cooking spray
8 bone-in chicken thighs with skin
¼ teaspoon garlic salt
¼ teaspoon onion salt
¼ teaspoon dried oregano
¼ teaspoon ground thyme
¼ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Arrange chicken thighs on prepared baking sheet.
  • Combine garlic salt, onion salt, oregano, thyme, paprika, and pepper together in a small container with a lid. Close the lid and shake container until spices are thoroughly mixed. Sprinkle spice mixture liberally over chicken thighs.
  • Bake chicken in the preheated oven until skin is crispy, thighs are no longer pink at the bone, and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

6 skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 475 degrees F (245 degrees C). Set a wire rack inside a broiler pan or baking pan.
  • Pat chicken thighs dry with paper towels. Lift up skin gently; sprinkle salt, pepper, and garlic powder under the skin. Replace skin. Season skin and underside of the thighs with salt, pepper, and garlic powder. Arrange on the rack.
  • Roast in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 400 degrees F (200 degrees C). Continue roasting until juices run clear, about 30 minutes more. Let rest for 5 minutes before serving.

8 chicken thighs ( ~ 2 lb) , bone in, skin on
salt
pinch black pepper

Steps:

  • Preheat oven to 450F. Line a baking sheet with aluminum foil.
  • Take off any excess skin hanging off the thigh, if needed.
  • Liberally salt the chicken and add a bit of black pepper. The salt will dehydrate the skin and make it crispy. You want to see the salt on the skin.
  • Roast for ~ 45 minutes or until juices run clear and chicken temperature reaches 165F.
  • Rest 5-10 minutes. Add hot sauce to taste. Happy, crispy eating!

My easy, 3-ingredient baked chicken thighs are tender and juicy with a crispy outer skin that is perfectly seasoned! This method is so simple, you can have delicious chicken thighs on your table in 40 minutes flat!

2 lbs chicken thighs ((approximately 4 large bone-in chicken thighs))
1 Tbsp olive oil ((extra virgin))
2 tsp chicken seasoning ((see recipe, or use Italian seasoning))

Steps:

  • Preheat your oven to 425°F (218°C) and place a roasting rack into a 9x13 baking dish. *A wire cooling rack works well too, just be sure to coat it with oil or non-stick cooking spray. You can also line your baking dish with aluminum foil if desired.
  • Prep your chicken thighs by removing any excess fat or skin flaps as desired then pat each thigh dry using paper towels.
  • Brush the olive oil onto the top of each chicken thigh and apply seasoning generously. Transfer onto the wire roasting rack in your baking dish.
  • Bake in the middle of your oven's center rack for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) as read by a digital meat thermometer.
  • For extra crispy skin, broil on high setting for an additional 2-3 minutes.

8 plump chicken thighs , skin on
2 lemons
2 tbsp chopped tarragon
2 tbsp olive oil
750g new potatoes
2 tsp paprika , sweet or smoked

Steps:

  • Heat oven to 220C/fan 200/gas 7. Wipe the chicken thighs with kitchen paper. Finely grate the zest from 1 lemon and squeeze the juice from both. Mix in a shallow dish with the tarragon, 1 tbsp of the oil, and some salt and pepper. Slash the skin of each chicken thigh three times, then turn in the marinade. The chicken pieces can be cooked immediately or left in the fridge for up to a day.
  • Cut the potatoes into wedges and spread over a roasting tin. Toss in the remaining oil and sprinkle with paprika. Set a rack on top and arrange the chicken pieces on the rack. Bake for 30-40 mins, until the chicken is well browned and the potatoes tender. Serve with a simple green salad.
