CRUNCHY BRAN FRENCH TOAST

Steps:
- Spread 4 bread slices with 1 tablespoon cream cheese each; spread the other 4 slices with 1 teaspoon marmalade each. Combine to make 4 sandwiches.
- Whisk the whole eggs, egg whites, orange zest and juice, and vanilla in a shallow bowl. Place the bran flakes in a resealable plastic bag and crush with a rolling pin or your hands. Pour the crumbs onto a plate. Dip both sides of each sandwich in the egg mixture, then in the crumbs, gently pressing the crumbs onto the bread.
- Heat 1 tablespoon each oil and butter in a skillet or griddle over medium heat. Add the sandwiches in batches and cook until the outsides are golden and the insides are melted, 3 to 4 minutes per side. (Add more oil and butter, if needed.)
- Slice the French toast sandwiches into triangles. Let cool before serving to little ones, as the cream cheese can get quite hot. Sprinkle with confectioners' sugar, if desired, and the kids won't even ask for syrup!

- 1. Preheat oven to 350 and grease two baking sheets. In a mixer or by hand cream the butter and sugar until light and fluffy. Beat in the egg and vanilla. Sift flour, baking soda and salt in another bowl and fold into creamed mixture.
- 2. Add the cereal and chocolate chips. Stir to mix thoroughly.
- 3. Drop spoonfuls of the dough 1-2 inches apart on the prepared sheets. Bake for 10-12 minutes, until golden. Remove from oven and transfer to wire rack to cool.
DELICIOUS AND EFFECTIVE CRUNCHY RAISIN-BRAN MUFFINS
I altered a recipe from an "off-brand" bran cereal box. They were so tasty - just the right amount of sweetness and crunch - and they "worked" by that night! Using buttermilk* really made them light!

Steps:
- Makes 10- 12 muffins (2 1/2-inch) or 18 mini-muffins
- Preheat oven to 400 degrees F.
- Prepare muffin tins (grease or paper-line).
- Mix"Topping" ingredients- set aside.
- In medium bowl, beat egg lightly.
- Stir in cereal, buttermilk*, and oil Let rest 5 minutes- stir to break up cereal flakes
- In large bowl, combine flour, sugar, baking powder and cinnamon Add wet cereal mix to dry ingredients all at once Stir just to combine- batter will be thick Fold in raisins (or other fruit).
- Divide evenly in muffin tins (fill to brim for extra large tops).
- Sprinkle"topping" evenly on each muffin.
- Bake 20-25 minutes (if using mini-muffins- cook 10-15 minutes).
- *1 Tablespoon lemon juice or vinegar and enough milk to equal 1 cup may be substituted- let stand 5 minutes to"curdle".
AUTUMN CRUNCHY CRUMBLE

- Heat oven to 200C/180C fan/gas 6. Sift the flour into a bowl and add the margarine.
- Using a fork or your hands, mash together the margarine and flour until it resembles breadcrumbs and there are no remaining lumps of margarine.
- Add the oats, sugar, and cinnamon to the flour and margarine mixture.
- Core the apple and/or pears, and stone the plums, if using. Chop all the fruit, keeping the skin on for added flavour, vitamins, and minerals, and put in an ovenproof dish in layers.
- Drain the sultanas and add to the fruit. Drizzle with the honey.
- Sprinkle over the crumble mixture. Bake for 20-30 mins until the crumble topping is golden and the fruit is bubbling. Serve with a large spoonful of natural yogurt, ice cream or crème fraîche.

- 1. In medium mixing bowl, combine KELLOGG'S CORN FLAKES cereal, sugar, margarine and corn syrup. Press mixture evenly and firmly in bottom of 12-inch pizza pan.2. Bake at 350°F about 5 minutes or until lightly browned. Cool completely.3. Combine cream cheese and marshmallow creme. Spread over crust.4. Arrange fruit over cream cheese mixture. Chill about 1 hour or until firm. Serve cold. MICROWAVE METHOD: Prepare crust according to directions in Step 1. Press crust on bottom of 12-inch microwave-safe pizza plate. Cook on High 1 minute. Cool completely. Continue with steps 3 and 4.FOOD PROCESSOR METHOD: Place uncrushed KELLOGG'S CORN FLAKES cereal, sugar, margarine and corn syrup in processor bowl. Using metal blade, process about 30 seconds or until cereal is fine crumbs. Press crust on bottom of 12-inch microwave-safe pizza plate. Bake according to microwave directions. Continue with step3 and 4.
