas, and cilantro to the chicken mixture. Season with salt and pepper. Add the mayonnaise, and mix until combined.
  • Place about 1 tablespoon salad on top of each aranita. Garnish with julienned red peppers and cilantro leaves, and serve.

1 barbecued chicken
1/2 cup coconut, shredded
1 (440 g) can unsweetened pineapple slices, drained
4 spring onions, chopped
1 teaspoon curry powder
1/4 teaspoon five-spice powder
1 garlic clove, crushed
1 teaspoon grated fresh ginger
3/4 cup mayonnaise
1/4 cup coconut milk

Steps:

  • CURRIED MAYONNAISE:.
  • Combine all ingredients thoroughly.
  • CHICKEN AND PINEAPPLE SALAD:.
  • Toast coconut on oven tray in moderate oven for about 5 minutes.
  • Cut chicken and pineapple into chunks; place in bowl, mix in coconut, shallots and Mayonnaise.

3 1/2 cups cooked chicken, roughly chopped
1 cup diced pineapple
1/2-3/4 cup diced celery (amount to preference)
1/2 cup mayonnaise
1/4-1/2 cup sour cream or 1/4-1/2 cup plain yogurt
1/2 teaspoon celery salt
1/4 teaspoon pepper
1/2 teaspoon dried onion flakes
1/4 teaspoon garlic powder, to taste
1/2 cup slivered almonds or 1/2 cup sunflower seeds

Steps:

  • Chop the chicken meat into smallish pieces, and place in a large bowl with the pineapple and celery.
  • In a separate bowl combine the mayonnaise, celery salt, pepper, dried onion, garlic powder, and nuts or seeds.
  • Add the mayonnaise mixture to the chicken and toss to combine; add additional sour cream or plain yogurt to achieve desired texture.
  • Refrigerate for at least 30 minutes, then serve on croissant or on lettuce.

3 cups fresh pineapple chunks (don't use canned)
4 green onions, chopped
2/3 cup fresh cilantro leaves, chopped
2 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
1 -2 tablespoon olive oil
4 boneless skinless chicken breast halves
3/4 teaspoon cinnamon, to taste
salt & pepper, to taste

Steps:

  • Chop fresh pineapple roughly and mix in a small bowl with green onions, cilantro, lemon juice, and cumin; season to taste with some salt& pepper; cover and chill (can be made 4 hours ahead).
  • Heat oil in a large skillet on medium-high heat.
  • Season both sides of chicken with some salt& pepper and some cinnamon to taste.
  • Saute chicken in oil about 5 minutes per side or until cooked through and no longer pink inside- but still moist.
  • Spoon pineapple mixture over each serving and serve immediately.
  • If you prefer, you may instead grill chicken.
