CRISPY SESAME BRUSSELS SPROUTS WITH CREAMY CURRY DIPPING SAUCE



Crispy Sesame Brussels Sprouts with Creamy Curry Dipping Sauce image

Number Of Ingredients 10

2 cups of brussels sprouts, cut in half
3 tablespoons coconut oil, melted
3 tablespoons sesame oil (I used toasted sesame oil)
1 tablespoon sesame seeds
¼ teaspoon salt
¼ teaspoon garlic powder
½ cup 30 second mayo or Primal Kitchen
handful of cilantro, minced
2 teaspoons curry powder (add teaspoon by teaspoon and taste it to make it to preference)
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl, mix together all ingredients and coat brussels sprouts on all sides.
  • Place brussels sprouts on a parchment paper or silpat lined baking sheet. Spread out so the brussels sprouts aren't overlapping and can cook evenly.
  • Place in oven and bake for 35 minutes.
  • Once brussels sprouts are in the oven, mix together all the ingredients for the dipping sauce and place in fridge to cool.
  • Serve crispy brussels sprouts with dipping sauce.

130 grams (4 1/2 ounces) Brussels sprouts
4 spring onions
1 Thai red chile
25 grams (1 ounce) butter
1 tablespoon reduced salt soy sauce
1 tablespoon sesame oil
1 tablespoon water
1 tablespoon sesame seeds

Steps:

  • Get a pan on a medium heat and add in the olive oil.
  • Slice the Brussels sprouts in half and place them flat side down into the pan for 3 to 4 minutes. You're looking for them to go golden so don't be tempted to turn them! Season with sea salt and black pepper.
  • Slice the spring onions on the diagonal and add to the pan around the sprouts.
  • Cut the butter into slices and add to the pan around the sprouts and spring onions.
  • Slice up your red chile and scatter into the pan, adding the seeds if you're feeling brave!
  • Add the soy sauce and sesame oil and give it all a good toss. Add in your water to ensure they cook through for about 3 to 4 minutes. This will also create a sauce for your spouts.
  • In a separate pan, toast your sesame seeds in a dry pan over medium heat for 2 minutes or until lightly browned, stirring occasionally.
  • Serve on a plate and scatter over the browned sesame seeds.

1 1/2 pounds Brussels sprouts
4 cloves garlic, chopped
Salt and fresh ground pepper
1/4 cup olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the larger Brussels sprouts into quarters; halve the smaller ones.
  • Place the Brussels sprouts in a large baking dish or on a baking sheet. Add the garlic, sprinkle with salt and pepper, and pour over the olive oil. Toss to coat. Transfer to the oven and roast for 35 minutes. Crank up the oven to 450 degrees F and roast until tender and the outer leaves are browned and crispy, another 10 minutes. Transfer to a serving dish. Serve immediately.
