6 bone-in chicken breast halves (12 ounces each), skin removed
1 teaspoon dried oregano
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup water
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon chicken bouillon granules
2 teaspoons minced fresh parsley
Hot cooked rice

Steps:

  • Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. Add water, lemon juice, garlic and bouillon to the skillet; bring to a boil, stirring to loosen browned bits. Pour over chicken. , Cover and cook on low for 5-6 hours. Baste chicken with cooking juices. Add parsley. Cover and cook 15-30 minutes longer or until meat juices run clear. Serve with rice. (If desired, cooking juices may be thickened before serving.)

1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
  • In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
  • Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.

3 to 5 boneless skinless chicken breasts ( trimmed)
½ cup butter (divided)
Salt (to taste)
ground pepper (to taste)
2 lemons (zested and juice reserved)
3 cloves garlic (minced)
1 red onion (cut into wedges)
1 cup chicken stock
1 cup Parmesan cheese (freshly shredded or grated is best)
1 cup heavy cream
Parsley (for garnish)

Steps:

  • Season chicken breast generously on both sides with salt and pepper.
  • In a large skillet, melt ¼ cup butter over medium-high heat. Add the chicken breast and sear on both sides for 2 to 3 minutes or until slightly browned.
  • Spray inside slow cooker with non-stick cooking spray. Place chicken breast in the slow cooker.
  • Add chicken stock to the skillet and deglaze the bottom of the pan by scraping with a wooden spoon. Add lemon juice and stir gently to combine. Pour chicken stock from skillet over chicken in slow cooker.
  • Tuck onion wedges around chicken. Top with lemon zest, minced garlic, additional pepper, and remaining butter, cut into slabs.
  • Cook on high for 3 to 4 hours or low for 6 hours. Remove chicken and keep warm. Transfer broth to large skillet and heat to boiling over medium-high heat. Stir in parmesan and whisk to blend. Then, add the cream and cook until reduced by half, stirring often.
  • Serve chicken with cream sauce and chopped parsley and/or additional sliced lemon as garnish.

1 medium shallot-finely diced
1/2 cup chicken broth
4-5 garlic cloves-minced
1/3 cup freshly squeezed lemon juice
½ teaspoon red pepper flakes
2 Tablespoons cornstarch dissolved in ¼ cup water
2 Tablespoons salted butter-softened
¼ cup heavy cream
Chopped fresh parsley-for serving

Steps:

  • Pound chicken breasts to ½ inch thickness, season with salt and pepper o taste. Heat Olive oil in a skillet and sear the chicken on both sides until browned (about 5 minutes). Remove the chicken from the skillet and place diced shallots, simmer in the same skillet until soft and gets golden brown color.
  • Grease the bottom of Slow Cooker and arrange seared chicken breast on the bottom.
  • In a measuring cup combine chicken broth, lemon juice, minced garlic, browned shallots and red pepper flakes, then pour the mixture in slow cooker. Cover and cook on high for 2-2.5 hours (depending on size of chicken breasts).
  • Dissolve cornstarch in cold water. Remove the chicken from slow cooker. Place softened butter and cornstarch mixture in slow cooker and stir to dissolve. Stir in heavy cream. Place chicken back in slow cooker, cover and cook on high for 30 minutes, or until the sauce thicken.
  • Sprinkle with chopped fresh parsley before serving.

This recipe is inspired from the Lemon Garlic Chicken recipe from the Chicken Dump Cookbook by Sharla Kostelyk. The idea is to quickly assemble several meals to use, freeze, or gift. The ingredients below will make one large family meal using a 2.5-3 pound bag of chicken. You can easily divide this into smaller bags for smaller families, singles, or couples.

6-8 chicken breasts or 8-10 boneless, skinless chicken thighs
4-6 cloves of garlic, minced
2 tablespoons chopped fresh parsley
⅓ cup olive oil
1½ lemons, juiced
½ teaspoon pepper

Steps:

  • Label your gallon zippy bag with the recipe name and cooking instructions.
  • Fold down top of bag so that it will stand upright while you fill it.
  • Add all ingredients to bag.
  • Press out air and seal.
  • Refrigerate for up to 2 days, or freeze flat. Cooking Instructions
  • Thaw bag in the fridge. I like to place it in a casserole dish to prevent leaking.
  • Dump bag into crock pot, and cook on low for 4-6 hours.

1 cup chicken broth, divided
1/4 cup lemon juice
3 tablespoons dijon mustard
3 garlic cloves, minced
2 tablespoons butter, melted
1/4 teaspoon dried rosemary, crushed
3 tablespoons cornstarch
1/2 cup slivered almonds, toasted
3 tablspoons minced fresh parsley
hot cooked rice

Steps:

  • 1. Place chicken in 3-qt slow cooker. In a small bowl, combine 3/4 cup broth, lemon juice, mustard, garlic, butter, rosemary; poor over chicken. Cover and cook on low for 4-5 hours. Remove chicken, keep warm.
  • 2. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and remaining broth until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • 3. Serve the chicken with rice and sauce. Sprinkle with the almonds and parsley.

1/4 cup all-purpose flour
2-3 Tablespoons oil ((or butter))
salt and pepper, (to taste)
1 packet Good Seasons Italian dressing mix
1 teaspoon minced garlic
1/4 cup lemon juice
1/2 cup chicken broth

Steps:

  • Coat chicken breast pieces lightly in flour, shaking off excess, and place on a plate.
  • Heat 2 -3 tbsp. oil in a large skillet over high heat. Get the pan nice and hot!
  • Add in half the chicken pieces and brown on both sides (about 3 minutes per side).
  • Season chicken with a bit of salt and pepper while it's in the pan.
  • Take those pieces out, add in more oil if needed, and brown last batch of chicken.
  • Put chicken into the crock pot.
  • Sprinkle chicken with dry Italian dressing mix. Add in minced garlic.
  • Then pour in chicken broth and lemon juice.

Steps:

  • In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat.
