CROCK POT CHICKEN STEW
Full of flavorful, juicy, chicken, tender potatoes, and loads of fresh vegetables and herbs, this healthy Crock Pot Chicken Stew is a cozy, easy dinner recipe for chilly nights!

Steps:
- Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
- Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
- Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
- In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
- Garnish with chopped fresh parsley, just before serving.

Steps:
- Heat the vegetable oil in a saucepan over medium-high heat. Whisk in the flour to form a thick paste until smooth, about 3 minutes.
- Reduce heat to medium and continue cooking, whisking constantly, until the flour turns a dark reddish-brown roux, about 15 minutes. Set aside to cool.
- Pour water into a slow cooker.
- Stir in the roux, sausage, chicken, okra, onion, bell pepper, celery, garlic, salt, black pepper, and cayenne pepper.
- Cover and cook on Low for 6 to 7 hours.
- Skim off fat with a spoon.

- To prepare in a slow cooker: Heat the oil in a skillet over medium heat. Add the onions and celery and cook until the onions are soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Transfer to a slow cooker. Add the diced tomatoes and tomato sauce. Fill the tomato sauce can with water and add to the cooker, as well. Add the chicken, pork, corn, butterbeans and potatoes. Season with salt and pepper. Turn the cooker on high and cook for 4 hours, or cook on low for 8 hours. Taste and adjust for seasoning with salt and pepper.
- To prepare on the stove: Heat the oil in a large heavy-duty pot over medium heat. Add the onions and celery and cook until the onions are soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the diced tomatoes and tomato sauce. Fill the tomato sauce can with water and add to the pot, as well. Add the chicken, pork, corn, butterbeans and potatoes. Season with salt and pepper. Bring to a boil over high heat. Reduce the heat to simmer and cook uncovered, stirring often, until the potatoes and butterbeans are tender and the mixture is thick, about 45 minutes. Taste and adjust for seasoning with salt and pepper.

- Preheat a large skillet with 2 tablespoons of oil. Over high heat, brown chicken breast cubes until lightly lightly golden brown. Remove the chicken and set aside. You may want to do this step in two or three batches, adding one tablespoon of oil each batch.
- Add one more tablespoon of oil to the skillet. Cook chopped onions and garlic, constantly stirring, until golden brown. Remove the onions and set aside.
- Add another tablespoon of oil to the skillet and cook sliced carrots and celery over high heat, constantly stirring, for about 2 minutes.
- Toss chicken breasts, carrots, celery, onion, garlic, sweet peppers, and potatoes into the slow cooker. Add 3 tablespoons all-purpose flour to hot chicken stock and stir well to disperse the flour in the chicken stock. Pour the chicken stock into the pot. Cook on the lowest setting for about 6 hours. Add 1 teaspoon kosher salt, 1/2 teaspoon ground black pepper, one tablespoon of chopped scallions and one tablespoon of chopped dill 20 minutes before the stew is done and stir. Taste and add more salt if necessary.
