CROCKPOT CREAMY WHITE CHICKEN CHILI
A slow cooked white chicken chili fully loaded with flavor and finished off with cream cheese and a splash of half and half to make it nice and creamy.

Steps:
- In a slow cooker add chicken breast, beans, green chiles, corn, spices, and chicken broth. Cover and cook on low for 7-8 hours or high for 5 hours. **Be sure not to add cream cheese or half and half in the beginning.**
- Remove chicken and shred. Stir back into the chili. Stir in half and half and light cream cheese. Cook on high for 30 minutes.
- Top with tortilla strips, cheese, green onions, cilantro, tomatoes, and/or a squeeze of lime, if desired. Enjoy!

Steps:
- Place chicken breasts in the bottom of a slow cooker. Pour cannellini beans, black beans, corn, and tomatoes over the chicken in order listed. Sprinkle ranch dressing mix, chili powder, cumin, and onion powder on top. Place cream cheese on top. Cook on Low until chicken is fork-tender, 6 to 8 hours.
- Remove chicken breasts and shred with two forks or cut into bite-sized chunks. Stir chicken back into the slow cooker; mix chili thoroughly.

This white chicken chili recipe is adapted from a Betty Crocker slow cooker recipes cookbook. I often use frozen chicken breasts, and it can also be prepared conventionally on the stove top. Great comfort food!

Steps:
- Place chicken in a 4 quart slow cooker.
- Top with beans and corn.
- In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
- Cover and cook on low for 8 to 10 hours.
- Before serving, stir gently to break up chicken, then stir in the sour cream.
- Serve topped with green onions and jack cheese, if desired.

Steps:
- Soak 1 1/2 cups dry white beans in plenty of water over night.
- Drain beans next day and add chopped onions, hatch chilies, celery and garlic cloves.
- Place chicken on top of beans and add 4 cups of chicken stock or water with stock cubes.
- Add all desired seasonings and more heat for taste.
- Set crockpot to low for 6 1/2 hours.
- Remove chicken after 6 1/2 hours and shred.
- Add 4 oz. low fat cream cheese to the crockpot and mash with some of the beans to create a creamy consistency. Place shredded chicken back into crockpot.
- Set the crockpot on high for 30 minutes.
- Serve chili with optional toppings enjoy!
